Today for lunch I made egg salad and wanted a sandwich but I didn’t have any slices of bread. I did have an English muffin in the freezer. I thawed it split it and had open face sandwiches. The different texture of the muffin really added to the meal. I served them with dill pickles adding an apple for desert. For supper I am having left over green beans (free from a friends garden) and mushroom soup casserole with frozen fish fillets and sliced tomatoes. Nothing goes to waste in my kitchen. I am a retired widow living debt and mortgage free on a small pension.

I've did really well this summer by not eating fast food/take out. It has saved me so much money. Now that school is back in I am taking lunch daily and that is nice. My NEXT challenge is to move further away from processed foods. Step one...no more meals that start in a box. :) I started my grocery list earlier and I am excited for this next step. I will save even more money AND will eat healthier. I have found success so far, because I am taking things one step at a time. :) Have a great week!

Hi from TN. When ever I cook meat. I drain the juice to freeze. I use the fat that comes to the top of the container to cook with. Chicken fat: soup, sauces, eggs Beef: gravies, sauces, soups Bacon & sausages: almost anything. When I need a fat or oil to saute onions, peppers, celery, ect. I just use the fat that will complement the dish. Thank you so much for all of your tips. God Bless, Rhonda 💚👩🏼‍🌾💚 God Bless

Great haul! I like that you support family owned stores, veggie stands, etc. Salad and soups pretty much cover my zero food waste meals. I made carrot salad yesterday. One thing I started doing a few years ago was to put my fruits on the top shelf in my refrigerator and in the fruit crisper I put cheese, lunch meat, bacon and things like that. That way the fruit never gets forgotten (or hidden) in the drawer and goes to waste. 😊

I’ve been using up whatever fruit needs to be eaten soon by making fruit crumble. I make the crumble topping using my grandmother’s formula: twice as much flour as sugar and butter. So if you want to use 1/2 cup of flour, use 1/4 cup each of sugar and butter. It’s customizable 😊. I just rub the ingredients with my fingers until it forms into crumbles. Then use it to top the fruit and bake. Time depends on the amount, but generally about 45 minutes at 350’

My veggie and fruit drawers are empty. We have been making salads, wraps and crockpot meals using every single fresh ingredient and working our way through the pantry and freezer stock. We needed to buy a wheelchair accessible van. We found a good used 2010 but we had to take out a loan to get it. We don’t normally pay any interest on anything but this was no longer an option. Thank you Emmy and Paul! To answer your question, I have been loving my zero food waste journey and doing things like egg shells to be ground for my plants, veggie scraps I keep in a bag in the freezer to make stock with each week, and last week I made stuffed green peppers (they were on sale for 99 cents a pound) and I only needed a little bit of the tomato paste, so I portioned the rest of the can into plastic wrap portions to put in the freezer for later use. Back in the day I would've tossed what I didn't need! When my bag of carrots are almost done, I have been pickling them as well which has been a nice treat.

I look for lemons on sale because they have gotten very expensive, but we love the taste of fresh lemon. If I find a bag of lemons on sale for a good price, I'll use 1-2 fresh but will freeze the juice from the rest in small ice cube trays, and I freeze the zest as well. Then when I need lemon juice and zest for a recipe, I can use my stash in the freezer. I do the same for limes. My husband will take a cube out once in a while for his unsweet tea. I also freeze pesto in the ice cube trays as well -- I make it from my fresh basil in my container garden and take out 1-2 cubes for recipes all winter. It is great when added to the Italian Vegetable Soup and a great way to get the taste of pesto in the winter -- with no preservatives! Finally, I save the clean odds and ends of vegetables (organic) like odd-shaped ends of carrots, celery, onions, tomatoes, etc. and freeze them to make my own vegetable broth (with filtered water) when I have a full bag. Makes a good base for soup.

One visit, they took me along on a senior bus tour that took us to Lancaster, PA. I had a blast! I was bowled over by the beautiful canned produce offered in the shops - stack and stacks - row after row. Shopping in Intercourse, PA is a fun experience, with one unique shop after another: unusual gifts, handmade crafts, Amish quilts, furniture, foods, & more. I'm so glad I had that experience. I’ve been diligently working towards zero food waste, which can be a challenge as a single ( so many leftovers!). I had leftover pulled pork from tacos. Not enough to freeze and I was tired of tacos. This morning I added it to the crockpot with a can of diced tomatoes, and 3 different kinds of canned beans, and the usual spices. I served it in a bowl with leftover “Spanish rice”, grated cheese, a dollop of sour cream, and some salad topping tortilla strips I unearthed in the pantry. The leftovers will be easy to freeze in one cup increments for those times I don’t feel like cooking. I’m also freezing the leftover rice to use in a chicken and rice casserole next week. Oh, and I’ve got two jars of sweet pickle juice I’m trying to figure out what to do with….maybe a marinade, or to make a salad dressing. I’m wondering if I can freeze it in ice cube trays for later use…

Zero food waste... We don't use our automatic ice maker...if you have ever had water pouring out the front of your refrigerator because a part broke then you will know why we don't use those features...anyway..there is a nice drawer that comes with the ice maker in the freezer and I line it with parchment paper and freeze little portions of berries, bananas, any fruit that we didn't finish and would otherwise go bad ... once frozen I just store the fruit in a gallon size Ziploc bag and can use it for a tasty fruit cocktail, add it to muffins, or simply snack on it while watching my favorite TV program.. thank you for keeping us motivated...many blessings to you all

Good as a soup or over rice, which I did with the little bit left. I am learning more than ever (at age 63) that if you have good ingredients, almost any combination is yummy. We have leftovers and the only thing we bought was the brown rice to cook. That's about 25 cents per meal and oh, so good!

Please do a video showing how to store vegetables. When I get home, I put the vegetables I bought at the market in thier plastic bags and most of them rot within a week. I don't mean how to freeze them but how to store them in the fridge for use within a week. Lettuce always turn orange, green beans go limp, tomatoes shrivel up, etc etc. Thank you in advance. Lisa in San Diego ❤ love your channel & of course, sweet dixie.

Take everything out of the plastic bags. Use your crisper drawer, it works. I would clean the beans right away and put into a clean baggie. Put tomatoes on the windowsill to remind you to use them. Keep them out of the fridge until you slice them. For lettuce, i clean it and put it into a cloth bag in the crisper drawer. That’s IF it’s head lettuce. For leaf lettuce, i put it apart, wash it, pat dry and use a large(ish) plastic container to store in. I put a layer of paper towel on the bottom and top of the lettuce to help absorb some of the moisture but still keep it crisp. I’m sure there are other methods but this is what i do.

I was feeling ambitious last week when I planned on making chicken piccata, orzo and green beans tonight. However, tonight I was feeling a little (ok a lot) less ambitious so I made a chicken and green beans stir fry over rice instead, using up a few green onions that had seen better days. The other ingredients for the chicken piccata will keep a little longer.

Have you and Paul ever grown potatoes. I have grown them on a small scale in bins just off my patio. They are easy. I buy two seed potatoes from a local Ag. Center. I harvested about 5 lbs. from two seed potatoes. Maybe Paul can research this and maybe it would be something for you folks to try. I enjoy growing them, if anything at all, it is fun. I keep forgetting to tell you thank you for a couple past recipes. The first one is the homemade hamburger helper recipe. Omg I love this, and I usually don’t like casserole type things, and I hate hamburger helper, but my Dh and i both really like that recipe. I make it once or twice a month. The other one is the sweet and spicy wings. First we used wings and both them so much that we tried thighs and legs. They were fabulous, and are now in my regular rotation. So thanks again for two of our new favorite meals! It’s rare that Dh and I both like the same things, but we did with these.

Yum! Your vegetable soup looks so delicious! One thing I did this week to use up some miscellaneous bits of food was to take some cooked and chopped chicken meat, added some diced cucumber, diced celery, diced tomato, and mixed it all together with a couple big spoonfuls of French onion dip. Then spread the mixture out on a couple big tortillas, rolled them up and cut in half. Sort of like a chicken salad wrap. Please don’t ask me the measurements, cuz I have no clue, I was just throwing stuff in there, 🤣. Was quite tasty!!!
