This is a good trivia. I did not know that using salted water for defrosting. I will definitely try this method next time. The instruction on frozen fish said put under cold running water...the result of the fish is so so...better than microwave though. By the way, what's kind of paper do you use to wrap the fish? Parchment paper?
I used this method the other day and it worked great! Could you tell me the reason for the initial warm saltwater bath before the rinse and thaw? Is it for color? Or something else? Thank you!
It is hard to answer about it. Some chef put sea salt on it for a while or seared ... it is depend on quality, kinds of fishes ... Sorry I do not have certain answer for it. 😅
