How To Can Sweet Corn | Pressure Canning

How to can sweet corn by canning using a pressure canner. Do not use a water bath canner or water bath canning, used for high acid foods, for this low acid food type. We will be using the cold pack rather than hot pack canning method. This canned corn will have a 2 year shelf life. We will be using our weighted gauge pressure canner at 15 pounds of pressure because we are more than 1000 feet above sea level in the foothills of the Smokey Mountains here on the homestead.

Growing and storing your own food is the best antidote for a rising sense of panic that "something" nasty is coming down the pike. When I see bad news I shut it down and get in the garden and sow seeds, plant seedlings, pull weeds or put a load of processed produce into the dehydrator. A quick way to help with that sense of impending doom is to open the doors of my store room and walk down the rows with the store room audit sheet counting lots and making plans. Anything is better than wallowing in helplessness. Blessings to you both, ~D.

Thanks for sharing. Pressure cookers sure have come a long way. I remember my mom blowing the top off hers because the seal was bad. We had to drive 42 miles to a bigger town to get a new one. Tina was the "canner person" when we met 20+ years (4 kids, and a handful of grandkids) ago... LOL But she was a water bath canner (jams, tomatoes, etc) and wanted nothing to do with a pressure canner... I figured, hey... A pressurized container on a hot stove... What could go wrong there ??? ahahaha And we've been doing both (water bath and pressure) ever since... We still use a simple weighted gauge one so we are not reliant on the accuracy of a gauge and yes, I check the seal (and wont hesitate to replace it) frequently... Tina's grandmother blew the top on one too... She still sorta looks at the pressure canner sideways... Part of why I was up finishing the canning when she went to bed.... LOL

Great video. I just got to watch it. Canning corn is a lot of work but it's worth it. Great tip for the vent lock! So it looks like whole kernel, and not creamed. We run the blunt side of our knife down the cob for the for creamed and freeze it. Corn changes color like green beans Thanks for another great video ya'll ❤🐝

I really enjoyed this video, it reminded me of my grand mother, the last few years she canned, she would put a corn cob narrow end down in the hole of a bunt cake pan and use an electric knife to just shave the corn right off the cob, it was the darndest thing I ever saw...she's been gone about 8 years now and that's one of my fondest memories of her....ya corn looks great Happy eating...lol

Really appreciate you two showing all that. That was some long hours but well worth it for sure. 54 quarts might sound like a lot to some but I know growing up that my brothers and I would eat a pint by our selves! Even now at sixty I still put in two pints in my stew plus several other recipes use the same. Now we also had ears of corn to eat but we went through a lot!! Thanks again for sharing.

I understand... We hear a lot of claims about people raising most of their own food, but it takes harvests and large batches like you see here and then some... We go hard all season from frost to frost, and that is just for the two of us... It's crazy sometimes... But when you spend your grocery money on the garden, the garden better be giving back groceries... LOL

As others have said, another great video! I've been canning since I was about 9 years old. There was 8 of us children. 5 boys first and then 3 girls. I'm the youngest lol at soon to be 68 years! Gardening and canning go hand in hand. Your videos are full of information! Whether it's on gardening or canning! I can't wait to see what Tina does with those gourds! I've always wanted to burn on one with a hot iron. Or paint on one! So I'll be watching! Again, great video! GOD bless

Great Job!!! I'm surprise that you are still on your feet. I didn't have to 100 + corn cobs, mine was about 70 something. I put some ears in the freezer for holidays and I cut an ear in half or thirds and put them in the freezer for the kids. You know kids, they don't always eat a full ear of corn; and sometimes all you need is half an ear for yourself too. I have one large freezer and the one in the kitchen. Now you need to take Ms. Tina out to dinner as payment for all her hard work. :-)

LOL... Tina slipped off to bed midway through the second batch of three... I was being quiet there at the end not to wake her... She can take me to eat :) LOL We both can, so there is no sense both of us staying awake... I may slip off later for a nap, and she can cover for me... LOL

You can make the cutting easier by standing the corn on end in the middle of a bunt pan and cutting with an electric knife if you have one... The bunt pan will catch everything...

LOL... I get to take credit this time... As the resident PTSD / Insomniac, I pull the late nighters... Tina was the one I mentioned I was trying not to wake at the end... LOL Luckily, both of us enjoy canning ! ahahaha But make no mistake, she covers for me all the time, and nobody should ever question how much work she does... She would work most people half her age to death... LOL

I think there is some flavor loss, and it toughens the corn some (chewy)... That's just my opinion though, and may not be your experience... Thanks so much for watching ! I appreciate the support !

My granny taught me about canning but I don’t think she had a pressure canner cuz she never did meat and always said corn was very tricky and it never worked for her. I’m gonna give it a go cuz the meat I’ve canned so far is sooooo good.

Yes... They used to can both corn and beans in a water bath... They had to be really hot and canned for a long time (please dont even try water bathing them) which essentially pasteurized them... I really do not advise it, not with a water bath canner...

Came across your video that you’re doing corn my parents and that we should do the same thing back in the 70s my dad decided to come up with something to make my moms doing corn easier took a block of wood and put a nail in the center so you can put the cob down through it then you don’t like it but it’s a lot easier to get the cob off because the nails in the center of the cop try to make it easier

Corn looks fantastic! I love hearing that ping when they come out of the canner lol. I went out this morning with my youngest and planted 40 more bush beans hoping to get some more out of the garden this year. I think I we may have just enough time up here in NH. I’ve got 4 kids and they ate right threw the first plants didn’t even have any to put up 🙄. At least they ate good lol.

We are huge fans of steamed green and wax (yellow) beans... We are lucky if they ever make it to the canner too... LOL We canned some earlier this year... But those fall beans I showed in the raised beds are just snackers... LOL Usually eaten within an hour of picking... ahahaha

My girls are pretty big fans of dilly beans they can eat a whole jar in a night my boys prefer them fresh or thawed from frozen. I like to have some canned for green bean casserole or to add in quick soups. I figure to do everything I’d like I’d probably need 400 plants a year lol.

It gives it a good taste we think as the higher heat of the canner (240 degrees VS 212 degree boiling water) caramelizes some of the sugars in the corn and imparts an almost roasted flavor... You might like it ! Thanks for watching !

Good video. Yes the s.e. varrities and the super sweet varieties really turn. We did not like the taste so we freeze or eat fresh those varieties. They are wonderful. Have not dehydrated any..

I didn't envy you both preparing such a large quantity of corn cobs like that. I am only relatively new to canning and I have already had to buy larger containers, tools and pans etc as the quantities for a small canner require larger sizes compared to my regular household kitchen equipment. The number of cobs was staggering! A great harvest, you want to preserve as much as you can and as you say, it only really equates to one jar a week and a couple over - but nevertheless, I can imagine the work that went into the preparation, the aches and pains the next day...Thank you for showing us how to can corn, that is one vegetable that I haven't tried canning as yet - it's on the cards. Is there a reason (other than the sheer quantity) why you don't blanch the corn first? Thank you, Vox.

I wish I had mentioned it in the video, but when it comes to cutting corn from the cob, try using a bunt pan and standing the ear in the center - letting the corn fall into the pan... And an electric knife takes a lot of the work out too... I am just old fashioned... LOL

I deal with far smaller quantities than you both, but it is still a case of scaling up on what I am used to. Still have the L plates on at this point. Thanks for the reply and take care. No... They used to believe so, but with todays pressure canning guidelines, you do not need to add salt....

That poor woman. lol All that corn done by hand..with a Knife!! wow..Get that woman a electric carving knife. Just a cheap everyday power knife you'd use for ham or turkey..Just use the meat blade..I have a cheap aluminum bundt pan from da Walmart or wherever...Stick the cob in the hole in the middle of the pan & when you cut the corn off it falls right it to the pan. Give it a try. Way better than with a plain ole knife.

What brand pressure canner do you have? I’ve got the all-American canner and the lid is more domed. After your tip about the pressure relief valve I pulled mine out to check cause I’ve never thought about jar configuration. Thanks 🌽🌽🌽

That is just an old Mirro... We have used them 'ol cheap weighted gauge canners for 20+ years and they work just fine for us and what we do... I am also not sure our glass top stove, though rated for canning, would be up for holding an All-American... They look like nice canners though ! I have just never used one... Tina and I both learned on a weighted gauge, so we just stick to what we know... LOL

Great video. I have the same canning pot but I was told that because the bottom of those pots are not flat but have a ridge, they cannot be used on a glass -top stove because the stove temperature constantly adjusts so that the glass-top doesn't break. have you ever had any problems using a glass-top stove when canning?

No, but our stove is a Maytag rated for canning... I would not advise it on a stove that is not rated for such, though we see people do it all the time...

Some of my corn kernels look a little shriveled. I still want to canned them. Do you ever have this problem and does it cause a problem with the whole can?

Whoa....that is a ton of corn...we love corn too...we planted 45 seeds of Bantam Sweet Corn (first time), and all came up and tassels are just now forming ( N.E. Texas zone 8b)...I have bought sweet corn from store...tried to freeze in husk (freezer bag)...tried to freeze without husk...and when we thawed to use...it was soft and mushy...so what is the secret to freezing fresh sweet corn? Looks like you d-cobbed and put into freezer bag...I was wondering if I "flash froze" it first ? I do that with our green peas and some of our green beans (just canned 20 pints last week)...so I do plan to can a lot of our corn ( prayers it makes)...but maybe freeze some too...give me the secrets on getting frozen corn to be fresh like frozen in stores?

We usually pick it... Husk it... Blanch it... Cool it in icewater... Let it dry... And then vacuum seal it for freezeing...

I clearly showed the boiling water I was adding, and Mark clearly said we were filling the jars with water (and I showed it also) to 1" headspace...

I’m new to canning. I’ve read that you shouldn’t pressure can on a glass top stove because the weight and high heat could crack the glass top. I noticed that y’all used a glass top…did you have any issues??!

You should NOT pressure can on a flat top glass stove not rated for it... You are correct... Ours is rated for canning though...

All pressure canners are different in their starting water level... If you have an older one, or lost the paperwork for yours, you can find info online to tell you what yours requires... And yes, all cans are stored without rings (for several long winded reasons, but it is a good practice)....

No... I have not.... Dont really know much about it... We have never really minded the color change... I think that caramelization gives it that roasted flavor....

The hardest part is removing the silk, any ideas besides the brush method? I put up 300 hundreds ear solo last year and what a job. Any tips appreciated

Sure I do... ahahahahaha When you wash it, wear rubber gloves... The rubber will grab at the silks and get most of them... If you can find the ones with a little grip texture, all the better....

Yes... Cut to the core on your first cut... Then stay to the core as you work your way around...
