Hey Kevin! What type of cheesecloth are you using for this clarification? I've tried using the cheesecloth my kitchen orders, and it doesn't seem fine enough to filter out all the particulates.

As soon as I saw Chivas regal I instant liked the video. Chivas has been a family staple when drinking whiskey. Always two oz when having "caldo de res" or "gallina". Top of the line.

My bride-to-be is a fan of tequila cocktails specifically a Paloma and I think I’m going to try clarifying grapefruit juice to make a fresh juice variation! Also you make throwing look easy, I’ll have to practice away from carpets with water ;)

On another note, you think you can do a video about clarifying cocktails using agar-agar for large batches? Classics/interpretation cocktails in large batches - how to clarify, what changes, how to cook the cocktail with agar, how much water dilution in which mixing method, how much time does it last in the fridge, and how it works/how good it is vs milk clarification etc.

Hi Kevin, I'm currently stumped. My bar is taking part in a cocktail competition and I wanted to create a tweak on your clarified basil smash cocktail and for the garnish I wanted to create a paint just like the one you made with beetroot but instead a green one, preferrably made with basil Is it possible to create a green basil-tasting paint that would also stick to the glass and not melt instantly as you pour the cocktail into the glass? Hope you see this soon as I have to be quite fast with testing different methods, I really hope you can help me with this, your content is super inspiring 🙏🏼
Hi Kevin! Thanks for all your guide and recipe! A question, can I clarify also the super juice with acids etc, or I need to use pure juice from fruits?
How much loss can be expected when clarifying citrus juice with agar (agar)? Seems like the cheese cloth has a good bit of gunk left over but then your bottles looks like it has a solid 8-10 oz of liquid in it.
The loss is small. Make sure that the cheesecloth is moistened with water before you will start filtering and the only thing left in the filter will be some citrus pulps. I think that there is around 20-30% loss but I haven't measured before and after clarifying. I will have this in my mind with the next batch of clarified citrus juice. Cheers!
How much longer does the clarified lemon juice last relative to regular? I am hoping to pre-batch some drinks with the clarified lemon and need them to last about 3-4 days.
Dave Arnold (author of Liquid Intelligence) says that the clarification doesn't expand the life of the juice, but I just might don't fully agree with this one. To my experience, the clarified lemon juice stays good for up to two days, but if you will prebatch some cocktail it's good for even longer. With adding alcohol and sugar you are ok for 3-4 days. This looks like a great his an her style cocktail. You can never do too much for your significant other to let them know you care and want to get drunk with them.
They both look fantastic, and I will have to try them. Though I would be a little disappointed if the MR was called a penicillin as I love teh spicy ginger byte, might try it with ginger liqueur as teh barspoon of sweetener balance to give a hint.
That would be a great addition, but I didn't add it, because it already has a ton of notes and it could cover the subtle earthy taste from the beetroot paint. I just replace the kick from ginger with herbal notes from Benedictine. Maybe I should call it different, maybe more suitable to the current events? 😀 I would be happy to hear your opinion of the cocktail with or without the addition of ginger. Thank you!
I need to get so agar now I'm excited to learn to clarify a new way. Would the clarified lemon juice make it last longer due to the lack of organic materials left in there?
It's really interesting when you get such a clear juice. It does last longer but not as much as we would like to. For the best results use it in two days but if not, freeze it and use it when you need it.
hi, I have a question about clarifiying strawberry where u say add 1 part of water to mix with agar, u mean only heat up the agr with water not the juice or u mean to dilute quarter of strawberry juice with extra 1 part of water to mix with agar. Thanks so much.

Fascinating. What I heard is this is done for aesthetic reasons not to change lemon flavor. Use same quantity in a drink just like raw lemon juice? Can this be frozen to keep it longer or how long will it keep unfrozen in a fridge? Would be cool if you could freeze in a cube say 3/4 Oz or 1oz put the cubes in an airtight container and then pull out what you need. Would that be possible? Thanks for your masterful efforts!! Ok. You said it could be frozen. I’m gonna try and find cubes the right size.
The taste is the same as in freshly squeezed lemon juice if you don't use too much agar-agar. Yes, it can be frozen for later use. I like the idea of 3/4 oz cubes 👌
Ok so how would we go about creating our own Supasawa with the 5 acids and water.. it’s not very available in the states and looks like an interesting ingredient.
Hi, I tried to clarify lime juice following your method and both times I could not yield clear clarified juice. I even tried a 3rd time following other method of using 1/4 water instead of lime juice to hydrate the agar like you did and the result is still the same. I let the combined juice and agar set in ice bath and in fridge for 2 hours and filtered through 4 layers of cheesecloth. Any help you can offer would be greatly appreciated!
What’s your opinion on Supasawa? I’ve made clarified sours with it and it was good. It was missing the distinct characteristics of the citrus fruits but it was quick and easy
Can I substitute beetroot juice to others juices? And could I use the same measure? I try to make a orange paint I just wanna know if I could to use the same measure
You can of course substitute beetroot with other juices, but keep in mind that the juice has to be bright colored and aromatic so there will be enough of both aroma and color with a thin strip on the side of a glass.
It's an 'Amir precision scale' bought on Amazon. I have to check why the link isn't working. Where are you based? I bought this on German Amazon but it should be available worldwide.
This is a bit of a shot in the dark - does anyone know the brand name or style of the saucier at 3:23? My mom had one just like that, but it broke. I'm looking to replace it for her!
Thanks for the super interesting video! I'm thinking about clarifying kiwi juice, but since it's thicker than lemon juice, I don't know if it will work. Maybe diluiting it with some water before using agar agar?
I have never tried to do it with pectin. Pectinex (an enzyme that breaks down pectin) is after used but it's harder to achieve crystal clear product than with agar agar, especially with citrus juice.
I would say that it's possible but I haven't tried it yet since it's easier to clarify separate ingredients for the cocktail. Also, you will get a lower amount of that "metal" taste that comes from Agar if you will only clarify ingredients that aren't clear originally. I hope that helps a bit. Cheers!
Thank you so much for watching them all! It remains longer to my taste but still uses it in two days. You can pour the juice into smaller containers and freeze it since it's a long process of making it. Thank you can take it out before you need it. Cheers!
Kevin. I have a home made bom alcoholic gin extract (glicerina based) and its Golden and wonderful. For experimental purposes tho i would like to make It transparent. Do you believe this method would work?
I don't think so this is the right method. Didn't it settle on its own? Try to freeze it and then filter it through a coffee filter. Hard parts will then be easier to filter.
