It really is amazing how many people blow it with scallops because they get impatient and fidget with them. Great tutorial Steve! How do you like that Lodge carbon pan? I have the 8, 10 and 15 inch rondo and love them all!

Nice! I cooked those once but they didn't turn out caramelized like that. I need to dry them like you did!

Welcome back, Steve! Hope you are feeling stronger, better each day. This looks scrumptious. Any tips for selecting scallops at your local market? I mean, if you don't have a local fish monger, what do you look for and what are the questions to ask at the counter? Thanks very much! Take care!

+Robin R. We personally caught them in Florida so they were so fresh. But you can get great scallops from your farmers markets

When I try this, the scallops releases water. Does it mean that my pan is not hot enough? What's the ideal frying temp?

What about adding salt before the curry powder, to let the scallops sweat a bit more? What if you finished with butter?

I did add salt before the curry powder. Salt is a cure, you need to season the scallops and get them in the pan quick.

I agree! I watched a lot bad vids before this one! They kept having all this residual water/liquid, steaming them, no caramelization at all. Bravo

I might add just a touch of white wine to the pan after scallops are out of the pan for my pasta sauce :D
