In Japan we would pour cold water over unbrewed leaves and keep the bottle in the refrigerator overnight. Other times we would leave tea in a glass with some ice cubes and drink it as soon as they melted - the flavor is surprisingly strong! Both methods make a nice additive-free ice tea for hot summer days. It worked best with roasted teas like houjicha or black tea, in my opinion.

+minifix Yes ice brew seems to make very strong tea, many places in Taiwan have ice dripping over a lot of leaf for an ultra strong tea.

@@Slickrussian Not sure who you're asking, but I'll venture a response. All teas (Camellia Sinensis) have caffeine. If you want to avoid caffeine you might want to consider other herbal infusions, but be aware that even some of those might contain caffeine, like for instance cocoa. Caffeine is, after all, a kind of natural insecticide that many plants have developed as a defense mechanism. There exists low caffeine teas at very high altitudes (they develop less caffeine because there are fewer insects up there to defend against), or winter harvests like kyobancha (again with less caffeiene because there are fewer enemy bugs in the winter). You could try decaffeinated tea, but the chemical process of decaffeination also strips away many nutrients and some of the flavor.

I wish I could give you a standing ovation, you're videos are some of the best content on RU-vid I've found. Tea people a clever! I brewed some white needles a few times, I'm going to toss them in a glass while I run to the store. It's such a subtle, delicate white that I want to see how it does at cool brew

never got in to tea brewing. just been using the plan old tea bags. I found your channel about 2 weeks ago now here is my Frist brew did a breakfast tea Blend. finest Assam China black tea with a hint of bergamot and citrus aroma. It was so nice and refreshing on a summer's afternoon was pretty nice hot as well.

I like your method best from others I've examined, and you explained everything very well. Thank you. I also like your hot water first method, because I read a book by a Chinese chef, who explained that it takes hot water to release the healthy qualities of tea leaves (if one is interested in them for that, and I am). In example, matcha desserts are delicious, they explained, but unless a little hot water was used to brew it a but first, then all we're getting primarily is flavor.

I tried this today and it was delicious. I had a mint tea for breakfast, pomegranate tea with my lunch, and chamomile tea with my dinner. I hate hot or luke warm drinks. I have found something I'm in love with, that's low in calories and the taste is so refreshing. My teas have no caffeine.

This looks great. I really have to give this a try during the very hot months ahead. Last year. I would brew a pot the night before then put it in the icebox to take in a thermos the next day. This looks like it will work much better.

+TheAyeAye1 Brewing hot then refrigerating produces a less fresh tasting tea than cold brewing. It is worth noting that in our tests (with science bods at a London University), tea that is hot brewed then left overnight has much less antioxidants compared to fresh brewed and flash chilled over ice (although we did not compare with cold brewed tea).

When I brew tea, I'm not sure what to do with the leafs overnight (I want to keep them to brew them again). I watched your video about different ways of storing leafs between brews and it was informative. But I think this is another awesome idea to reuse those leafs ! Brew them overnight in a fridge :) Thanks for that video !

i am 14 years old and my dad has gotten me hooked on tea along with my British grandmother. this channel has showed me how to brew by myself. I very much like it because coffe is bad for a person my age but tea is very beneficial

NEVER use sugar in your tea litlle buddy! :) If tea is brewed like it must be brewed, you will taste the natural sugar out of tea leafs... :)

I've been learning so much from your videos. We always just use the tea bags for cold-brewing, but I'm definitely trying this with the packages of green teas friends have been giving me (because they don't know what to do with it, and they know I like tea). 04:00 About bacteria growth: I heard of people in africa using regular transparent PET bottles, filling them with water from their well and leaving them out in the sun on their rooftops. The sun with it's intense light (especially UV) will cause the bacteria to die off. So if you leave the bottle in intense sunlight for long enough it would be fine after all.

PET bottles actually filter out short-wave UV, which kills bacteria. What's likely happening is the water is getting hot enough to kill anything, as the water can't cool down from evaporation and plastic is really good at thermal insulation.

Yes but you would have to be leaving the leaves for well over 12 hours. Some teas can be cold brewed for days without being stewed tasting.

I personally like to use my silver niddle white tea to cold brew, just because it's so bloody expensive, that it would be a shame to throw it away after one time, glad to hear that my technique (of brewing cold after hot) is not unique, but i assume that some people will say that using White tea for that is blasphemy. As usual one video of yours produces many questions for me that i truly hope to hear back from you on. what is a good rule of thumb for converting hot brew methods into cold ones? What are signs or tastes to know which direction to adjust the brew method? Is there a con or a reason for why you don't just hot brew the tea and then allow it to cool? If you begin brewing cold would you recommend brewing the same batch hot again or just leave it for cold brew? For teas that recommend one steep session per tea blend what do you recommend for that when brewing hot first and then brewing cold? How would you adjust your brew technique if you were going to brew a batch cold and didn't have filtered bottle but instead strained the leaves out into another cup. Would you let them air dry through every time or would you just fill more cold water immediately again? how does cold brewing affect the number of steeps a tea can have and once again how do you know when the limit has been reached? Lastly when brewing cold what is the longest time you recommend (for all tea types) that you would leaves left in cold water before you remove them if it's not going to be drank right away?

YES! Ice is great to keep things chilled for cold brewing as long as it does not freeze the leaves.

How fascinating that you know what mole is! Yes I can see how a fruity tea would complement the chocolate base in mole. And I would love to try a Dong Ding. I definitely have to dedicate some time tasting more teas and see how I can pair them with my favorite Mexican dishes just for the heck of it.

Wow, I've been using too much tea all this time! So the same as Western? When you have your morning cup to sterilize the leave, can you do Western or does it have to be gong fu? I ask because I can only do Western right now. Also, can I sterilize the leaves with hot water and then quickly quench the mix with cold if I'm in a hurry? You guys are so awesome and I learn something new with each video. Keep it up!

Hello Mercedes and thanks for watching. You can have your hot tea brewed Western or Gong Fu and then put the leaves in bottle for cold brewing. The more leaves the richer the taste and the quicker the cold brew will be ready but western style is fine too. Yes you can brew in a small amount of hot water and immediately pour over cold water but it would not be strictly cold brewing. Instead rinse the leaves for 5 seconds in hot water (throw away the rinse) and pour cold water on the open leaves to get a proper cold brewed tea.

Hi Don, great video as always! Got a question though - when sou say you brew the tea before coldbrewing, do you refer to brewing it only one or two times or would you brew it like normal and instead of throwing it away afterwards you put it into the cold water? Cheers!

You can do either but to make the most flavourful cold brew I would only brew the tea hott once or twice.

Hey thanks for the video! One question though: Do you have the same results when you brew your tea with hot water for a shorter time and afterwords put it in the fridge to cool down? Maybe it is faster that way. Or is there a difference in the taste then?

+Matze Rosenberger The taste is very different because you are infusing the leaf in hot water so you have a different balance of flavours extracted and the tea loses a lot of antioxidants if it is left in the fridge without any leaves in the water. ok, what if i cold brew my tea slowly in the fridge over night for consumption in the next day, and in the next day i feel the liquid is a bit too cold to drink straight away, can I heat it up in a microwave oven? or just leave it in room temperature for an hour or two

+houston34 Really good question and we have plans to experiment with warming up cold brewed tea. It should be ok, you may lose some of the freshness of flavour and we would avoid microwaves if possible but try it and let us know!

kind of eyeballing it, but it looks like the amount of leaf is similar to gongfu brewing in a typical gaiwan, but is similar to western in the bold brew bottle? right? I feel as if doing a Western brew first will extract too much in the first brew to get a good cold brew afterwards.

Yes the amount is about the right amount for a Gaiwan brew which equates to Western style proportions when you put that leaf in a 500ml bottle. Preferably brew one or two Gong Fu flushes instead of a Western brew before using for cold brewing. You are right, a Western brew before would extract too much for an optimum cold brew but it would work nonetheless albeit a bit weaker.

Could you boil your tea round one then make the sun tea to avoid/reduce bacteria? Our family loves sun tea in the summer - just totally unaware of possible bacteria issues & obviously want to avoid them now that we know.

Don, I have a hou Kui green that I really enjoy, but find its disappointing that I can only get a few good hot brews on it brewing midway between wetsern and gongfu style. Do you think this type of tea would do well with cold brew? If so, do you think a full brew or just a quick hot rinse would be better to start with?

Hi Jeanette, Hou Kui is notorious for being tastt but frustratingly light which is why a lot of people including myself tend to brew it Grandpa Style. You can watch a video all about Hou Kui Grandpa Style if you have not seen it already.

Those bottles look pretty much exactly like 'the bobble' water filter bottles, are they different in any way, and if so, how? I mean no offence in any way, just genuilnely curious. Also, do one really want a carbon filter when drinking tea, if even using a clay pot could affect the taste, could not the filter remove taste as well? Followup, is it possible to remove the filter inside the 'siv', 'net'-thing and just use that to filter the leaves? Thanks for really great videos.

Hey! Yes it is pretty much identical to the Bobble bottles. We take the carbon filter out actually for when we are coldbrewing in good water.

If I'm just cold brewing the tea overnight in the fridge (without doing the initial hot brew first) how many times can I reuse those leaves and still get a great flavor from them?

usually just one time, but if you steep it let's say for 12 hours then you can probably do the second infusion and let it steep for 12-24 hours

But black and Oolong teas are partially or fully fermented meaning there's already a bunch bacteria on the leaves, plus scientist don't know if these bacteria are particularly pathogenic, most aren't, AND the catechins leech out from tea leaves have shown antimicrobial effects.

When you leave a translucent bottle with water exposed to the sun the UV rays kill the bacteria if you leave it enough time. This technique was also displayed by Bear Grylls on his program man vs wild on a episode in which he was on a tropical island.

hey i like your videos, you are clumsy in making tea, enthusiastic and passionate. In other words the opposite of the usual chinese tea shop lady who seems to try and trick you with her manners so perfect and neutral and polite and those plinplin spa musics. So yeah im glad it feels like watching someone like me, or drinking tea with a friend (i esp like the tea with friends series) instead of a product selling video, and sure you add links to how to buy the things shown in the video but thats cool. one thing makes me cringe though, this "join the revelation of true leaf, stay away from the tea bags" stuff, like, feels like a cult. I actually like your videos but yeah tea is just a drink we all like, tastes good, i get what you mean, try good teas but then again probably most people watching tea videos have already tried some loose leaf at some point or were going to try anyways. also, I get that you live in the UK so maybe is different from being in china, you might feel the frustration of offering leaves to people and they would just tell you they rather have tea instead aka a bag but yeah maybe give teabags a bit of a break? some people like them, some don't, who cares. I get that you dont, its ok, making one comparison video might even be interesting but yeah insisting so much sounds kind of snobbish.. take this criticism however you want, i'll keep watching the videos, hope it doesnt sound as "hating", sometimes we criticize the things we care about. xx

+- fastgoose - Hi and thanks for the criticisms. We understand your view and in many ways agree with you. The issue is that the vast majority of people have not discovered proper tea and associate tea = tea bags or scented blends. So we are trying to push the point a bit harder and for people like yourself (who know tea) it might seem like overkill. It's a bit of a line we are walking between being passionate about promoting good tea and appearing elitist which is certainly not our intention. Water at less than boiling for less than 5 mins is really unlikely to sterilise anything!

I don’t think I understand how just hot water can steralize the tea leaves? Doesn’t it take about 10 mins of boiling for something to get sterile..? And boiling hot water would destroy many of the health benefits teas have.

Recently I discovered that cold brewing can potentially rescue otherwise unusable leaf. I found an old packet of stale, low quality Bai Mu Dan. Smelled like a cardboard box and tasted like a stranger's foot. It was completely undrinkable. Instead of throwing it out I tried cold brewing: - leaf to water at least Gong Fu, perhaps a little more leaf - container filled with the coldest tap water; around 16 C - leave in the refrigerator for 40 minutes / 4 C - strain The resulting infusion was extremely aromatic with strong peach and elderflower notes. I couldn't believe that it came from that horrible leaf. Bear in mind that neither hot wet leaf nor hot liquor had a hint of those aromatics. If that's what happens with garbage leaf I can't imagine what using top quality tea must do!

bro! the entire point of cold brew is to steep tea leaves without cooking them, to perserve the flavours of the tea by not COOKING the leaves in hot water.

Two minutes into it and he STILL hasn't gotten into what the title mentions: HOW to do such. And when he finally does, he instead uses a method that is NOT strictly cold brewing, but INSTEAD includes hot brewing as part of that process, SMH.
