Thank you! I appreciate that! I guess RU-vid doesn't like the site of a whole pig being prepped to cook. They've taken my video off the recommended list and views of dropped down to practically nothing. I think I'm going to try editing the video and reposting it without the prep of the raw pig, maybe they'll be okay with that. There's a policy about videos that might be shocking to the audience. I did my first eight pound roast and it went so well. The smoke ring was really defined and the rub and injections made the meat so good. Cooked for an hour a pound. I cant imagine doing a whole pig !

Awesome! Sounds like you did a great job! A whole pig is a lot easier than you might think. It doesn't work out to an hour per pound. This pig was around 38 pounds and it took 11 hours to cook. A 20 to 30 pound pig would take about 8 hours. The whole process is a lot of fun and the result is impressive. Give it a try some time! Thanks for watching!

That deflector inside the barrel is the key componant to spread the heat all around. I have a Dyna-Glo Signature Series (which I wish I'd never bought), and I have setup fire bricks inside to keep heat but also the deflect direct fire like your plate is doing. This channel is very underated for the quality of information you are giving us! Thx! Subscribed and +1

Great video! What I like is that you're doing this in a COS and not one of those $3k - $5k offset smokers. I don't have the smoker that you have but I have an OKJ Bronco and Highland offset that I absolutely love. Hats off to you for making this video for the rest of us!

Oh, wow! I wound up watching this all the way through. I really shouldn't have watched it while hungry, though. Good cook! It's amazing how little wood you really need for these offset smokers. I had mine for 4-5 years before I finally figured out how to use it by watching your older videos. Now, every cook is virtually problem free. I also oil the outside of my smoker. I painted the outside of the firebox with header paint, but it burned off anyway. Started oiling it with olive oil just to keep the rust away, but noticed what a nice seasoning the metal took....

@@stevebarna6846 yep, that's pretty cool Steve. I agree, the Filipino pig roasting is pretty awesome. Only problem is, maybe not a problem where you live but in my area, not really laid out for that kind of cook. What is cool though, every part of the world has different techniques and unique techniques and with some pretty awesome results. For me, if I want a Filipino pig roast, I'm going to the Philippines. Thank you! That pig was freaking delicious! I'm excited for you and your new Grand Champ. It comes a standard with one temp gauge, but you can order more of the gauges from the Char-Griller website. Just look up the Grand Champ on their website and you'll see a link to order parts near the bottom of the page. All I did to mine was add the two gauges and they are very useful to have. Awesome Brother! That came out very well. Just to add something for your the next pig you do is that once you reach your desired color maybe consider tenting the pig with aluminum foil to protect the color, not that I have done this myself but I do remember seeing someone do that on another channel, but this is backyard Q-ing and it came out amazing. Thanks for sharing your adventure and I do plan to attempt a whole pig myself at some point.

Everything looked pretty darn good! Just a recommendation for you, get yourself a MEATER plus wireless thermometer’s. Those thermometers can detect the internal temp of the meat and it can detect the ambient temp of the cooking chamber with just one probe. I use those on all my pig cooks. Great job!

Thanks for the tip! I haven't tried MEATER yet, but I've tried a couple others and they didn't work out as well as I wanted. Connection wasn't strong enough and ambient temperature was off. I'll have to give MEATER a try. Thanks for watching and I appreciate the comment!

Hey Rowland! Thanks for the comment! Yeah, I've heard people talking about getting whole pigs at Costco and I was thinking to myself, not any Costco that I've ever been to. Costco restaurant supply, no that makes sense. Thanks for the tip! You should definitely go for it. Hope pigs are a lot of fun and even with very little seasoning they come out tasting so good. Throw in some extra seasoning, like injections, and you can come up with some amazing delicious pork. Thanks for watching!

There's a lot of great options out there, and a lot of them cost a ton of money but the Grand Champ is a great place to start and for most people, all you'd ever need. Cool video, I was really interested in seeing your temperature control methods but I don't think any of your methods ever got the temperature to come anywhere near close to each other like you expected. I was hoping to see the temperature level out at least after the first 3 hours. However, the pig and end results looks and I'm sure tasted amazing. Great job. I'm a big a fan of the actual science that it takes to cook with wood and offset smokers. I try to learn any new tips to control smoke and temperature whenever I can. Thanks for the video.

Thanks Carlos! Yeah, I think the hardest thing to learn is to trust your instinct and feel your way around. Stuff doesn't always go as planned or expected. That pig was the biggest hunk of meat I've ever had in the Grand Champ. I've done smaller pigs and the temp was more consistent but this big guy was both a surprise and a challenge. I'm working on putting together another pig vid, but it'll probably be a couple months. Stay tuned my friend! Thanks for watching and thanks for your comment!

I just cooked my first 20.6 lb shoulder on Char-Griller off set smoker. Every body said it was awesome. Already got another 23.6 lb to cook

Great video. Thank you! I've been questioning and but really really wanting to do a whole pig for years now. How did you go about picking what size pig to get? But again THANK YOU for the confidence. Will try soon as I know how to figure out the size

You're welcome and thanks for watching! On the size, my sources sell them in 10 pound ranges starting at 20-29, followed by 30-39. I knew that it would be difficult to fit a pig larger than 40 so I went with the 30-39 range. A good place to start is the smaller option though so that's what I'd recommend when you do shopping. Wow wow,,so amazing my first time watching video like this,,cooking a whole pig in a smoker😍😍😍we don't have like this in the Philippines,,we cook roasted pig in open charcoal fire,,wt an iron stuck inside so it can be turn on rotate,,,we put spices inside the body,like lemongrass,spring onion, salt and soy sauce, whole pepper,etc,,and then sew the belly to close it,,,roast it in between the charcoal fire,,,and wipe the body interval wt garlic oil, for 4-5 hrs,, according to the size,, and the skin is si crispy😋😋😋 Soo delicious,,if you can only taste, Filipino roasted pig,the meat inside is so tender juicy😋😋😋😋👍👍👍👍,

One last question. I just got my Judge and put it together. There are two square holes in the bottom front, of the pit. What are they for??

I had to go have a look to see what you were talking about. Yes, underneath the ash pan I see those two square holes near the front, one on each side. I don't think they're really for anything. Maybe just airflow? I totally forgot that they were even there. I imagine they would be useful if water or other liquid was getting into it, the liquid would drain out and help prevent rust. That's all I can think of. Thanks for asking! I'm working on a new Judge vid right now. Hopefully I'll have it up tomorrow! Thanks!

I see your fire got away from you. I thought you were going to use the Weber to keep a small fire going on the side so you can add coals to the smoker when needed. Came out excellent looks super tender 😎

For the grand champ u able to go any bigger on the pig and still fit? Costco has a 50lb whole pig so was curious if you tried bigger.

The pig in this video is in the 30-40 range. I didn't weight before cooking but I'm guessing it was around 35 pounds and it filled the XD really well. I'm afraid a larger pig might not fit. There's a part in the video where I measured the rack with the pig on it. Did the see that part?
