Cupping is a widely observed practice in the specialty coffee world for a plethora of reasons, from green buyers cupping samples for purchase to roasters cupping batches as part of their quality control regimen and even to baristas cupping offerings to decide how to brew them.

Do it as many times as you can. Totally worth. It's better to have coffee taste wheel somewhere near, just in case

nice video Lance. Just a tip for other people: the first time i did cupping, i tried it with 5 coffees, which i thought was a bit too much and a little too overwhelming. 3 would be perfect for a start i think.

@@LanceHedrick Hey no problem at all. I’ve only been into the hobby for just shy of a couple of years after watching one of James’s vids. Coming from an engineering and then a chefing background the anal aspect of speciality coffee ticks a lot of boxes lol. So much to learn it’s crazy. I’ve picked up a lot of information but I think I would benefit from doing a days course at say square mile (I’m uk based) just to bring it all together and give me confidence to know I’m doing it right, what do you think? I guess it’s like chefing in some respects. I once asked my head chef what constitutes a great dish he replied, apart from the classics as long as it tastes good it’s good basically. Thanks very much for your reply it’s as equally inspiring for me also.

huge agree on the fine grinds for french presses. one thing you didn't mention is how the temperature drops quickly and consistently throughout the brewing, hindering extraction even more. i grind as fine as i can go before it all starts going right through my filter, which is 11 clicks out from 0 on my hario skerton pro

Thank you for this❤ I was able to understand why I felt like the least “complex” brewing method (coffee in a fine tea strainer fully immersed in hot water for 4-5 min then just pulled out) tasted the better vs pour over styles! 🎉 I had thought it was an “improper” method because I started using the tea strain when I used to not have any coffee equipment😂

Came here from a Kyle Roswell name drop. Great video - I've heard people talk about chipping so frequently just sort of assuming listeners expertise, so this was super. I will actually do a cupping as opposed to hearing about it!

Awesome video, once again! Loved it! Something of note... Specifically looking for what the: Body, mouth feel, acidity, sweetness, flavors - initial, mid and after, etc. really helps me to focus on and take note of what I'm experiencing. Writing it down on a pre-written list/chart takes it to another level for me, personally. A gem is easier to find when you know what you're looking for!

I agree with Lance's assessment that cupping has to be fine grind. I drank Tubruk everyday, which is made just like cupping but we drink it the whole way, and in my experience, anything above medium fine will taste just like black tea, very muted. And the recommended way to drink it is also to sip it til you make it.

@@LanceHedrick ok cool, that tracks. I've been using Hoffman's method which is a 16.6/1 @ approx. 840 um, so 17/1 @ approx. 550 could be similar yet different... Color me intrigued.

Hi, great video as usual. What is your grind size typically for espresso if your cupping grind is at 24? Because I own a niche and 24 is close to what I grind for espresso.

Unrelated question. Why have a breville dual boiler and a decent espresso machine as well? Do they have different strengths? I know you recommend the BDB, is the DE1 also recommended?

I think the decent is the best machine. The BDB can do most of what the decent can, but not with the same precision or tracking. Just two wholly different price points

I'm just curious sir Lance. You mentioned before that grind size and contact time affects extraction and at a fine grind reaching up to an hour of contact time when you let the coffee get cold, wouldn't that be overextracted?

Yeah! So, overextraction is a term i use to refer to the taste from pockets of overextraction (i.e. channels) cupping doesn't have channels. It is evenly extracted being immersion. That, plus the extraction will rapidly decrease after about 2 min because you're now extracting coffee with coffee

Cupping gives you the profile of your coffee, so you can plan around it. Certain profiles tend to express better with certain brew method, so with experience, cupping will tell you what will fit that coffee better.

Cupping? Yeah, I always drink my coffee from a cup. Tried drinking it straight out of the portafilter once, but there were too many grinds…. tried it direct from the pot once, but it made a mess and burned/scarred my face for life. It was a hard lesson, but I’ve returned to cupping my coffee

Scott Ray oh, or Scott R ow-Oh which rhymes with ciao . Second way is the cool way b/c you can extend the pronunciation for many seconds, but I always did it the first way. also that SCA recommendation of 1:18.18181818 seems so high. 1:17 I always thought was like the upper limit b/c I the shops I have spoken to seem to typically brew around 1:15. I think Klatch recommended to me 1:14 along time ago...maybe Klatch is kinda weird.

I feel as if, when you brew coffee through immersion method, it is not as fragrant as a percolation brew. Am I crazy, or have others felt this too?

Is there any way to account for the fact that after you taste a coffee after another coffee, it has to taste different than if you had not tasted that coffee before it???

Smell and therefore taste rely on contrast. I’m no professional but theoretically you should have a higher olfactory resolution

I don't really care what coffee tastes like when steeped loosely in a cup and sucked out of a spoon because that isn't how I prepare or drink coffee. I care what it tastes like with pour over or drip and sipped from a mug. Judging coffee by the way it tastes when steeped loosely in a cup and sucked from a spoon seems kinda like judging a pair of shoes by wearing them on my hands. That's not how I use them so it doesn't really matter how they are on my hands

How do you make comparative tasting or triangulation with pourover? You need all three cups to have the same temperature, otherwise it will impact the comparison.

Cupping (as I understand it) is mainly understand what the coffee is supposed to taste like by removing the brewing method. If you don't like what a coffee tastes like during cupping, you're not gonna like the taste in a pour over
