It's often debated who actually invented the Mai Tai. Most believe it was by Trader Vic in his Oakland Bar back in 1944. However Don the Beachcomber claims he invented it 10 years earlier. Both versions differ quite a bit but are equally good! In this episode we're making Mai Tais. There are many different variations. In Tahitian, Mai Tai means "Good" so make it however you'd like! Make it out of this world!

I must say Bruce Ive watched your video multiple times and it just gets better!!! I honestly have watched a hundred or more other videos on the Mai Tai and yours is the best by far!!! Well it goes without saying you have been in the business for 40 years right so you know what your talking about!!! Your sense of humour is great and i love the bit about your fathers tie too bless his soul he must have been a great man!!! Thanks again for your awesome cocktail channel it makes my night!!!

I get that. And we usually do post the recipe. This was an old episode and not all the recipes were posted back in the first season. I’ll need to go back and put a number of them in the description. But as for “to the point videos” that’s not always the point of Bar Talk and Cocktails. There are a tonne of 1min mai tai recipe videos out there and are all pretty much the same. We’re more of a show. Thanks for taking the time though for checking it out.

Omg, lol, and other 3 letter acronyms. That was fantastic and is everything I'd expect from a tenured bartender, the story, entertainment of it, amusing, silly, entertaining, and a mai tai. Definite subscribe and like from me.

Brilliant as always, love the stories. Kinda like going to a quiet bar with a good bartender and talking with the bar keep. My introduction to this drink was something completely different. Bar tender told me " Kinda like a Japanese Long Island Ice Tea, a bunch of booze and a bit of fruit juice. If your having more than 1 I'll call you a cab." Anyway drink was much different, tasted like fruit punch and as you may guess I don't remember much more. Any way years later I get the real deal. Thanks for the video and all the other great ones you put out. Cheers!

I believe that the reason why you don't have many views, is because your videos last too long, and that was the reason why I avoided you for so long. I'm not a bartender, but I love to learn about new drinks, and to tell you the truth I've found many good barmans on the internet. But a couple of days ago I was looking for a good tutorial about the Blue Hawaii and didn't really like the ones I found... they were not very detailed. But when I saw yours, I fell in love: You are funnier than the others, explain everything in detail, explain the history of the cocktail (which most of the barmans don't do, and I always have to look up). You are just great, and watching your videos are worth the time. This is even longer than the Blue Hawaii's one, but I'll watch it with all the pleasure. Please, keep the good work, and thanks for sharing!

Ya we know they can run a bit long but the purpose of my channel is to be more of a weekly show as opposed to a 2 min tutorial- there’s a lot of those out there. There’s so much history that people don’t know about and I’ve been doing this for so long that I thought I would pass it on. I am curious to know why you squeeze the limes that way? - slicing both ends off , then in half and then juicing flesh side up in the juicer. I have always sliced in half and then placed skin side up in the juicer.

Hi Oliver thanks for writing in. I slice both ends off because it’s a habit I picked up along the way from having to cut so many lemon and lime wedges everyday for what seems like an eternity now. Ha. I always flip them after squeezing because it gets more juice out. Old habits die hard. Cheers!

I have a professional question. Is there a difference in training 40 years ago and now? I ask because I notice that you pour but other bartenders measure. Is it still a choice?

It was different 40 years ago. Back then, the bars I worked weren't as concerned about their bottom line. It was more like a way of life and about having fun. If you made money along the way, that was a good thing. Ha... Today, it's all about the money. It's still a choice in the bar to free pour depending on where you work. Some places require you to measure all your shots and some places don't. I get away with it because I'm accurate and it's quicker to free pour. I work in a really busy bar where I'll make a hundred plus drinks in an hour. I do that all night long up until closing time. I'm also accountable for everything I pour and when I weigh and balance the alcohol at the end of the night, I'm always bang on - give or take an ounce. I've just become so comfortable with free pouring and that's perfect for me when I craft my cocktails.

Ginger syrup is so workable in cocktails. The first thing that comes to mind is a Lemon Gingerini. This one is a great martini. It's incredibly refreshing, slightly herbal and really easy to make. Here's the recipe: 2 oz. gin, 3/4 oz. fresh lemon juice, 1/2 oz. ginger syrup. Stir all ingredients over ice and strain into a chilled martini glass. You'll love this one Steve. You may also want to try subbing out the gin and lemon for spiced rum and lime with the addition of fresh squeezed orange juice. Give 'em a try and let me know what you think.

Why does everyone use so much ice when serving you your drink? That doesn’t leave room for more of the drink!

I’ve often been asked that question Irene. Why do you use so much ice? Are you shortchanging me? Well, the answer is No! More ice means less mixer although some people seem to think it’s less spirit. Ice does two things to your cocktail. It cools it down and dilutes it to provide balance to the cocktail. And believe it or not, dilution can be a good thing. Often, a little bit of water will actually open up some spirits, by accentuating some aromas and perhaps masking others. Also, it depends on the glass size and what drink is being made. Drinks that are high-proof cocktails, like Tiki drinks need a little extra dilution. Crushed ice is a perfect choice here because it’s fast-melting ice. And when you use lots of viscous ingredients like syrups, purees and juices in some of these drinks you’ll want crushed or pebble ice because it will thin out and cut some of that sweetness. I could go on but, I'll leave it for another conversation about ice and cocktails. Cheers!

Wow, your story reminds me of an old strip club called The Boom Bay Bar, some of the girls had the wildest acts, you never knew what tricks they were going to pull out (or put in) next. It was cheap too, Both the cover and the 12 oz. beers were $2. Not the world's most fancy establishment, in fact, I seriously doubt that the bartenders new how to serve anything other than Pabst Blue Ribbon and Jack Daniels and coke, but that's okay, it did have a very unique ambience
