In this video, you'll learn how to brew your own kombucha at home. Kombucha is a sweet black tea made from a fermented SCOBY (a Symbiotic Culture of Bacteria and Yeast). Kombucha is a probiotic-rich beverage that is great for gut health. It's part tea, part fermentation, part soda - thanks to the fizz that the good bacteria creates!
You'll learn how to source the SCOBY and how to brew the tea in which the SCOBY is submerged. Next, you'll learn about the second-fermentation stage, which explains the bottling and flavoring of your Kombucha.

Well I can't get the hang of that scoby thing, and I nearly choked to death on it the other day when I drunk too much. Anyway, I'm trying out worm-tea now and even though it does seem a bit cruel, I must persevere to improve my health :)

When making your first batch the process will produce a scoby so you don't need to buy one. The scoby will continue to grow with each batch that you make. My first batch I made the black tea added the sugar let it cool to room temperature added 1/2 cup of store bought kombucha and covered the jar and over the ten days it produced a scoby that I am still using.

Absolutely. Adjust the number of tea bags, sugar and water to make the ratios the same. Make sure the opening of the jar is a bit wide offering more surface area.

For those that don't know, you can set a cup of store bought Kombucha aside in a clean jar and it will make a scoby or you can just use the store bought raw kombucha (plain) and add to mixture of tea and sugar and a scoby will form. Date your ferment so you know when it's ready and if you have multiple jars going. I make mine in a three gallon jar and just triple the recipe. Green tea can be used right from the start at 1/4 of the recipe I believe. The layers of scoby that form on the top can be separated to make more jars or given to friends. It needs a warm area to ferment so in my house we have to use a seedling heated pad to help it ferment in the winter. Suggestion- do second ferments in a quart jar and if want to bottle, strain and bottle, it will still ferment and doesn't make it hard to clean the smaller bottles. Cherry is a fantastic second ferment, frozen works well. It is best to boil the water longer to get rid of the chlorine and sterilize the water, you can let it cool a little before making the tea.

Yes yes and yes for only bottling strained kombucha. Not easy washing the bottles from the fruit leftovers.

You can make you tea as a concentrate (one quart, say) and then pour cold water over it. The advantage to this is that it speeds up the process so that you don't have to wait for a gallon of boiling water to cool before you add the starter liquid.

I made this for years and all my family loves it. I quit making it for a few years and had to re-start it. I actually used a store bought kombucha to start it. First, look for original kombucha not ginger or other flavors. Next, look for any bottles that have a little "mother' or strains of solids in it. This is the remains of the original scobie. Decant it into a larger glass jar, a quart to start, and mix it until it looses all it's fizz. Then add a couple cups of tea with 1/4th cup of sugar and top with a coffee filter and rubber band. In about three days I pour out most of the kombucha and do it again. I will have a good start to the scobie by then. Another week and I will have a strong thick scobie to make a gallon with. So even if you can not find a human source for your scobie, grow your own from a store bought brand. And good luck! As an add-on... If your family really takes to this drink, it is a better alternative to soda pop or sweetened juices. Get 6 large gallon jars and one glass decanter with a pour spout. Each day make a batch, on the 7th day of each batch, pour the batch into the decanter and put it into the fridge. Use the jar with the scobie to make another batch. We used the whole gallon each day in our machine shop in the desert especially in the summer. In the winter I dropped it down to a half gallon and for my self alone now, i will still have a full week's worth of batches going in quart jars.

From my reading it is really hard to find live kombucha to grow a scoby since (as of a few years ago) they flash cook it or something to stop the alcohol content from growing

@@ciannacoleman5125 Have done it three times now with store bought of 3 different brands. It does not take much to start it from these bottles, Find the one with the most sediment in it. (there will be VERY little!) It will grow once it is let out of its confinement and fed. REALLY! Maybe the folks you are reading from have not actually tried it. I know the first time I tried this I thought I was throwing away my money on an expensive bottle of stuff that I would not be able to do anything with. And when i opened it and found out how fizzy it was i thought it might not even be kombucha. I tried drizzling a bit of sugar into it and it erupted with tons of fizzy slop running out of the bottle. That is when i decanted it into a larger jar and stirred the heck out of it before adding some more sugar and some tea. From then on it was just a matter of waiting for my little floating 'mushroom' to develop. Be brave, try it! Then it just takes patience.

I buy a bottle of GTs plain kombucha, put that In a bigger jar with cotton covering.. wait 9 days.. bam..SCOBY.

I'm on day 3 and have silt in the bottom ..? Used black and green tea and organic sugar I use Alexa pure filtered water.. Am I ok or should I make more sugar tea to add?? Please help oh I used GTS I think with the silty bottom..

Hey sweet Mary, I just wanted to give you a praise report. I finally made a batch of Kombucha. I put it in jars and it has set out for a day. I had some today and my goodness. It is wonderful. I am so excited about finally getting something right. I am so trying to learn about other fermentation. I just want to get well and I will use the wisdom The Lord gave you and I will use and eat what He gave us and I will let my body heal itself. I can't thank you enough for your teachings. They are very good and easy to understand and easy to follow through. I just ask the Father to bless you above and beyond what you can ask or think. I send love to you and your family.

You can make your own SCOBY by making two quarts of Black Tea (8 cups water, 8 teabags or 8 TBS loose tea). Stir in 1/2 cup of sugar while still warm. Cool to room temperature, strain if using tea leaves. Pour into container you are using. Add 1/2 bottle store bought Kombucha with no flavor (original). Cover with cloth or coffee filter using rubber band to keep in place. Put in pantry or leave on counter out of direct sunlight fo about 30 days or more until a SCOBY forms and is 1/4 “ thick.

I've been "binge watching" your vids. Just found your channel today. Awesome explanations. Now to get back into making kombucha... I have a 2 year+ old scoby I have had stored in a mason jar in my cupboard. It still looks awesome! I started with a scoby that grew in a bottle of kombucha I did not finish. I just left it sitting in the corner of my counter out of the light. It was plain kombucha and it grew a perfect little scoby. Brand of kombucha was "Synergy" in case anyone reads this and is wondering. Awesome work Mary, looking forward to watching more vids.

The swing top bottle I use is from Sprouts. They sell these citrus-flavored beverages that are carbonated. I feel confident and have used them for several years to make my second fermented kombucha. I drink the flavored lemon drinks and then reuse the bottles to do my second ferments, and store my kombuchas

this is the first video that recommends that the SKOBY with the starter fluid should NOT be stored in the refrigerator, but at room temperature. I will take this advice into account

I use my drip coffee maker half full of water to brew the tea & then I add cool water to jar with sugar , add the kombucha starter liquid & the scovie. Works wonderful for me as never had a problem🐾💕I like simple

Thank you for sharing. I just harvested my first kombucha when I found your video. I removed the scoby with a metal fork to new brewed tea before I poured the kombucha into botles. I hope I did not destroy the scoby.

Earl grey tea works very well, its naturally low in tannin. Tasts awsome and is lighter in colour. ☕👍

If you don't have starter tea you can also buy bottles of organic plain kombucha (enough to make at least 2 cups). These also contain small bits of scoby which will boost the batch. This is a much better substitute than vinegar.

You are so fun to watch and make everything sound so appealing. 🥰 Kombucha is the only fermented food I know how to make so your channel is a treasure trove! I can't wait to try your 12 hr. Bone Broth. I have always been put off by the 48 hr instructions, what bones, etc. By the way, one more Kombucha trick. You can grow your own scoby from the store bottles. They must be plain organic and it takes 2-3 of the small bottles. It takes 6-8 weeks but it makes nice healthy scobys.

Love this video! Thank you so much! I have questions! 1) If I want to make batches, one after another. Can I use the original SCOBY right away and save the new SCOBY for the 7 days? 2) Regarding the SCOBY hotel: Should the container (with 2 C tea/new scoby) be with limited air space and airtight? 3) If airtight, does it need to be burped? 4) How long will the SCOBY hotel remain usable if it's not used in 7 days? 5) For the 2nd fermentation/fruit addition: Is there any reason why I can't add the fruit directly to the "mother" jar and them stir/pour into bottles? SCOBIES are known to have different personalities. Sharing SCOBIES is fun by peeling them apart. Brewing temp makes all the difference. Brew that never got warm enough will make a vinegar taste. Never use metal products on your SCOBIE, metal spoon ECT.

Hi MARY,😀 congratulations,👍 great kombucha👍 tutorial, I've been making kombucha for The Last👍 5 Years, I do use the swing top bottles for the second fermentation, I never have one break😀 on me, I did buy good quality bottles, I bought four one gallon glass container with a spigot and I make a batch every Saturday, my first fermentation I let it go for approximately 12 days on an average of 77 degrees Fahrenheit, my next door neighbor has 🐔chickens in his yard so I feed my scobys to his chickens, of course I always maintain 2 or 3 scobys in my scoby Hotel, for insurance😜. GOD🙏🙏BLESS YOU. EDUARDO MIAMI FL 🇺🇸

Hi Mary, thank you for the video, very helpful! I do have a question, once my first fermentation is finished, if I don't like fizz drinks, can I just put fruit in a bottle, add kombucha, add a cover and put the bottle in the refrigerator? Thanks

Rooibos from South Africa is an extremely good additive to the teabags and honeybush as well. Both are naturally grown and used as teas in SA and actually wide over the world. It contains a lot of very good minerals, etc, but will not inhibit the combucha or harm the scoby.

Hi Mary, Thanks for such an awesome video! Just wondering about the cloth you use for covering the jar. Is it just a normal tight-woven cloth or can we use a porous cheesecloth or muslin? In any case does the cloth have to be porous to allow any gas to escape? Thank you!

Great question. Yes, it’s just a normal weight scrap of cloth. But I think cheesecloth would work fine too. It’s just a matter of allowing air to get in while at the same time keeping out dust. Hello Lovely Lady, Regarding the second fermentation, why must one bottle? Is it okay to put the blue berry purée into my original fermentation jar give it a good stir, set it out for 3 or 4/days and then fridge? This way I can pour out a glass when I am ready and not have all the bottles in the fridge. Please advise and thank you so much for teaching this. You have saved me much money!

You can also start from scratch by making up your tea then pour a raw unflavored commercial kabutcha into the jar. May take longer but it works.
