I know cleaning and sanitising is a lot less "mandatory" for distilling. But I still see a lot of new distillers asking how to clean things out. So today I am going to share how brewers get the job done.
I get that a lot of distillers have no interest especially in sanitising. But I thought it would be a good idea to run through it as it seems to be less common knowledge in the distilling world.

As someone in the states who can't really get into distilling legally, but can get into brewing and wine making, I especially love the cleaning and sanitization stuff you are talking about. But it's also fun as can be to watch and learn from you, in the event that distilling may become legal here... As many would be distillers are trying to make happen. Thank you for your videos. Very informative, very well done, and a lot of fun to watch.

Jesse please do a video on pre-run Still sanitation (vinegar, citric, sacrificial, etc) as well as volume of solution and frequency/duration of cleaning runs. If you haven't done one already, that is. Apparently I haven't seen all your vids yet. Dunno how that's possible. 🤷‍♂️

I'm in a hard water area, so Starsan goes cloudy when you mix it. I'd suggesting checking the PH has not exceeded above 3.5!

Only time not to sanitize a fermenter is fermenting a sour mash. If making a UncleJessieSSM you remove part of the grains from the fermenter. Dump in more grain, more table sugar, add backset and water. Mix and walk away. The yeast from the previous batch on the bottom will take over. (It will look like brew day "rolling boil" if you punch the cap in 2-3 days in a drum fermenter.) Each generation will get more yummy. Same goes for sweetfeed. Each batch will taste better than previous in hearts cut.

Hey Jesse Im new to this deal. I did get a bottle of star San. But it says for surface sanitizing. Is that the right stuff? Or is there a certain one for fermenters and such? Thanks for any input.

I've heard about Star San endlessly, but never heard of PBW, look at the reviews on places that sell it, it seems to be universal good stuff as a cleaner.

Sorry if its a stupid question, but can we not use a small amount of the end product to sterilise the same way an ethanol hand rub would? Say spray a 60-70% film and leave to dry?

That's some good info there but I myself don't do the sanitize step. I do take it all apart and wash it before and after each use and that's been all I've needed so far.

Yup I hear you. Honestly, depending on what you are making and how you are doing it I lean towards agreeing. On the other hand, I can't see any downside to it.

Thanks for vid. I’ve been having a lot of brews go bad - quite an unclean taste, and have been really sterile I thought in brewing process, however haven’t been cleaning, just star san. Do you think this may be where I’ve gone wrong? First six months of brewing never had a bad batch, now probably 60-70% of batches are bad. I have been scrubbing with a dishes bristle brush, could this have ruined plastic fermenters? Cheers!

Hi no I have not got it yet my mate got it on Amazon when he seen the bottle he put it in the bin . It's a lot of many for it if it is the wrong thing. I don't know what to do.

One thing I'd like to bring up, when using sanitizer on stainless steel I like to give it thorough rinse. I do this because the sanitizer is caustic which possibly could lead to pitting of the stainless steel. May not be necessary but I don't like to take chances Great video btw, Jesse

Keith Tuttle acid passivates stainless and is used to protect it. The stuff to not get on your stainless is Bleach.

MrButterpantz stainless steel is resistant to acids, not alkalis. You are correct about the passivation with acid, and usually accompanied with heat

Keith Tuttle Caustic then Acid then San. That's how ya do it. You have some confusing statements in your first comment on the vid. Caustic breaks up organics. Acid kills critters but also is the best way to remove caustic. San after that with whatever you want, if you like. I don't see anything wrong with rinsing PBW. It's certainly not alkaline enough to mess up stainless. Rinsing Star San is just dumb. I've left it in kegs for years with no pitting

Star San is acidic. For distilling even using it is over kill, so rinse away. Brewers never would as even tap water is considered "unsafe".

But yeah its safe for use on stainless. It is acidic but not strong at all. PBW on the other hand is basic. At the correct concentration and for reasonable soak times you should be fine though.

Great series of videos you have here, thank you. Just something did come to my mind re: the way of sanitising. The Hydrogen Peroxide is good to sanitise most everything human. It comes in 3% and 6% versions but I am not sure about the value for money or the possibility of the temperature to be the catalytic addition to the efficiency. I do not know, maybe someone can expand on this?

Cheers mate, I guess my logic comes from brewing. If you sanitize with something that needs rinsing then its not really sanitising, you need to use more unsanitary water etc.

Hi, I am sure you are right; I only think you could actually follow the Hydrogen peroxide treatment with with a simple water steam clean - it should be safe on the plastic used on mesh brew containers. Gentle steam of boiling water steam should not melt the plastic.I am sure it will definitely work on steel mesh containers. It is like - to steam it from the top down following by steaming from the bottom down to the top once it is upside down. I could possibly call it an "Un-Wash" cycle :) No unsanitary water - just steam and there are quite a few of them available cheaply for the household use.

Using the steam is free of chemicals. Do it, turn it upside down, repeated it and let it to dry. You have cleaned it and you have not introduced chemicals to your vessel.

If I can add one more. dead cheap, and best thing i've ever tried. Caustic Soda. I cannot scrub my fermenters. I use those no-chill plastic jerrycan jobbies. So you just have a 50mm opening into the 25L vesle. 50gr caustic. 5L room temp water. Add Water 1st and then add caustic bit by bit. Secure cap really tight, and shake until dissolved. let it stand 30 minutes. Then flip it upside down and let it stand like that for another 30. Throw the solution down a drain or toilette. Then rinse with normal water, and rince down same drain. Then Add 100ml vinegar, topped with 3L water. Shake well, and rince. The vinegar neutralises the caustic which is a very strong base. After this is done, use your starsan as directed, and ferment some goodness. Caustic is dead cheap. like $2 or 3 for half a kilo. ie 10 treatments. I have not had soiling that caustic cannot clean Then the warning. DO NOT TOUCH THIS STUFF!!! Wear rubber gloves. Wear Eye protection Wear long clothes. Do not bring bleach or hydrogyn peroxide near while you are cleaning.

Yup for sure dude! It works a treat eh? Most commercial breweries end up using it at some stage. But like you say its nasty stuff if you dont treat it with respect haha. Hence the "best and safest product on the market" line haha :) But as you say. For cleaning a spot you cant reach . . . . nothing better!

Well said, floating head. Seriously, you need to wear something other than black on a black background lol. What is the wash you are going to make for cleaning? I strongly recommend BWTPW. It's all I make for neutrals, is super simple, and there is an online calculator to allow for easy scaling. Cheers

+Bobbywolf64 bahahahaha. But it's my party trick dude! Nah i hear you. Guess it's 100 times worse in a older/cheaper monitor. Or if not at full res (no idea if you fit into that. Just saying ) Interesting! Will look it up. I was going to do something akin to a FFV. But just use what I had available (wasn't too stressed as I knew I would never drink it etc)

That's interesting, I have read up on Star San and I thought the cloudiness was dependent on your water type and had no real effect on the efficacy of the product. Certainly my Star San goes cloudy as soon as I add tap water.

That's a good point actually! I have never had that happen to me, so I have not looked into it too much. From memory, I think you are totally right though. If it's cloudy when you mix it up it should be fine. As I understood it, it was an indication of PH change when a clear solution turns cloudy over time. But perhaps I have been taken for a ride on that one! All I know for sure is that you want the PH to be under 3. And it's almost always going to be good for a month when stored well. 3 months + often. To be honest for me I barely ever store it now. Its so easy to mix up in the volume needed I just do that most of the time. hmmmm . . . . . . I will need to go check that now! good point, thanks, man!

I have never had an infection since using star san, but then again Teddy's FFV ferments so quickly (3-4 days) it doesn't really get time to get infected. None-the-less I have never taken the pH of my star-san but I will when I make up my next batch. Since I use the spray method I tend to have a batch made up that stays in the sprayer, and since I make 150L ferments it's a while between batches. Anyway, as I say, the risk of infection is small and not particularly disastrous even if it does, but it's always a good idea to get into good habits. Cheers. PS: I would think it's more important if you are making a proper mash as you will be doing - that's what I am looking forward to watching you do.

+Rudyard Kipling yeah man I totally agree. Not much is going to compete with yeast ripping that fast. Star San in a spray bottle is pretty freaking awesome huh! Me too! Looking forward to it. Thinking running a few cheap fast FFV firstay be a good idea. Just to get a feel for it etc. Less time $$ and emotion invested haha.

Yep, just baking yeast too, it's an incredible recipe. Meant for reflux tho' not sure how it would go through a pot. Still, for a first run, cheaper than cheap wine.

Hi I am new to homebrewing I have bean looking for star san but I can not get it in the shops where I live just on amazon . when you say don't fear the foam BUT I was told on the back of the bottle it tells you to put gloves on and wear protection glasses. So what the HELL do I do please help if you can will it be ok if you live in a hard water place. PLEASE HELP IF YOU CAN.

Hi Still It, quick question, I'm more than halfway through a ferment for spirits and I'm just starting to detect a very faint sulphur like smell from the air lock, is this normal? So far the batch consists of 21L of water, 7 kilos of dextrose, triple distilled pure turbo yeast and liquid carbon. I'm confident I did a good job on sanitising everything due to I am not new to brewing as I use to brew beer. Any feedback would be greatly appreciated as I am starting to stress myself out the more I research on the internet LOL. Cheers.

Nah don't stress it mate! Yeast will often grow some weird stuff off during fermentation. Sulfur is not uncommon, what yeast was it? The NZ peat gave me sulfur for a few days actually.

Thanks for the fast reply, that is really good to hear, the only thing is though that there won't be much copper contact as I am new to brewing spirits and I only have an air still. I would of liked a better still setup but im limited for space.

Its something I have been thinking about a lot. I dod think that a clean ferment helps with yeild and better cuts, although that is more of a hunch at this stage. I also agree that getting some funk will likely add flavour. Using wild yeast/bacteria/fungi/etc to give flavour is, of course, a bit of a crap shoot though. . . . . .. To summerise . . . . .we need some more testing!
