Hey Quang, love your work. I wanted to ask something. Whenever im cooking fried chicken, the chicken gets dark brown very quickly. I marinate it in a buttermilk bath for 24 hours and then coat seasoned flour. which is normally flour, little bit of cornflour, salt, pepper, oregano, basil and few other spices like Cayenne pepper. Problem I face is the that if i cook on medium high, the coating gets brown really quickly and chicken is undercook and if i cook it on low heat, the chicken cooks through but the coating isnt crispy. Can you please help?
Hey Stephi! I would love to do this one day. It is going be more hard to do this because I'm not licensed and I do not have a permit or permission from the City to do so. I may have a chance by teaming up with a organization but I will look more into this
