Today we're going to dive into how to BREW YOUR OWN KOMBUCHA AT HOME. Last week I showed you how easy it is to make a KOMBUCHA SCOBY at home to brew your own KOMBUCHA TEA, and this week we're going to make our first batch of tea that we can drink. I
The process is pretty simple so let me show you how. Before you know it, you'll be brewing your own tea and gifting your SCOBYs to friends and family. Scroll down to see the shopping list.

**** RECIPE for 1/2 gallon of Kombucha ****
8 cups of FILTERED water
4-6 tea bags (tea of your choice- I prefer black tea)
1/2 cup organic cane sugar
1 healthy SCOBY
1 cup of starter liquid from a batch of already fermented kombucha or store-bought
**** RECIPE for 1 gallon of Kombucha ****
16 cups of FILTERED water
6-8 tea bags (tea of your choice-can add more depending on how strong you like your tea)
1 cup of organic cane sugar
1 healthy SCOBY
1 cup of starter liquid from a batch of already fermented kombucha or store-bought
**** HOW TO start your FIRST BATCH OF KOMBUCHA ****
1. Grab a pot and add 8 cups of FILTERED water to it.
2. Bring your water almost to a boil.
3. When water is almost to a boil, shut the heat off and add 4-6 tea bags.
4. Let tea steep 5-10 minutes. You can steep longer if you prefer stronger flavored tea.
5. After your tea is done steeping, remove the tea bags, and discard them into your compost.
6. Add 1/2 cup of organic cane sugar to the hot tea. Stir until fully dissolved.
7. Set your sugar/tea mixture off to the side until at room temp (adding your SCOBY or starter liquid to HOT tea will KILL YOUR CULTURE). I usually brew my tea and then wait a full 24 hours before adding my SCOBY. But as long as your tea is fully cool it will be fine.
8. After your tea has come to room temperature, add 1 cup of starter liquid either from a previous batch of KOMBUCHA or from a store-bought brand. You'll need to do this for every batch of kombucha so I recommend removing your starter liquid from your batch of kombucha BEFORE BOTTLING that way you don't forget and then end up having to buy some as I did in this video :(
9. Add your mature kombucha SCOBY to your tea, sugar, and starter liquid.
10. Cover your tea (not with cheesecloth) and set out of direct sunlight and preferably someplace it won't be disturbed for 7-10 days.
11. After the 7-10 days, you should see a new SCOBY formed on the top of your brew. At this point, you can taste a bit of your tea. If it was still really sugary tasting, let is sit and ferment another 1-3 days. The amount of time it will take to brew your kombucha varies on the temp of your house. Taste frequently after the initial 7-10 day period until the desired flavor is achieved.
NEXT WEEK, I'll show you how to flavor your kombucha. If you prefer plain, you can drink your tea as is.

I flavor mine fresh pineapple and orange juice is the best one. Put pineapple in a blender and add organic orange juice then combine your kombucha into it and enjoy .

I'm confused. You made the scoby by putting premade Kombucha in brewed tea/sugar and let it sit 7-10 days. But to make Kombucha you put premade Kombucha in brewed tea/sugar along with the scoby you made the same way for another 7-10 days? Isn't that the same thing? Why not just call the first batch you made the scoby in "Kombucha"?

I was wondering the same thing. Is it because the first batch makes the scoby, and the second batch uses the scoby (which wasn’t available yet for the first batch) with fresh liquids to make a drinkable end result?

You can add a cup of the starter liquid from your scooby or use 1 cup from your previous batch of kombucha, but bc she drank all of her kombucha she just used a cup of store bought.

I’ve made a few batches and understand it better now. The scoby hotel tea is kombucha, but it can get funky because of potentially how long it’s fermented, the fact that its starter kombucha ratio is probably higher than you’d do for a gallon for drinking, and how many scobys are in there. This is a really great video. The only thing I’d add having learned from other videos is that you make a super concentrated brew of tea and sugar and add room temperature water to that to dilute it so you don’t have to wait for it to cool. I now do 1 part super concentrated tea and sugar to 3 parts room temperature filtered water and it ends up around 87-88 degrees with the scoby and start tea ready to put right in. I don’t let the water come to a rolling boil, I stop the heat just before that.

you dont have too. This just helps to jump start the process but for sure isnt necessary.

Unfortunately, GT's Original has all but disappeared on the shelves. I saw a few commenters recommend GT's Gingerade as a substitute. It'd be nice to have a favorable list of brands that can be used to make a SCOBY, but I haven't found one yet.

Health-Aid makes an organic original if you cant find GTs.. however GTs has the lowest sugar content that I've find after trying SOOOO many brands

You can definetly do that but the liquid is super vinigary tasting after sitting for a long time housing your scobys so I don't want that flavor in my kombucha. You can for sure it if youd like.

WHY do you need a STARTER LIQUID? Can you simply add the SCOBY to the brewed SWEET TEA? Instead of RAW SUGAR, can you add pureed FRUIT FRUCTOSE instead of SUCROSE)?

I know lots of people that do use their garage. Just be aware that if you do that, and it’s really warm, your brew will ferment a lot faster. So be ready to check it after a couple days. I will also say that if you are parking your car in the garage and starting a vehicle in there, I likely wouldn’t put my brew there. Just because of potential exposure from toxic car fumes. Be sure and cover with a good cloth cover as well. Kombucha is a living thing and needs to be able to get air to ferment

Very soon! You can make it less carbonated by just bottling it right after you have finished your brew batch and drinking it. But most of this time it will still be slightly carbonated .

I just started using a loose black tea and bagging it myself. I found that it was really strong, so with that I only need 3 tablespoons which I separate into three purchased bags and only brew about 10-12 mins or it is way too strong.

anytime you use table sugar to make even vinegar...and Kombucha you get a scobie ...even if you don't heat the water and even if you use tap water...but if you use coconut sugar no scobie....

You said you made half a gallon (8 cups) of tea and sugar mixture, but when it's in the jar it looks like a full gallon? Did you add an additional 8 cups of water into the jar separate from the tea and sugar mix? Or did you make an entirely separate batch for the jar in which you doubled everything? (16 cups water, 1 cup sugar, 12 tea bags)?

When I was demo it on the video I showed you the mixture for 1 batch which is (8) cups. My batches are always doubled (16) cups to fill my jars since we drink a lot of kombucha. Does this help?

Hi! Thank you for your videos! I follow your instructions while making my first kombucha:) i have already made a scoby, so now I will put it to a jar with a new tea. However, I don't understand what to do with older tea, I mean a jar where scoby has grown. Will I need it in the future? (like to put scobys later here or smth) If yes, then how long I can keep it?

You can save it and start collection future made scobys in it. It will likely begin to form a new scoby when your first one is removed!!! Yay!!! So exciting!!! The tea will keep for a long while, I change out the tea where I store my scobys every couple months just to keep the cultures growing and healthy

Absolutely! You can cut all the ingredients in half to have a really small batch

No. You need to use a breathable cover. Otherwise a scoby can’t form

I just made my first ever batch of Kombucha! It’s 6 days in and I don’t think I added enough at starter tea because it still taste sweet. Could I add more starter tea at this point or is it too late?

You could for sure add more tea if you want. Depending on the size of the batch you made, sometimes it just takes a bit longer. There’s a lot of factors that play into how quickly a batch ferments. Climate and temperature in your area are big ones. If you are in a cold climate, it can take sometimes double the amount of time to ferment. In the winter it takes almost 14 days for me to get a whole batch where as in the summer months it’s half the amount of time.

I have a bottle kombucha that I never opened. It has a scoby in it. I know it’s well past the expiration date...but, do you think it would work?

I bet it would. Might depend on how old it is but certainly doesn’t hurt to try if you already have it. Kombucha is pretty resilient stuff

Recently I bought scooby but I only get around 1/2 cup starter tea. Can I just add tea water+ sugar for my scooby hotel and after that use it as starter tea for my first batch? If it work, how long should I wait before use it as starter tea?

You can make a batch of tea with sugar. Allow the mixture to cool completely then add the scoby and the 1/2 cup of liquid to it. Wait 7-10 days. After that time it should have formed (or begun to form) a new scoby on the top. Then you’re ready to brew :)

Hi, I would like yor kind opinion if possy? I have brewed twice so far from a scooby given to me about 3 months ago; it formed on top another scooby while sitting in the jar, they got attached and started using them together in a 5 L jar with tap. Ever since, the first kombucha fermented for 3 weeks, it was not strong enough probably also due to cold temperatures? The second stayed less and each time I had 2 baby scooby, but they are very thin if compared to the mother and big brother attached. Is there something wrong with these 2 thin scooby? They are sitting in the scooby hotel, I added some more liquid from the big jar, what shall I do? Could you please help? Thank you 😊

How do you get the kombucha out of that jar? Do you just use a ladle and put it into smaller cups/bottles? I have a friend who uses a jar with a nozzle at the bottom but I’m curious about how you do it with your jars!

Couldn’t you just boil half the amount of water, steep the tea, add the sugar & then add the ither half of water in cold so it cools down faster

This is really good and helpful however a little correction: you can’t ‘burn off the chlorine’ by heating the water you are evaporating it. The best way to get rid of it is to distil it but filtering will also,work.
