How to Differentiate Roasted Beans (Natural, Honey, Full Washed, Wet Hulled) - Expat. Roasters
In this video we will show how different coffee processing methods can result in distinct characteristics in the look, smell, and taste of the final product.
Coffees processed using the wash processing method tend to have a clean, bright taste with high acidity. The beans will usually be a uniform colour and have a smooth, even surface. They may have a fruity or floral aroma.
While coffees processed using natural processing tend to have a heavier body with lower acidity. The beans will usually be in a range of colours from light to dark and may have a rough, uneven surface. They may have a fruity or fermented aroma.
Honey processing coffee resulting the beans will have a unique sweetness and complexity than the other two processing methods. They may have a fruity aroma, but you'll also find honey sweetness or a chocolate note. Also, the coffee processed through wet-hulled may have a mix of fruity and chocolaty aromas.
Through cupping the coffee, the method of evaluation of coffee can give you a clear idea of the characteristics of a coffee, as it allows you to evaluate the coffee in a controlled environment and pay attention to the features like aroma, acidity, sweetness, aftertaste and body.

Hello, very nice content. Please, would you help me understand why fully washed coffees keep some silver skin in the middle of the bean, while natural don’t have it? 1:27

Just guesstimating but I would think it is because during the process of fermenting for the natural and honey processed coffees, the skin is weakened and later removed during the cleaning process. Where as with a washed coffee, they wash all the fruit from the bean and the skin is not yet weakened by sitting around fermenting and so is not removed entirely during cleaning. Just a guess.
