Choosing the perfect handlebar width is a tricky subject because it is different for everyone and depends on so many variables like your height, type of riding your doing, how close the trees are etc...
In this video, we attempt to guide you to your perfect handlebar width.

Me used 20mm rise with 2 10mm spacer below the stem with 750mm wide handle for my trail, Enduro, and DH discipline

Hello, I’ve just got back into cycling after 40 years break, so I’ve bought myself a ebike, yay, technology is great, but the handle bars are very very wide, I’ve measured them and they are 750mm, the bike is the trek powerfly 4, I only ride canals and forest tracks, please could you give me any advice, Ho, one more thing, it’s so difficult to get through those funny gates on the canal system, my friends handle bars are only 660mm and feel really comfortable, would this size be ok on a mountain bike, thanks

You'll need some narrow bars to get through those Canal systems! While 660mm might be good for the gates this is probably a bit on the narrow side for mtb. You'd probably need to consider about 720mm for a comfortable MTB set-up but it's really a personal thing depending on your build, the locations you ride and the speed. For xc / trail then go a little narrower than Enduro and DH.

Wider for inexperienced riders with diminished upper body strength. Narrow for the legends.

Great advice. Only thing I would disagree with is where you suggested 'don't make too big of a change'. Your point is very valid that it will be very alien in feel/control if the change is too large but (at least when increasing witdth) I'd suggest starting with a few rides at 800/820. You might just like feel of those bars so much that you don't want to trim any off, but it won't take long before you'll know almost exactly how much you want to chop off to compromise between stability and agility etc. I fully admit that you will know far more about Mountain biking than I do. I'm just speaking from personal experience.... I ride a electric converted Trek Fuel EX8, doing average of 150mile per week riding on streets and light XC. I recently swapped my 650mm (40mm rise) carbon bars for 800mm 20mm rise aluminium bars, on the same 90mm 7degree stem. The bike is now a totally different beast, for the better. As you said, it's now like boat/bus steering due to the longish stem, plus getting the bike through gaps/doorways is now a pain. But its so much worth the Hassel that I'm not going to trim the bars at all. My ride is now twice as comfortable, twice as steady and safe. No more speed wobbles at 20+mph, no more fatigue from vibrations through my knackered air forks. I'm loving my bike again. If I would have known how much difference handlebar width made, I would have swapped years ago. So my advice may not apply to true mountain bikers but I would still strongly recommend people experiment to the extreme and go from there if feasible 👍🏻

My old Giant from the 90's has 23 inch bars. It's horrible.

Right there with ya. I have a 1989 Shogun with bars less than 24" across. WAY too narrow ...

Get on the floor and do a couple push ups. After one or two you’ll instinctively shift your hands to the position that’s ideal to perform this task. Have someone make a mark at the outboard edge of your pinky finger and measure it. It’ll probably be slightly wider than your shoulders . Whatever it is will represent the position of your arms that’s ideal for stabilizing your upper body while riding a bike. This won’t represent the ideal width for every scenario you’ll encounter but barring a perfect width that doesn’t exist the width that makes you feel the strongest and most capable of stopping yourself from going over the handlebars or lifting your front wheel to get over an obstacle etc is about as close as you’ll ever get to it
