Traditional Azerbaijani pilaf is the main festive dish of Azerbaijani cuisine. A platter with fluffy rice decorated with beautiful crusts called "qazmaq" is always the centre of a festive table. Various meat and chicken dishes are served as a side dish.
A very simple recipe.
Ingredients:
Long-grain rice (e.g., basmati) - 600 g
To prepare the crust in a 20 cm stew pot:
5-6 tablespoons of rice, 1 egg, 1 tablespoon of vegetable oil, salt, and pepper to taste.
To give the rice a bright yellow color, add saffron infusion.
Beef and fresh herbs stew:
Beef - 800 g
Onion - 200-250 g
Vegetable oil - 2 tbsp.
Spinach - 500 g
Cilantro - 100 g
Dill - 75 g
Parsley - 75 g
Mint - 50 g
Turmeric - 1 tsp
Lemon juice - 30-40 ml
Lamb with chestnuts and dried fruits:
Lamb - 800 g
Onion - 200-250 g
Vegetable oil - 2 tbsp.
Boiled chestnuts - 200 g
Raisins - 100 g
Dried apricots - 100 g
Pitted dates - 100 g
Prunes - 150 g
Curcuma - 1 tsp
Lemon juice - 30-40 ml
Chicken with tomatoes and eggs:
Chicken fillet - 800 g
Onion - 200-250 g
Vegetable oil - 2 tbsp.
Tomatoes - 200 g
3 eggs
Lemon juice - 30-40 ml
