Depending on the time of the season it’s normal for the crabmeat not to fill the entire shell especially later in the season. The closer a crab was to molting it’s shell the fuller it will be.

Seller of the crab probably added so much water to the crab to increase the weight, the meat disintegrated into the pot you cooked in, bottomline, you got ripped off. Only buy from a reputable source!!!

I dont think you necessarily over cooked the crab. In maryland we eat crabs all the time and we always know if a crab is “full” or not meaning theres lots of meat in it. I think you just got unlucky with the crab you got

Next time check the bottom of the crab, the white part before you buy it. If it's looks kind of brown it'll likely have more meat in it. The brown on the bottom shows that it's an old shell and the crab has had more time to grow into it and fill it with meat.

I'm glad I saw this video because my local seafood carries kingcrab in a tank . The price = 43.99 a pound . Each crab weighs between 5 and 6 pounds meaning 1 crab will cost me around 300 dollars . I don't intend on spending 300 bucks on a crab and having empty legs with no meat . I'll take that thing straight back to the seafood store with the pot hot water and everything and have fit !
