@@ThePizzaGuyJon the trick is to push the dial in at the max setting and slowly turn the dial towards the off position, this will allow it to go into the "ultra-low" setting.
will try this in the karu 16 with a mixture of charcoal and wood i might need to put some sauce on top of the calzone to prevent it from burning though the flames in the karu 16 are pretty big when using wood and i cant turn them down of course 😁
Try, getting the oven hot enough. Launching it in and turning the oven off until it’s cooked. Then turn the oven back on to low to make sure it cooks well. Hope that helps.
I'm going to try making calzones with my Ooni next week, and I have been debating whether or not I should try the method of cutting a few slits on the top to allow steam to escape during the cooking process? Have you tried that, and if so, did that make any difference or does that just cause for a deflated looking calzone?
Honestly it all depends. When I worked at a pizzeria we never would cut the slits and the calzone would rise just fine. Play around and see what works for you. I honestly think its for looks.
