Salt and pepper is one of my favourites dishes; although I prefer to cook the prawns with head and shell on. But the down side is the messiness when eating. In the shop, this is the version I cook it. This method is cleaner and easier to eat with without messy fingers. For you guys who hasn't seen my salt and pepper videos; check it out before cooking this dish.
It has a sharp salty taste, aromatic and a little spicy..perfect to go with a pint of cold lager:)

Salt and pepper king prawns
10 raw tiger prawns
1 egg
1 bowl potato starch
1 stalk spring onion
3 cloves garlic
3 small fresh chilies
30g spring onion
Plenty oil for deep fry
Condiments
Salt and pepper mix (see my video on how to make this)
Few drops dark soy sauce 
Dash of wine
Make a cut along the back of the king prawn from top to tail.
Soak the prawns in egg and coat it thoroughly with potato starch.
Deep fry for 2-3 minutes at around 175°C, drain and set aside.
Heat wok with some oil and add the vegetables to sizzle in low heat for about a minute.
Add few drops of dark soy sauce and stir.
Add the prawns and sprinkle in the salt and pepper mix thoroughly.
Turn heat to high a add few dashes of wine to complete.

I love your videos Khoan! They're always great to watch and a great complement to your e-book of recipes! When I lived in Leeds and travelled the north I used to eat Crispy Chicken (which I know how to do thanks to you) with OK sauce but can't find it in the Midlands, any chance of you either doing a video of it or put the recipe for the OK sauce? Thanks!

Hello Khoan I´ve seen from user HAPPY WOK video when he coat for example shredded chicken in egg and potato starch then he will leave it for about 30min or so to absorb starch.Is it necessary or the effect is the same to make it crispy?Can you do some duck dish and add it to your videos :) Thanks mate

lol...if you want less strength on the chilis, take the seeds out and WASH them before cooking...just run the chilis under a cold tap for a few seconds..it stops the coughing but still retains the flavour

Love salt & pepper been cooking it for a while now. I don't like the taste of the wine though(shao xing) so don't use it. Maybe because at home its hard to get flames on the wine when cooking like you do.

How about you make a video like how they do in China street food like perhaps roasting a duck or a whole chicken ? Just a suggestion... And where is hull ?
