I’ve tried sourdough with with just white bread flour and I was not successful at all, but after watching you using rye grain and grinding it yourself, you’ve given me the courage to try it your way. I’d love to know where you get your aprons from. I’m just in love with the one you are wearing in this video with the beautiful birds on it. I am so happy to have found your RU-vid videos, I’ve been binge watching them for days now. Thank you so much.

I love how calm and thorough you are in all your videos. I have never saw a better cooking teacher in my 41 years. My grandmother always expected me to catch on by "eyeballing"..and wouldn't give me the opportunity to write down recipes that meant so much to me to learn and pass on to my children. I don't feel stressed, or as if I'm missing 1 thing when I'm watching your videos! Thank you for being so thoughtful to all of us who are intimidated or just learning new things.😍

Mary, I tried this starter recipe and by day 3 I thought, hmmm not sure about this one but I persisted and by day 5 it was more than doubling and passed the float test - I’m sorry I ever doubted you! I made my first bread today and it was incredible! I have named my starter ‘Mary’ (hope you don’t mind) as this is the only starter that has ever worked for me. Thank you! Much love, Linda.

My husband loves sour dough rye loaves and I have tried 3 times to make a starter using other instructions that make a huge batch, has to be fed weighed flour daily etc. They failed spectacularly. Love the clarity of your videos. Simple, engaging, well presented and off to do try 4 after I get some quality organic rye flour . Thanks God Bless

I was looking for 3 things: being able to grind whole grain berries in my Vitamix, a user friendly rye sourdough starter tutorial that doesn’t weigh the ingredients & a fool proof method guaranteed to work! 😍 Thank you so much for explaining everything in detail & for being so pleasant! Day 1, 6/10/22 & I even have the same Pyrex bowls as you! I can hardly wait to try your sourdough bread recipes! ❤️

Mary I just cannot get sourdough to start like this! I have tried it so many times. So in the end I used kefir and flour - and wow, that worked!! In 12 hours it was climbing out of the bowl. So I have made a few delicious loaves now, and I'm still going!

I am so excited to hear this!! Are you familiar with Cultures for Health? They say that getting a starter going is a real experiment in discovering what works best in your kitchen. It may be flour and water, it may be flour and yogurt...or as in your case...Kefir, or it may be using fruit or fruit juice...on and on and on. I am so happy that you found what works for you! Thank you SO much for sharing this!! 🤗❤️🤗

Since i'm new to making it I experimented using All Purpose flour, Barley flour, and Organic Red Wheat flour. AP Flour took about 7 days to get bubbly and rise (and it's not unbleached) at this point I was like "am I doing this right?", the Red wheat flour didn't rise as high but it only took about 4 days to get it to rise and get bubbly. (I mark the container I use so I know when the starter has doubled). For a few weeks I fed them every day and used my discard to make crackers and pancakes. Now I keep them in the fridge and bring them out to rest on the counter a few hours, then I feed them, wait for the rise, the float, then on to baking. I love the Red Wheat flavor in the bread. I use bread flour or even AP to bake the bread, but I use the Red Wheat starter. Just took a loaf out of the over a few minutes ago and it looks lovely, can't wait to cut into it later today.

Another great video of traditional and healthy foods. Thanks. I am very interested in this bread because I have an allergy to milk (not just a lactose intolerance) and besides tortillas and lefsa (traditional flat bread from potatoes) bread doughs contain milk, so this is working out for me and my leaky gut syndrome as well. A friend just gave me a starter that has been in the family for 125 years! So light and fine, almost a bit sweet, unlike any I've ever had. Great to know how to make this homemade from scratch.

You should see some of the messes I've made in the kitchen making doughs, pasta, noodles and such. Have to use a shop vac and a leaf blower for clean up. I'll give it a try, it's the mad scientist in me, but I'll probably end up sweet talking my friend and his wife to make a few extra for me as she makes a big batch of biscuits every week for their church functions and they feed the needy from the street or anyone who shows up hungry. Your video is excellent also because you show how to make a starter from scratch. Thanks again.

Would you please do a video on how to make a “honey sourdough cornbread” baked in a bundt pan (a cakey Northern kind)? If anyone could come up with a recipe, it would be you. Please? I’m also ready for recipes from you on how to make Chili (with beans) and chili powder seasoning from spices on hand. The only recipes I found for chili powder were adding fresh ground peppers, or adding actual chili powder to the chili powder seasoning. 😂 I’m so ready for some yummy chili and cornbread (a northern cakey kind). I really enjoy your videos and your stories. Thank you so much! I saw that you like to garden. I grew Halona cantaloupes last summer (from Territorial Seed Company). OMG they are the best flavored, sweetest and such a delightful fragrance. Best wishes for the happy holidays and a great 2023!

@@MarysNest 🥰Yes the throwaway sourdough! Nice sweetness w/ a 1/2 Cup sugar to 1 cup corn meal fine grind, & 1 c flour (that's what is in my favorite cornbread recipe) so not sure how it would calculate with sour dough instead. Thank you!

Very nice video! I like how you went step by step so that I can learn the process of making the starter. Now I won't have too many doubts in my mind how to do this. My brother who lives a long way away makes beautiful sour dough eye bread and I also want to try it. So thanks for sharing your knowledge.

I found King Arthur Organic medium rye flour locally for $10, which I thought was awfully high, but it sure worked! Blew the lid off my jar on day three!

I attempted the rye sourdough starter after 5 days not one bubble. I followed the instructions to the letter, trashed it and now starting a new one. The flour I’m using is from the rye berries I just received and I ground them into a flour, I hope my flour is good! I’ve made sourdough started before with all purpose flour and I was successful with it.

Glad I'm watching this. I just got my flour mill and I did buy some Rye grain and some Hard Red Wheat berries, so am excited to use it. I don't really like Sourdough bread, but my husband likes it and I know its better for you than other breads due to probiotics as I've learned from you. So I'm wiling to learn to make it and I may even grow to like it myself. Question...After you mill your rye and in this video you don't use it all, do you keep your rye flour in the fridge. freezer, pantry? Thank you

Hello Mary, I love your videos! I always find the recipes really lovely and helpful! I was curious about gluten free starter for sourdough, what are your thoughts on how to approach that? I am currently purchasing GF breads at a local bakery, and would like to make bread for my family at home to be more sustainable :) I appreciate any insight you might have! :)

I grind my grains in my Blendtec. Takes about 55 seconds to make fine flours from 3 cups of grain.

Thank you very much you got me making sourdough bread with your very clear and simple recipe. I love the wholemeal flour/ rye flour bread I make with this starter. I hope it is OK, but I add half tea spoon of baking soda to reduce the sour taste. I also bake it at lower heat. I don't like the hard crust. I love your style thanks alot

@Mary'sNest Hello, I don't know if this has been answered yet or not, but I'm wondering what to do with the small bowl of the rye flour once I've made the sponge starter. Thank you. I have never ever made bread before of any kind. Do I keep it in the fridge, Do I keep it for just a short time, or a long time? If I make this sourdough bread weekly, do I have to constantly make the rye flour starter in the small bowl?

Do we continue to feed the rye starter that we use for the rye “sponge”? Or do we use it all up and then start a new one with the 4 1/2 day process?

Just watched your video. Always thought it had more of a process to it. From your description it's more about time. My question is if I want to grind up the grain myself, would a Ninjablender be okay, or would it be too fast for it. Thanks for the awesome videos William

I’m going to attempt to make a amaranth flour sourdough starter and try and make some bread with it. Since amaranth is a gluten free grain. Do you think it will work?

Hi Mary, really liked your video and thank you for sharing this recipe. I will try it but have a question. I've tried unsuccessfully 3 times to make a starter - not with your directions - with others that are much more complicated. But none have worked and i think it's temperature. Seems i have a very cold house and no place in my house gets to 70°. Do you have any tips for cold weather starter or should i just wait for July?

Hi Lonn, I understand completely. When it’s cold, it can be difficult to get a sourdough starter going. You could wait until the weather is warmer however if things get too warm, then the good bacteria takes a stronger hold than the yeast and that can make for a very sour smelling starter. What I might recommend is to put the vessel you’re using - to get your sourdough starter going - on it on a dish towel so that it’s not sitting on a cold counter...and then I would put another dish towel on top. This might help make it a little cozy but not so warm so that the good bacteria takes doesn’t get to strong a foothold. Does that make sense? Also, I would try doing this in tablespoon measures so as to not use too much flour. Keep me posted and let me know how it goes. Do you enjoy making other traditional foods? My daughter has celiac disease and when I have made her bread I use Redmill's GF Flour. Do you think I could do the same, or do you know of a different way? Thank You!

Mary this video is from over a year ago, and you may have already found it, but I would like to share with you a great find, it is einkorn flour, which has Never been altered by men, it's just the way God designed it. #Jovial brand grows theirs in a valley in Italy, and the soil has no pesticides in it and it is very pure and rich. Carla also has great videos step by step, on how to work with it. I hope you try it because I did and it is the best tasting flour I have ever tasted and it does not bother my tummy at all. :)

Hi Mary, just a question... I have tried making a starter for the last month, but setting it on the counter, it goes stinky and bad within 24 hours... I live in South Africa, hot weather, should I rather put it in the fridge, will it still work?

So I just made this starter, it bubbled up as it should have however it smelled less sweet and more like alcohol(there was no separation) I'm not sure if that should still be fine. Thank you.

Hello Mary, I was wondering how many hours does the starter need to stay on counter between day 1 and 2. 24 hours? I was able to find Bob’s Red Mill rye flour at Kroger’s 👍🏼

Hi Aura, So glad to hear that you are giving this a try!! After day 1, you will let your starter sit the whole day through day 2 and do nothing. So if you make your starter at 8am on Monday, come 8am on Tuesday you will do nothing. It isn't until day 3 at 8am that you will proceed. So your starter is basically sitting undisturbed for 48 hours. Does that make sense? So glad you found the rye flour! You can eventually transition it to all-purpose flour and I have a video where I discuss how to do that. Just search for "how to transition a sourdough starter..." on my channel. Many of you listeners are from Texas. This is a great idea in ANY state...Tennessee and others are doing this, also. On May 2, a Texas House committee passed a bill to create 100% reserve gold and silver-backed transactional currencies. mine did not work. At day 7 and it has a few bubbles but is not foamy. I may try again. I am also trying with regular unbleached flour,just started that but apparently that will take 4 to 6 weeks.

I followed your instructions & I now have a no discard sourdough rye starter! 😍 It took me 4 1/2 days to see lots of tiny bubbles, but I did a 5th day, just to be on the safe side. Now, I’ll prepare my sponge! Then I’ll follow your no knead bread recipe! Thank you so much! ♥️

Rye flour and pineapple juice works 100% every time.. look it up! there are some videos on it already but it has to do with the acidic pH environment and the cultures found in rye flour that seem to make the most 'efficient' starters

The starter my aunt gave me is made with instant potato flakes and beer. Feed it once a week with water, potato flakes, sugar. I use it to make sour dough bread with bread flour.

Thank you for your kitchen wisdom, very grateful in finding your web site. I have a few questions to ask you. 1: do you ever change your starter to a clean bowl? I notice the dish gets crusty, but I am worried of throwing off the balance of the bacteria and the yeast. 2: I have chosen to begin with a whole wheat starter. By day 4 it was foamy and sticky and I took one cup out and replace it with a half of a cup of whole wheat and the same with my well water. In the meantime I made some beautiful blue berry muffins; which my family loves. But it isn’t as foamy or sticky after I feed it. This is the second day after the muffins, and I kept feeding the starter a half a cup of water and flour. Should I add more flour with equal amounts of water? Or, should I have replace it with whole cup of flour and water? Looking forward to your reply, Sheila

Hello Mary, this is Debbie, Bob's better half 😀. I am on my second starter. My first one failed because the flour was old. (I didn't look at the expiration date as it was just purchased.) Got fresh flour. It's really cold here and my starter just wasn't working well. On day 5 I fed the starter and turned on my oven light. Wow what a difference. Made the sponge and popped it back into the warm oven. Woke up to success! It's taken 7 days and I didn't give up. Thank you for "holding my hand"

All grocery store branded products are manufactured by the major brand name manufacturers. Trust me, HEB, Publix, Whole Foods, Krogers, Von’s, Ralph’s, Safeway, etc., etc., so not mill their own flours…

Yay! I am finally ready to graduate to the next video for the next step!! I have watched this video or parts of it at least a dozen times as I have prepared my first starter and about to make my first loaf of sourdough bread! I already successfully made the No Knead Sandwich Bread which I was so incredibly proud of, & at the end of the that video Mary said it is time for this one. Am I the only one that had a very dry starter? 5 T of flour and only 4 T of water didn't look like yours. I'm adding several more Tbsps of water---I hope that's OK.

They def do not make anything to last anymore. I have a 20 yr old washer!!! I have a new pretty fridge in my kitchen but my best fridge in my garage is about 15 years old and still works great.

Cute apron! haha! I have not made sourdough or a starter in years but plan to get one going again soon. This time I am going to use home milled spelt flour. It is amazing how easy it really is to make your own starter and fun to watch it really come alive. Oh Heidi, This was so funny to see your comment pop up! I am doing my usual routine of watching your videos as I enjoy my Saturday morning coffee. My one day where I can catch my breath and relax a bit and catch-up with you - my sweet friend!! I just love spelt!! I use it all the time for generally baking - quick breads, cookies, etc. And I just made two loaves with 100% spelt (I usually mix t with other flours) and my sourdough starter and filmed them. I can’t tell you in words Mary but so happy and grateful I found you! Your recipes and videos are very helpful and easy to understand. After months thinking how I will do sourdough bread and all the confusion in other videos scales and a bunch of stuff too much for a busy mom like m until I found you. After this recipe I began my starter and after 5 days uffff I made my bread and I wish I can put pictures of. It was beautiful and delicious. It sounds like it’s ready to bake with. However, to increase it’s reliability I would feed it a few more times before baking with it. ❤️🤗❤️

I’m on day 6 of making the starter with whole wheat flour. It is not bubbling yet. I’m feeding it every 12 hours. It smells awful, like smelly shoe. I don’t see any mold or fuzzy matter in it. Should I be concerned?

Hi Linda, don’t worry… You are doing a good job. What has happened is the good bacteria has taken a stronger foothold then your yeast. That will create a very sour… Acetone odor… Like nail polish remover. Is that what it smells like? What I would recommend, is feeding your starter every eight hours. And for the first day or two I would put it in the refrigerator as you continue to feed it every eight hours. Yeast and bacteria do like warmer temperatures but yeast can withstand when it’s a bit cooler versus bacteria which does not withstand the cold as well. So if you put your starter in the fridge for a few days (but be sure to remember to feed it every 8 hours), this will give the yeast a chance to take a foothold over the good bacteria.
