I suggest freezing the chocolate bar to get the shavings because it makes it easier to peel the bar when it's harder.

@mareksison Oh, ok... Here in Sweden, when we buy cocoa, it's 99% pure cocoa powder :P (the most common brand claims 99,9%) I don't think they're even allowed to sell it as cocoa powder here if they've added anything else to it (not counting something to prevent lumps)... 'S why I was so confused :P

@FaerieDust ok dude, here is the deal. Ghirardelli has a mostly pure cocoa. Their cocoa has almost no sugar and is the pure dark chocolate. For a little sweetness, you add the Hershey's, which is more like milk chocolate cocoa. Scharfferderger is like a kinda balanced mix of the two. A little sugar and cocoa butter, lots of cocoa. I guess he's after a certain ratio for perfect flavor.

@FaerieDust haha, no problem, I'm from the Philippines and I don't have the luxury of buying any cocoa, so I just buy the baking ones and mix in the actual chocolates just to try it. :D

Ok, so I don't get the thing with the cocoa... So many American recipes I've seen mention specific brands, and here, Todd used three different ones. What's the difference? 'Cause we only really have one kind here in Sweden (unless you go to a specialist (=super expensive) store), and I just can't imagine how great a difference there could be! So if someone could explain it, I'd be super grateful :P

i used swiss miss dark, and milk chcoalte coco mix...ultra cheap...tasted just as good....powderd milk....hmmmm.....u add it to milk anyways...extra step u dont need in my opion....try it with whole milk and CREAM if u want it thick and not so waterdown from the ice
