For anyone who hasn’t tried them, sauteed sweetbreads are very much like chicken thigh meat in texture and taste. I love them.First had them in a very fancy French restaurant.

I just stick them in the air fryer, slice em in half at the mid way cooking point * about 15 min, season with herbs and salt cook for about another 15 until crispy, and eat them with lemon and french bread. I dont remove the membrane. very easy, very fast, very tasty

What, if you don't soak in salt prior to cooking? I just sauté my sweetbreads in butter and eat without membrane removal. It tastes divine.

that is totally fine! I think it will also depend on how much membrane is on your sweetbread. Have had a few complaints from people I have made this for when I don't remove the membrane that it is "too chewy" 😂

I grew up on a farm where we did our own butchering. Nose to tail wasn't what we called it but what we practiced from poultry to pork to beef. I remember eating sweetbreads and enjoying them.

We put those in tacos with green tomatillo salsa with cilantro and onion. Very delicious. Alsto lots of salt.

I get my meat from White Oak Pastures as well. Their sweetbreads are the thymus. They sell pancreas seperately and call it pancreas.

OMID, my mom made delicious sweetbreads. One of my favorites that I never stop talking about. Now I want some but don't have HER recipe. I should have paid attention more as a kid. I remember they came out of the oven in a loaf, and then we sliced it or pulled it apart. In its own juices.

Sweetbreads are very underappraciated in the United States. I learned to prepare them using Julia Child's classic methods, which are exacting and technical but produce phenomenal results. However, the best I have ever eaten were at Le Baratin in the 20th arrondisement in Paris. It was cooked whole, perfectly browned, and served with a sauce flavored with mirepoix. My first course was a butter poache veal brain, which was even more delicious than the sweetbread. The French idea is that if the animal dies, you use all parts of it and make it delicious.

Yes!! I love you both for doing these for us! We just got our first grass fed half cow today and I requested ALL of the organs and extra bits! I’m going to buy your organ-encyclopedia. Before I do can you tell me how many recipes are in it? I’m thinking of buying the hard copy instead of the kindle version but not sure if it’s worth it 🤔 Are there recipes of various sorts in your recipe book?

On amazon it says there are 4 recipes in the book. Overall it’s more of an informational book on the why we should be eating animal organs, how to source them etc. I’m sure the recipes would give you some ideas though! There is a cookbook for organs called “It Takes Guts” by Ashleigh Vanhouten if you wanted to look into that

Is it normal that sweet breads would be dirty... I had some once that looked like they had dirt on them when raw and I didn't know if it was animal hair from the slaughter process? LOL

Ok Ladies - I followed your video to the letter and tried my first ever "sweetbreads." I have to say that I was very PLEASANTLY surprised at how delicious they are! I will be making more of these in the future

I took for granted you washed your hands after the dog episode..... LOL.... I love dogs to pieces, but don't like them licking hands... I have never eaten sweetbreads but may have to try them... Looks good....

Trying this in a couple days! So excited! Will say though, I really like dogs, but hearing the sounds of them licking and eating in a cooking video isn't that pleasant. Idk if it's just me though! But thanks for this whole series. I used almost all your recipes!
