# How to Make “Pentol Corah” | Indonesian Tapioca Chewy Balls in Spicy Sauce
This video tutorial comes to fulfill our beloved THV Fans requests.
Introducing the one and only Madiun “Pentol Corah”.
Well, at first glance it looks so similar to Cilok.
But its trademark is on its sauce, the sauce is super-duper Spicy.
If it is not spicy, then it’s couldn’t be called as Pentol Corah.
It is also commonly served along with Kentucky Fried Chicken and also Dumplings.
The presentation can be as simple as just by steaming it, but there is also the fried or roasted version, then flushed with extra spicy chili sauce.
But in this tutorial, I prefer to practice the steamed version.
It’s also the economical version, which is without using eggs or meat in the batter.
Then to get a tasty and savory Pentol, I add some Dried Ebi.
But for those of you who don't like Ebi, you may just skip it up.
For the chili sauce, I found that almost all of its chili sauce versions are using a lot of chili peppers, even some have a peppery sensation too.
So, its sauce commonly made by grinding chili and garlic then mixing it with ready-to-use chili and tomatoes sauce.
It’s a lot of chili, in essence.
Ingredients
The Main Ingredients
* 20 pieces of Fried tofu.
* 300 grams or about 20 tablespoons of Wheat flour.
* 300 grams or about 20 tablespoons of Tapioca flour.
* 2 stalks of Celery and 2 stalks of Scallions, finely chopped, optional.
* 1 teaspoon of garlic powder, you may replace it by grinding 5 cloves of fresh garlic.
* 3 teaspoons of Broth powder.
* 1 teaspoon Fine salt.
* 10 grams or about 1 tablespoon Dried Ebi, mashed, optional.
* Room temperature water - as required, around 450-500 ml, the batter tends to be as soft as ‘Bakwan’ dough.
* 1 teaspoon of Pepper powder, optional.
Ingredients for The Sauce á la THV
* 75 grams or about 5 tablespoons of Sugar.
* 300 ml or about 1½ cup of water.
* 200 grams of Tomato Sauce (you may add some chili sauce too, according to taste).
* 1 to 2 pieces of Kaffir lime leaf, finely chopped.
* ½ teaspoon of Salt
* ½ teaspoon Broth powder
Ingredients for Ground Spices
* 20 to 50 pieces of cayenne pepper, suit your taste.
* 1 to 2 cloves of garlic.
* 1 tablespoon of Cornstarch, dissolved in 50 ml of water.
* 1 tsp Vinegar, optional.
