Should I choose to use a different chocolate how would I determine if Paramount Crystals are appropriate? PLEASE educate my ignorance, lol!

Hi Roxanna, in this video we're using merckens chocolate melts. If you're using a lorann oil that is labeled "flavor" you'll most likely need paramount crystals as the flavoring will thicken the chocolate. If the Lorann oil is labeled as "natural" you probably won't need to add the paramount crystals. However, I always recommend having paramount crystals on hand when working with candy melts, sometimes you'll get a batch that melts thick and the paramount crystals help thin the melts back down.

Question! Instead of paramount crystals can you use vegetable shortening?

Yes you can! I recommend the paramount crystals because they're the same fat that's used in the chocolate melts. They're in a more solid form than vegetable shortening, so they run less of a risk of making your chocolate too soft. They also won't change the mouth feel or flavor of the chocolate melts. However, using vegetable shortening in a pinch will work just fine. I'd start with a 1/4 teaspoon to a pound of chocolate and add a little more if needed.

What about peppermint emulsion?

I would suggest using the Peppermint LorAnn flavoring oil in chocolate instead. Peppermint emulsion works well for truffle and candy fillings, cake batters, frostings, etc. But it won't work well in chocolate as it will cause the chocolate to seize.
