Ingredients:
1 pound of fiddleheads
1 teaspoon minced garlic
2 heaping teaspoons of pepper jelly (Original or Roasted Garlic & Onion)
3 tablespoons of extra virgin olive oil
About my pepper jelly business Grey Goose Gourmet:
Our pepper jellies are made, jarred, and labeled in small batches out of our family kitchen in Wayne, Maine. I use fresh, simple, and locally grown ingredients in most of my pepper jelly varieties. When I cannot buy locally grown ingredients, such as for my Mango and Apricot pepper jelly, then I buy from my trusted local grocery chain. But local farmers supply me with the bulk of my peppers. In some of my seasonal varieties I use vegetables from local farmers' markets and in the Winter a local family co-op delivers a fresh box of in-season vegetables to my home. When the harvest is ripe the peppers will come straight out of my own backyard garden to be made into my pepper jelly.
If you are already enjoying our jellies, please let us know on our Facebook page by liking or reviewing our jellies! We would love to connect with you and hear your thoughts.
If you are new, but want to learn more and see behind the scenes into my kitchen, please check out my Facebook page. We frequently share recipes and different ways to use pepper jelly, besides the traditional cream cheese and crackers.

That was very interesting i had never. heard of Fiddlehead nor pepper jelly. I'm growing sweet peppers and jalapeno. I got them in the grow a late this year but they are doing nicely so I'm thinking i will make a batch of pepper jelly. Looks like a lot of fun. Thanks for sharing.

What are fiddleheads?

Fiddleheads or fiddlehead greens are the furled fronds of a young fern, harvested for use as a vegetable. Left on the plant, each fiddlehead would unroll into a new frond. As fiddleheads are harvested early in the season before the frond has opened and reached its full height, they are cut fairly close to the ground.

Fiddleheads are a seasonal veggie that grow in the early spring for a very short period of time in the Northeast, Maine and I'm sure in other states as well. You'll have to do more Googling. Might be able to find some in the freezer section of your grocery store. Good luck!
