Wine clean hone ke bad agar aap fir se usmein sugar add karenge to fir se fermentation shuru ho jayegi aur wine clean nahin rahegi, agar wine ko aap meetha rakhna chahte Hain yani ki bad mein sugar add karna chahte hain to uske liye aapko pahle wine ko pasteurization process gujarna hoga uske bad aap sugar add kar sakte hain.

Sir I have kept a wine for fermentation and this is 4th day , I have used ceramic jar and added 3 liter grape pulp with 4 liter water and good amount of yeast , I can see the fermentation is going good , sugar 1.5kg , I closed the jar with a cloth and I am opening the jar once every day and stirring it with a wooden spoon and also tried some tasting the wine is sweet , am I doing it properly ?? Plz correct me if I’m wrong
Do not taste the wine in between the process before it gets clean. And remove the cloth and use cling film or any type of airlock otherwise you will get vinegar in the place of wine.

Himachal mein gur or chawal ki authentic banate hain and Spiti mein Arag bolte hain or Kinnaur mein kafi naam hain.. Due to Government Laws this art form is dying.. It is the best alcohol, cheap and healthy for usspecialy during winters in snow.. I hoped to learn the art form but havent taken out the time.. My request to you is to make Ruksi as called in nepal made of rice.. A step by atep procedure with quantity, measurements, time, etx would be appreciated. Lastly if youbtravel in the mountains dontrybthese local alcohols if you have not. Regards..
Sir I have tested the ph of the grape must after adding sugar and water but before adding yeast , the PH is showing the 2.5 , what should I do to increase the ph , can I add yeast or not

15 litre wine ya beer banana sakte ho takriban sabhi states main ( Delhi mai 18 ltr) dry states main nahi bana sakte fir bhi log Ghar main chup chap bana lete hain. Commercial use k leye galti se bhi matt banana. Sale nahi krna dikkat ho sakti hain legally.

Kai sari video mai iss bare main bata chuka hoon, potassium metabisulfite fermenter or sabhi equipments ko sterilize yaani कीटाणु रहित करने के काम आता हैं। फलों पर या पानी में जो भी एरिया बैक्टीरिया होते हैं उन्हें खतम करता हैं metabisulfite
You can, but in which container will you filter all the wine and where will you keep it. It would be better to take another 20 liter jar for secondary fermentation.

No Sir. That will ruin the wine. Your wine is sweet after primary fermentation because:- you had used a yeast with lower ATL. ( Alcohol Tolerance Limit) or you have used too much sugar in the initial fermentation. For your info :- normal baking yeast available in our market has an ATL of 9%. A wine grade yeast has an ATL of 21%.
