I just love Ryan's laugh. First then leaf then the chicken. 🤣 Not only does he bring some unique recipes to the channel but he has a great sense of humor. One thing I would like to add about leaving the bones in is you are getting that extra nutrition. There are a lot of nutrients in the bones that come out in the juices. There is a reason bone broth is making a comeback. 😉

Other's talking about communal ovens reminded me of something my grandfather told me. Back when he was a kid in the 20s (He was born 1917) the local baker would have his oven going almost all week long making breads and pies. Back in those days none of the shops were open on Sunday so Saturday night when the baker's oven was shut off and allowed to cool down, people all over the neighborhoods would bring their bean pots full of beans and give them to the baker to put in his oven. Early the next day people came to pick up their bean pots and they would have beans with their Sunday dinners. The beans had simmered all night long in the residual heat of the oven. That last amount of heat was not wasted and fed many people. This was in Woonsocket R.I. in the French area of town.

I usually hate cooking shows but your channel has always been enjoyable to view the cooking episodes of. A lot of them remind me of food the older people used to make in Nova Scotia, PEI, and New Brunswick; before McDonalds sort of thing took over. These older dishes have a lot more flavours to them. You've got me remembering those foods and wanting to try some of your recipes on here.

My favorite part of this was the leaf falling, and the chicken jumping up on the table. The chicken took me back about 20 years, to a little restaurant in Mexico, where I had the same thing happen. 😅

Great idea! This recipe really does look versatile from a standpoint of ingredients. My guess is that you could easily switch out a few of the ingredients and perhaps bake it in a standard oven if there is no earthen oven available to you, as well. And I bet that even some vegans could change up this recipe to suit their dietary choices nicely.

I don't have an earthen oven, nor place to build one. I live in a tiny apartment, and no yard to speak of. I am so glad you include modern ways to cook the recipes! I would like to suggest you watch a few videos of "Learn Your Land", as he had lots of videos about wild foods you might enjoy. I am not allowed to drive due to seizures, so don't have access to wild lands (aka state parks, friends wild lands, etc). I am sure some of the wild foods he talks about are as historic as you could want. The one wild food I have access to is dandelions, and I am looking forward to including them into my diet when they next grow in the lawn of the apartment complex.

Dandelion blossoms are great! Slightly sweet, and high in vitamin C. I find you need to pull off as much of the green bit below the petals as possible, as that and the stems are rather bitter. I’ve not tried eating the leaves, which I am told are best before the plant flowers, after which they get bitter as well.

If you have dandelions growing, you may also have other nearby edible "weeds," such as purslane, wood sorrel, lamb's quarter, and purple dead nettle. All of those grow in front of my apt, so I hope you have similar options. 😃☘️🌿 Edited to add: But my complex doesn't treat the "lawns" (overly generous term, here) with any chemicals of any kind.

You can absolutely not eat anything grown in a lawn like that. Full of pesticides. Same reason foragers that are educated do not eat anything growing within ~15 feet of the side of the road. You might as well put Roundup in a spray bottle and apply it to your salad as a dressing if you are eating dandelions from an apartment lawn.

Looks wonderful! I haven't made chicken pot pie in ages. I think I would miss the vegetables in that one, though, along with some sage, thyme, and garlic. Maybe one day I'll build on oven but that's a lot of clay to come up with in a suburban backyard.

Best pizza i ever ate was cooked in a wood fired brick oven, with the fire still going on in the oven! They just scraped the fire (mainly coals at this point) off to one side, pizza went in right on the brick on the other side. Of course they were cooking sans door, and the door was fairly large, so i imagine that's why they needed to keep the fire going, so that they could keep the heat levels up. This was in Italy, where i simultaneously (well, same visit) had the best and worst Italian cooking i have ever eaten.

I helped my grandparents build an oven like this when I was a kid. My task was to stomp on the wet clay until it was mixed in well with sand. Why no chimney though? Grandma's design had a chimney by the door

raking out the coals and ash. in dutch there is a saying : "iets in de doofpot stoppen" the doofpot is a large the large container in front of the oven (into witch you put the coals and ash) with a tight fitting lid to smother it. the saying means to not mansion wrong doings and smother any rumors about it. sometimes this was accompanied by putting a small object (a token or something stolen) in the pot to bury it in hot ash.
