Do you believe everything you read? When you buy deveined shrimp, do you expect it to be clean and ready to cook? I used to, now not so much... Watch this short video and you will understand why.
Of all the videos I've watched on deveing shrimp, you are the only person that talks about taking the vein out on the underside of the shrimp, thank you! I could see that vein and wondered about the removal.
Thank you very much for your comment! I am so happy that my video was helpful to you. I hope we get a chance to cook together this season. My online classes start next Tuesday, Sept, 29
I'm glad I watched your video, you are the only person that told me this, some of the other video's don't even show us how to do it properly, not including deveining the bottom of the shrimp.
I always thought deveining referred to the under vein (which I remove) as every time I buy shrimp the top one is already removed. This video confirms that there are in fact two. Thanks!
The top one is the dorsal tract, it can have an unpleasant texture and flavor. The bottom one is a vein that in the vast majority of the time is left alone. Take it out if it makes you feel better, but restaurants don't bother with it.
I agree, hardly anybody talks about this, and I suspect no restaurant or pre-cooked shrimp ever has this done. I've been doing this for years though. What I do that might make it a little quicker for you is this: hold the shrimp with your left hand, holding the tail end between your thumb and index finger, and the head end between your ring and pinky finger. That way you can keep a small amount of force on the shrimp and very quickly slide the knife in the right hand along the bottom side, with the blade pointing upward. I actually rest my right hand against my left to steady it. Takes a bit of practice but once you get the hang of it you can do it very quickly. Try it!
It came to me naturally deveining the other side when I noticed it on those packaged bags. I thought I was over doing it by doing both sides until I came across your video, thanks for restoring my confidence on this matter!😊
Thanks Ms. Zeina! I have not deveined shrimp before tonight, and I was wondering about the underside. Thanks to you, tonight I did it right and probably won't be ordering it in a restaurant going forward. Have a great evening!
Wow. Thanks so much for this video. I never noticed this until today and it grossed me out. Then I searched for this answer and you are the only one who had an answer. Thanks so much!!!
Loved this video, glad I came across, I already knew about both as my family has always cleaned them this way, but was nice to see that others do too. Just like u mentioned when I did used to eat out (prior to covid) I always, always checked to make sure they cleaned both veins, and guess what, they did not. Glad I came across your channel I'm a newbie here!
thank you so much for this. even Gordon Ramsays video doesn’t even show how to get out the tummy vein. it drives me nuts so i sit here for hours trying to get them out. i’m not sure why i never thought to use a knife 😭 thank you so much!!!! now i can have my shrimp salad whenever i want bc it’s not going to take me hours
Thanks so much for clearing that up. For the first time , I noticed the inside vein and thought it was a GMO, frankenshrimp. I can not eat the second bag I purchased without concern. I was about to return it.
Omg !!!! This is what I was looking for because I always clean the other side and no one cleans the other side thank you!!! The fact that they sell them calling them cleaned in the supermarket grosses me out!
Thank you so much for this!! I had been cleaning shrimp only taking out veins from one side on top and I discovered the other black vein under and grossed me out now I’m skeptical about eating shrimp at restaurants unless I clean them at home
I’ve been doing this!!! I thought I was the only crazy one. Plus, deveined shrimp usually still has about 1/2 inch of the digestive tract by the tail that wasn’t removed. I remove that bit, as well.
I had always wondered about that second vein because even most cooking shows only mention removing that back vein and not the other. I, like you Zeina have ALWAYS removed the second vein and thank you for the confirmation!
Thank you for being kind enough to educate the masses! I normally clean my own shirmp for this very reason. I clean both the back and underneath. Now I will definitely check in any restaurant I order them. I'm not taking it for granted any more. 👍🥂😁
Yup!! I have always done this. Learned about it when I was a kid. But it isn't a poop or sand vein, just a nerve and blood. Just preference if you want to remove. By the way it is just shrimp not shrimps. Lol just messin with ya. Keep doing what you do
Great video, I thought I was the only person who cleaned the underside vein out of shrimp. I’m so glad I found you. I watched several videos that didn’t mention the 2nd vein. Thanks Dan
So that bottom "vein" is actually a nerve, it is basically the Shrimp version of a spinal cord. It is totally safe to eat, though visually, it can turn people off, so I do remove it, but just because it is in does not mean the shrimp is unclean or not cleaned enough, and "most" of the poo is gone. Here is where you missed something, normally the intestinal track is not removed near the tail. That part where you popped off the shell will most likely contain part of the intestine. This is because people don't generally eat that part, it is part of the handle, and it isn't easy to remove the vein/intestine under that shell. - Diplôme de Cuisine - Cooking & Hospitality Institute of Chicago | B.A.S Culinary Arts - Western Culinary Institute
Ms Zeina, that is not the stomach. We only have one GI tract so if you don’t like the looks of the nervous system by all means remove it but you have convinced so many of your followers that even the best restaurants don’t know how to clean a shrimp. Please do a little reading on the subject and it will make so much sense.
I do both the sides, its exhausting..... People told me that there is only one vein that is needed to b removed... But after watching your video, I'm so relieved😌... Ima show this video to those people now 😂
To people who thought the vein at the bottom of the shrimp is an intestinal tract: NO IT IS NOT. It is blood vessel. It doesn’t make the dish “dirty”. Anyway, yeah I guess people would want to remove it for visual purposes.
This is brilliant! I don’t eat shrimp myself but I made a meal for my family with shrimp and watched videos on how to devein and they were all about the back vein but the shrimp I had all had veins on the inside and I had no idea what was going on. This makes so much sense and is so clear, I can’t believe more people don’t know about it. I’m cooking shrimp tonight for the second time and this time I’m prepared so thanks so much for your help and advice 😊
Thank you for your comment Claire! I love stories like yours and I'm happy that my tips were helpful to you. Maybe one day we will have the chance to cook together. I give online cooking classes, check it out @ zeinaskitchen.com
The ventral deveining is frankly silliness. The ventral nerve cord is virtually never removed anywhere in the world, even in fine restaurants. This is overkill, folks. It isn’t intestines, it isn’t ‘poop’, it isn’t sand, it isn’t blood (i.e. artery/vein), and it isn’t perceptible when eating. It is the nervous system of the shrimp. Simply do the dorsal ‘deveining’ to remove the intestinal tract and be done with it. You’re welcome!
Thank you for your comment. Of course it won’t kill you if you eat it, but for me, it’s dirty and easy to remove so I remove it and I show you how you can remove too. If you don’t mind it, then this video is not for you. Keep eating it and that’s ok. Have a nice day :)
for the people saying they are grossed out by the second vein its fine the second vein is just the blood vein and not like the top one which is its intestinal track (poop track) I felt kinda relieved when I searched it up
@@Zeinascookingchannel yeah blood is kinda gross but meat is literally filled with blood and veins so i figured it wouldnt matter that much cuz i like my steak medium rare idk if im making sense aha sorry
Thank you. Everyone talks about cleaning the back, but nobody addresses the need to clean the inside. I cleaned both sides last night, but noticed some light brown fatty stuff inside the shrimp. Is this normal or just bad shrimp? I never buy farm raised because that's just ultra nasty…so I believe my shrimp were wild. Still not sure what that fatty stuff was on the inside.
I always take that out and was under the assumption the bag was lying about deveining shrimp. I had my doubts considering I think it's illegal to do that, but upon my research I found it was the ventral nerve cord. But it's the stomach? Wouldn't that be connected to the digestive track? Anyway I just got tired of taking it out tbh but I guess I have to keep doing it.
The best way and only way in my opinion is to clean your shrimp when it's raw. Once cooked it becomes difficult and maybe impossible to remove everything. You don't want to be cleaning anything after you cooked it...always before. Thank you for your question.
i still devein under the stomach too but i leave the tails on. they look prettier when serving them with the handles, otherwise they just draw up into a ball.
Thank you for your video. However, I believe you are mistaken. The ventral "vein" is actually the nervous system of the shrimp - NOT the stomach or part of the alimentary canal. It is only the dorsal vein that should be removed. The ventral does not need to be removed. Thanks for sharing!
I appreciate your feed back. You are correct, there is no health reasons why to remove the ventral nerve cord from the shrimp but I find it easy to take off and find it more aesthetically appealing when remove. Do as you please. Try it, you might like it :)
It's actually not the stomach, it's a nerve and completely edible. The stomach is actually in the shrimps head. Had a full blown argument about the with one of buddies and we pulled up the Anatomy and Physiology of a shrimp 😅
@@ImDaFlyOne The nerve has no flavor and pretty much dissolves with heat hot enough to cook the shrimp itself. If you've ever gone to applebees, red lobster or pretty much any food chain, you've eaten the nerve.
I bought a bag of deveined shrimp and was fixing to cook it last night and was disgusted to see a vein and quickly looked up your video. Thanks! Made my dinner a little late but I had clean shrimp!
well i got my shrimps in refrigerator for marination without devein. may be i will start doing it from now but my question is why? is it necessary or harmful?
I agree it's not harmful. But they are not technically veins. "What you're seeing on the top or back of a shrimp is its intestinal tract. The intestinal tract is often dark brown to black." "The taste of veined shrimp may be slightly grittier in texture compared with shrimp that's been deveined. You likely won't fall ill from eating fully cooked shrimp with veins, as any bacteria in them should be destroyed during the cooking process."
@@ms.strawberryavocado1822 Thank you for your comment. It is not harmful but I prefer to remove it because its cleaner. It's worth the extra few minutes. This video shows how.
I always take that out alot people say it's ok to eat, No Way I'm eating that. What I was surprise is that I asked the Butcher and he argue me down that there was no black vein in it. I had to show him and he was shock, like y u didn't know🤔 But it takes so much time I hate cleaning alot shrimp. So sometimes I buy the Medium(no black vein underneath) buy they small so🤷🏽♀️
Once you get used to taking it out, you will get faster at it. It's worth it in my opinion. Even if it's not harmful, I think it looks dirty, that's why I take it off.
the under vein is fine to eat the vein running along the back is the shit sack. the under vein is like blood and soft tissues you sometimes get in steaks
Thank you, so many ppl argue about this!!! I’ve said you got two veins you’ve got to clean them both out, or I won’t eat them, so disgusting and, you can taste the difference between clean and not clean, it’s like an off taste, a very distinct taste that grosses me out.
...I always remove the blood vessel/white vein with my raw, already deveined shrimp, however, they don't at restaurants. As long as the doody/ sand vein is removed, I'm good 👍🏽
I discovered that second vein literally last week when I was cooking. I thought back to all the times I ate shrimp at restaurants and was horrified at the thought of having eaten that second vein. I'm never eating shrimp at a restaurant every again. I'm going to have to learn to make my own shrimp tempura now because I don't trust sushi makers anymore either
For those who suggested it's just two veins, I guess my question is why are some of them undernesth white or silver look to them while others are green almost like the algae from the ocean? I don't mean to create more debate here but I think it is about personal preference. One person responded that she was being ridiculous and just shoving her personal preference on the others well isn't that the purpose of her videos? It's something she prefers to do when cooking shrimp and others may feel the same and if you don't that's fine that's your personal preference let's respect one another here shall we?
Since eating shrimp and becoming a pescatarian! I devein my shrimp on both sides! If it’s not done I will not eat it at restaurants! I found that many places that say they deveined the shrimp (frozen shrimp) are not done properly. My husband loves Popeyes food but, I can’t eat there because the shrimp isn’t deveined.
The vein on the underside of the shrimp doesn't need to be removed. it's a blood vessel. remove if you want but it's not gross as the intestine which is on the outer side; should be removed as it contains waste.
I've known about this second "vein" ever since I started cooking my own shrimp and I am not very bothered by it. It's NOT a poop tract and it's safe to eat. Sometimes I remove it if I have extra time on my hands and sometimes I just keep it. I know it looks yucky, but believe me it is NOT the same as the one on top. Also, am I the ONLY person who makes sure to get the ENTIRE shrimp out including the tip, when removing the tail? Every person I watched on RU-vid peeling shrimp completely missed that end tip, which DOES make a difference in size, in my opinion.
Thank you for your reply! Love reading different thoughts. Of course if it doesn't bother you, you can simply leave it. I am showing how to remove it to the ones who don't like it (like me) :)
That's a very interesting question! For me the answer is simple. Once I see it there, it looks dirty and cannot eat it. It has to come off. I feel like I found a simple and easy way to remove it. :)
@@Zeinascookingchannel because you had the audacity to say, "I dont lose any of my shrimp on the inside. Its completely clean," when in fact you tore off half of the tail, leaving meat inside (although not a large amount). You can clearly see it as you show it to us 😂. You should look a little closer at your own videos...
@@seasquirt22 is it half of the tail or not a large amount? You seem a little angry, not sure why. Please try this way of removing the tip and let me know how it was for you.
@@Zeinascookingchannel I'm not referring to your actual method. Pinching the tip does work but when you demonstrated it, you pulled off half of the tail (which isnt a large amount but far from "completey clean"). Also im not angry 😀
@@seasquirt22 You seriously need glasses because there is not even a tiny piece of shrimp left inside...find a way to zoom in and look inside. ZERO shrimp inside the tail.
@@Zeinascookingchannel This is misleading. What you are taking out from the underside is part of its circulatory and nervous systems. You can take a look at these or any other for your reference. jeb.biologists.org/content/210/12/2192 www.researchgate.net/figure/Schematic-drawing-of-the-circulatory-system-of-P-vannamei_fig9_240635673
The "vein" that runs along the top (dorsal) line is not a vein. It is the hindgut which is the equivalent of an intestine. It runs from the stomach to the anus and carries waste. This is the reason why we remove it. The "vein" which runs along the bottom ventral line is an artery. It does not carry waste and does not need to be removed. Eating the nearly undetectable artery when cooked is no more harmful than eating the rest of the shrimp or cooked blood running through a beef steak. For fifty years I have removed only the poop line like most of the commenters here and have never gotten ill. Thanks for projecting your squeemishness onto others for absolutely your own personal reasons.
Thank you for your comment. I really appreciate it. But for me, it looks like waste and dirty so I prefer to remove it. This video is to show people like me how to remove it simply and easily. Happy New Year!
I take out the poop shoot too, but I'm pretty sure it's going to be safe to eat either way if its cooked to safe temp. I'll even go as far as to say I'd bet if blindfolded nobody could taste the difference one vein or two removed.
The bottom one is actually part of their nervous system. It's just a nerve which allows them to move their whole body and curl up. you will notice when you cut it out they kind of open up more and look less curled. It's ok to eat and If you leave it intact you will retain more of the micronutrients in shrimp such as selenium and zinc. I usually end up removing it though out of habit.
@@dafrasier1 Thank you for your comment. It's ok Dave, no need to get upset and insulting. Call it what yo want, but for me, once I see something that looks dirty and slimy in my food, I prefer to take it out. On this video I show people that are like me, how to remove it. It's that simple. Happy New Year!
Theres sooooo many butthurt people in the comments saying how, "you dont need to take out that vein, its safe to eat" ya bull tesitcles and balut is safe to eat too but i dont wanna eat nasty $#*+ if i dont have to lol
RAZ0RGAM1NG From the comments here, you would be the butthurt one. If certain looks, smells, textures, tastes gross you out, then by all means steer clear. Its called personal tastes. I eat store bought meat and I wash it, others never wash it, seemingly none the worse. By the way, that fresh produce you buy is often picked and packed in the field, no washing, no nothing. So there is a chance your salad has a little bird crap and coyote pee residue. Add to that the open containers through out shipping, varmint heaven. Most likely the reason that salmonella in store bought vegetables shows up on occasion. Bon Appetite.
it's the ventral nerve. If you think nerves are yucky then good lucking getting them all out - animals have an entire nervous system. I think you've just become vegetarian!
It is not the stomach. It is not part of the digestive tract. Please stop spreading misinformation. It's a blood vessel. It's part of the circulatory system. Anybody can Google the anatomy of a shrimp and see this. The stomach is removed when they cut off the head and other organs. The line on the bottom is the main blood vessel. It leads to smaller blood vessels that you cannot see. All of the meat we eat has blood vessels. I like to remove the bottom vein so it is aesthetically pleasing. But if you're going to make a RU-vid video and educate us then please get your facts straight.
Thank you for your knowledge. By all means anywho doesn’t mind can eat. I never said it was day or harmful. I am simply showing people how easy it is to remove if you choose to. I am not hear teaching about the anatomy of a shrimp.
This lady is only removing the vein because it LOOKS dirty, NOT because it’s necessary. It’s perfectly safe to eat shrimp veins! I personally can’t stand chicken veins so I prefer boneless meat lol!
