How to bake mini egg pies
Egg pies are one of my favorite food while growing up. Today I want to share how to bake egg pies the mini version (since I don't have pie pans :) )
Ingredients:
For the crust
- All purpose flour 1 1/2 cups
- Granulated sugar 2 tbsp
- Salt 1/2 tsp
- Butter, cold 1/2 cup
- Egg yolk, 1 pc
- Water, ice cold 3 tbsp
For the filling
- Evaporated milk, 1 can
- Eggs, whole 5 pcs
- Granulated sugar 1 cup
- Vanilla, 1 1/2 tsp
- Egg white, for merengue 1 pc
Procedure:
- Combine Flour, sugar, salt, egg yolk, water and butter in a large bowl
- Incorporate the butter with the flour mixture by using 2 knives, until it feels like wet sand
- Form the mixture into a dough
- Transfer the dough in the work area and knead for 5 minutes until it is smooth and can be formed into a ball
- Set aside the dough and let it rest in the refrigerator with a plastic wrap
- Prepare the pans ( I used ensymada in pans for this) with butter, then set aside
- Prepare the filling, combine all the ingredients except the egg white
- Stir until all is well combined
- For the Egg white, add a dash of cream of tartar and beat the egg white until it forms a stiff peak (merengue)
- Mix the Merengue with the rest of the filling mixture
- Pour the filling with the prepared pans
- Bake the egg pies in a preheated oven of 350 deg F for about 45 minutes to 1 hour or until golden brown on top.
- After baking, let it cool in a wire rack with the pan
- When the pan is cool to the touch, remove the egg pie and let it cool further in the wire rack
Tips:
- In mixing the crust, as alternative you may add the cold water after mixing the butter in the flour, add it one at a time for a better consistency.
