I am a 74 year old Goan. Just a couple of things. Use Kashmiri chillies10 to 15 per kilo. Definitely no tomatoes. Consider tamarind for sourness.

Like in other countries, France and Italy in particular, there are are so many versions of “authentic” (insert famous dishes here). All have slight variations. For vindaloo, my cookbook directs the use of tamarind along with very similar technique as this recipe for my version, and it’s the first time I see tomatoes used. Nevertheless, this recipe inspires me to try it as is. I still might add the tamarind!

A few years ago I came across this video and noted down the recipe. Then I translated it into my local language, and handed it over to my cook to try it out. Needless to say the dish turned out extremely well and left my entire family, especially the kids, finger licking their plates. Its a marvelous recipe and I have also tried it out with chicken which turend out equally good.

This dish was excellent! Followed exactly as written...stored in fridge after sampling to serve tomorrow...I read it gets much better after 'swimming' in those delicious spices for some time. Perfect amount of heat...might even make hotter next time! I love spicy, and this doesn't disappoint! Very complex flavors...Yum

Wings11ful 3 to 4 whistle then on low heat for 5 Minutes

actually vindaloo comes from the word vinha d'alhos meaning garlic wine and the chilies Portuguese​ use are piri-piri

According to my knowledge we never add water or tamatoes when preparing vindaloo especially if we are going to preserve it for a week. But innovations are always welcome:-)

I followed the directions exactly but it came out bland. Added salt in hopes of enhancing flavor and over-salted. Is blandness simply a characteristic of non-cream-based curries?

Actually no traditional Indian curry is cream based so no that's not why your vindaloo turned out bland. If you noticed she said a teaspoon of salt but added much more. Also, I'd lightly season all the ground pastes and spices. Most importantly make sure you're using very spicy chillies, vindaloo is traditionally made with Goanese chillies which are very spicy and flavorful.

not really, you simply must be used to cream-based curries, which mainly come from north India. This one belongs to the South (Portuguese, technically) and the flavours are very different from the North. Come to think of it, different regions of India have very different flavours though the northern ones are the most popular thanks to its exposure as takeaway food in the west.

She did explain in the beginning that the 'aloo' comes from the word aloosh which is garlic in portugese, not aloo as in potatoes.
