I looked closely at the flesh, and I don't think that's actually which way the grain is running. That's the orientation of the fat layers between the muscle fibers.

how abut the brown part of the salmon? do we use it for nigiri?

You do not use the skin for onigiri. But yes you can use the brown part as it is edible but they just cut that off because it doesn't look pretty.

Just learn to use your right hand))) cause right hands knives are cheaper

So confused why do you cut on the right side of the fish vs left side?

Chef's preference. I've seen them cut on both ends for sashimi. Not nigiri

Because a sushi/sashimi knife has one flat side and that's the side you want your fish to slide onto

I think it’s just a little easier to make a same fish fillets size. And the thickness of the fish should be in a balanced range.

Its preference. You don't have to be perfect with this. Just like asking why do you use your left hand for writing or both hands instead of right? It's quite a similar question that is difficult to answer because it is just preference and human nature.
