I like skinning it down first before quartering, bit cleaner and doesn't take long especially on a deer. I even debone them when I have a ways to hike, really doesn't take long and saves a lot of weight.

Bro that's just not the way to do it. You wasted soo much meat around the hindquarters when cutting it off the pelvis, on the shoulders, the ribs, the organs, the neck, all went to waste. Plus keeping the hide on just leads to split hairs getting everywhere over the meat. So much waste off a valuable animal, just due to sloppiness. Whoever is watching this, don't copy this guy, he obviously does not respect the animal enough to take the time to get everything off the animal. To get the most off a deer and protect it's quality (especially in the heat) get the guts out first, then get the hide off, side by side. Then take the first shoulder, the first hindquarter, the loin, and the rib plate off. This opens up the chest cavity to jet the tenderloins out even easier, without bruising them. then, flip the animal over and repeat the process on the other side, keeping the main body of the animal on the flesh side of the hide, so it never touches the dirt. Finally, cut the neck off by cutting in-between the vertebrae where it starts and ends. By the end, the only thing you should have left is the spine and the pelvis. On a mule deer or equivalent sized animal, you should be able to load all of these into game bags and carry it home in one load. The gutless method works best in cold climates or on extremely large animals (such as bull moose or bison) where you physically cant flip them over. and even then, taking the hide off in one piece before cutting into the meat will stop the spread of hair, and help it cool down.
