I adore this video - but in case anyone else needs this: *Dry* pan on a hot stove 1 Tbl of oil (any cooking oil - sunflower is cheap) 1 tsp cumin seeds (or mustard seeds if you like South Indian flavors better) 1/4 C green chillies (optional) 1 Tbl ginger-garlic paste (or ground fresh ginger & garlic) 1 onion (finely chopped) Saute until onion is soft 1 tomato (chopped) 1 Tbl+ cumin powder 1 Tbl+ turmeric powder 1 Tbl+ red chili powder 1 Tbl+ coriander powder 1 Tbl+ garam masala (black and white peppercorns, cloves, cinnamon/cassia bark, mace, black and green cardamom pods, bay leaf, cumin, & coriander - easier to just buy the mix) Add preferred protein/starch (potato/cauliflour/cheese/chicken/lamb/whatevs) Cook until yummy Add salt to taste
