It's canning day, and today we're making up a batch of amazing beef soup from scratch. This is a simple recipe but so tasty, and it works perfectly for pressure-canning. I'll go through every step to make the soup, fill the jars, and process them in the canner. I'll end up with some beautiful quarts of beef soup to put up in the pantry and enjoy all winter long!

Thanks Mary! It's not too difficult, really. Once you do it a couple times and remember all the steps to pressure-canning, it becomes not much more of a chore than cooking a meal would be.

Good video but please make sure that you tell new canners that they may have to adjust the weight according to their elevation. I am just above 1000 ft. and my weight would be 11 pounds on a dial or 15 pounds pressure on a weighted guage. I'll be making this real soon!

I was always taught to wipe the top of the jars with vinegar on the cloth or paper towel, to cut any oil that may have appeared

I like making the soup first like this way, as in packing it all in the jars . I use a dial gauge and want to change over to using the jiggler to see if I like it better .

Oh that looks so good. I'm very excited about this soup stuff coming up! I do a lot of canning and I have a freezer I need to clear out for another cow. Everything you make looks really good.

I've never canned soup or anything other than veggies before. I'll give this a try for sure. Would this process work for any soup? Say chicken, or lentil? Thank you, you've inspired me to try something new :)

Hi Virginia. You can pressure can many soups, but there are some rules. First, no thickeners or very thick soups (it needs to be pretty brothy, so the heat can penetrate all the way through sufficiently). Second, no cream-based soups or soups that are especially heavy in fats (can become rancid). Meats, vegetables, spices, broth are all good to pressure can. But the processing times can vary a little depending on what you're canning. I do always recommend following "approved" recipes.
