Pork noodles that contain liver normally still have blood in it. So does this mean they don't wash away the blood with vinegar and salt ?

Why still need to wash after marinating the liver? Won't it just wash away the flour? Also I have allergy to tapioca, is corn flour okay? Next, can share how to pick good pig liver when buying? I had bad experience eating really bad pig liver from hawkers, and would like to know how to choose a good one. Tips from google are just words, and none on youtube either.

Why you clean the liver from blood??? I thought Iron is good for you and that's why people like to eat liver. Doesn't make a sense at all 😮
