Everyone told me Black Bear was gross. Got my first bear this year and made BBQ ribs with it and it was the best ribs I’ve had in a very long time! I look forward to using this recipe for guest this summer helping us do work on our property. A special treat for everyone (:

Very nice. My husband shot a bear a couple weeks ago and let me tell you it is delicious. I also render down the bear fat and use it for salves and soap.

I live in the north east and my biggest fear is getting a trash bear just because you’re almost never more than 20-30 miles from someone else even in the rural areas. I’ve also heard the meat is easy to mess up and most of the recipes are sausage or slow cooker. I’d hate to waste an animals life on something I couldn’t eat either because I messed up or the meat is bad because the bear got into unsecured trash or ate carrion.

cooking bear to 165 internal temp kills trichinosis , cooking to 200 would be overcooked

Slow cooked meat is often cooked to 200-210 degrees. Like brisket, roast, pork butt etc
