Years ago, when I had a cafe, I employed a young chef, fresh out of his apprenticeship at the Hilton Hotel. He designed this breakfast dish and put it on the menu. Shortly after a food reviewer from the biggest newspaper in the State, dined anonymously, as they do, and the next weekend there was a half-page writeup in the Weekend Edition of the newspaper, read by thousands, and this was the dish she ate, and she rated it 9.5/10. We were flat out busy from that day forward, with people lining up for tables each and every weekend.
That young chef, fell in love with my youngest daughter and has been my son-in-law for the past 10 years.
The total cook time is 3 1/2 minutes, so it's crucial that ingredients are prepped before cooking commences.
The combination of creamy avocado, thyme buttered mushrooms, Persian fetta, poached egg and caramelized balsamic is a winner. Perfect for a lazy weekend breakfast or brunch.
