I agree how perfect that table worked out, sturdy, good height, perfect width, looks beautiful, and Andy & Doug wished they had it for all their workshops. This video speaks for itself, Lumnah Acres raised and provided the perfect animals for this workshop, built the perfect facilities, and Hand Hewn Farm instruction/demonstration of butchery was over the top! A great three days was had by all! Anyone reading my comment here please take my word on this, .....if Lumnah Acres and Hand Hewn Farm can put together another workshop, and it's something you are really interested in, this is a workshop not to be missed.

Dennis St.Germaine - Yes! I am so thankful for Al hosting the workshop and putting so much time into these videos! I've been butchering my own animals for 40 years and have never experienced this form of butchering. I really like how Doug & Andy have continued the love & respect Al did while raising these pigs, through the butchering process. It's not just a piece of meat but still a loved on animal fulfilling it's purpose. I wholeheartedly respect that with these wonderful educators!

I really enjoyed your video. I just won a half a pig from our Pomeroy, WA Gun Club Youth Group which included cutting and wrapping from Dayton, WA Cut and Wrap! (I bought 200 tickets, not caring if I won. LOL) I am pleased with the whole process, since we raise Appaloosa horses and it has been a while since I bought a pig. I would especially like to thank the narrator for speaking in a very understandable, calm voice. You could tell this is not your first rodeo. Thanks! Oh, and always good to pay it back so I donated a really nice Remington 12 Gauge 870 express with youth stock. Good deal for everyone!

This really brings back memories. When I was a little girl we raised pigs of our own. I'm not able to have a homestead or raise animals now but I'm glad there is a large community of people my age who did not grow up on farms learning the old ways and becoming interested in being food self reliant. Well done on the beautiful life you're building!

Still very informative and clear explanations of what is being done. Great looking meat Al, you did a very good job raising the pigs. We were always told that when you process a pig the only loss is the Oink!

He makes it look so easy right? His knives must be VERY well honed. This video was interesting to watch, good demonstration. I appreciate the lack of blood and gore, it makes it so much easier to pay attention to the task at hand.

We made sure we bleed out the pigs during the first process which in returns makes the slaughtering and butchering a lot cleaner

Thanks for doing these videos, the information is so valuable. Just a quick suggestion when, he was seperating the ham from the middle portion it would have better if you could have gotten a close up of where he cut.

Wow! I'm so impressed with your table size! Did you plan it that perfect? This was an amazing video! Did you hang your meat before cutting? Your side of pig looks stiff which may be allowing these beautiful cuts. I immediately start butchering after harvest - that may be my first mistake! I've never had my meat just lay there! If you could rig a camera directly over the table for everyone to see the cuts being made, that would be awesome!! Doug explains so well what he's doing & why!

Yes we planned the table to be the right size. We hung the carcass overnight to let it chill for easier cutting. A camera directly over the table would be awesome!

Lumnah Acres - How cold was it that evening? I'm assuming you just hung them in the outdoor kitchen, but I guess if night time temps are 50 or lower, it's going to significantly drop carcass temp! I would need to rig up another pulley system to hoist them up...it's doable!! 😂

We were down in the 30s. We hung one pig in the kitchen and one pig on the meat pole for the night

Lumnah Acres - good to know! I have another goat to butcher - I'm waiting for a little warmer temps right now. My highs are 34 so hanging something overnight may freeze! I will definitely try hanging first next time.

Lumnah Acres -- I am sure Pluto would like some scraps also. I was under the impression that people and dogs could get worms from raw pork. But after reading on the Internet I found that the chances are slim these days because pigs are no longer commercially fed raw meat. And you also raised your pigs yourself. I also read that meat could be frozen for two weeks and then thawed and fed to a dog to reduce the chance of worms. But, again, the chances these days of dogs getting worms from pork is slim.
