Today we're making a Peach Pie Mead at home! You can find the recipe for this mead below. It does require you to do a few beer steps to help create the crust taste, but it's well worth it! This mead did also take quite a few steps... but sometimes the best things take time!
One Gallon Peach Pie Mead Recipe:
3 lbs of Honey
3 Grams of Safale US-05
Pectic Enzyme
3 Grams of Fermaid O
-- Stabilize or Pasteurize --
1/8 tsp of Ginger
1/8 tsp of nutmeg
1 Cinnamon stick
1 tsp of Vanilla
.5 lbs of Honey to Backsweeten
10 oz of Peach Nectar
Grain Build:
.5 lb of Brown Malt
5 oz of Honey Malt
4 oz of Brewers Malt
Mash All Grains at 155 F for 60 Minutes

I've been thinking about making a mead using some Mad Honey from the Himalayan Cliff in Nepal. It's just a thought right now. It would be interesting to do and a great learning experience.

You think smoking the peaches for a couple hours really low would add some more character to this?

Your recipe at the front lists mango nectar

Oops!! That’s definitely supposed to say peach nectar 😂

I would love to give this a go, sounds delicious. I'm a little confused about the malt side of things though. I understand the required process, but unsure what brown malt/honey malt/brewers malt means. Are these generic terms, or is "honey malt" a specific type of malt? Thanks
@ManMadeMead
@ManMadeMead 9 месяцев назад
Those are types of grains you can buy at a brew shop or online! You have to get them milled and then you go through the mash process (heating up water to a certain point and steeping the grains in the water for some time).

I’m currently making a cyser/melomel(?) Not sure what exactly it would be considered. Basically, I’m only using local Peach Cider, some honey and Red Star Premier Cuvée yeast. Didn’t see anyone do this yet, so figured I’d give it a try.

I put this one going today, I got a small question though, or rather something to point out - there's a few inconsistences between what you say in the video and the recipe you posted on the description. Things like the time to mash the malt (60m on video, 160 on description); as well as using Peach nectar in the video, but suggesting Mango nectar on the description. Just a heads up in case those things slipped through!
@ManMadeMead

Oops! Those are definitely just errors in typing it out. I’ve corrected those in the description. Thanks for letting me know!

Absolutely love the timeline in this video. The one where you show start date, rack date, spices added and such. Those need to continue to show up on more of your videos. Helps us younger brewers be patient enough so ours turns out good.

@@ManMadeMead I love the video too. You're an inspiration for me. I'm only 1 year into this hobby and have made several of your recipes. Keep up the great work!

I've been binging your videos for the last few weeks as I'm taking my first steps into mead making and there is something I've noticed. Over the years, your beard and hair have slowly been turning the color of honey, I wonder if its any correlation to how much mead you've been drinking. Just wanted to let you know. Cheers!

Hahaha I haven't ever thought about that!

I was fortunate to taste this at the mini BoS. The peach and crust flavor was really nice. There was even a slight buttery finish that I wasn’t in love with, but added to the overall complexity of the crust. Really cool stuff!

Congrats on the Happy Holiday metals for you and Jake. Unfortunately, I didn't fare so well. Cheerz

What was the flavor before you added the nectar to the secondary. Also, would you split the peaches next time between primary and secondary or just do it she same next time? I tried a peach mead a long time ago with fresh peaches all in primary, and it came out extremely acidic, so I haven't tried it again since. After peeling 30 lbs of peaches, I'm sure therapy was in order, lol.

The peach was there but it wasn’t super strong. More honey forward than anything… the nectar just brought back peach brightness. I liked doing the peaches in the primary of this one to be honest!

Glad to see folks embracing the ss milk cans. I bought a 40l one for making high gravity beers and aggressive yeast and it has been working amazingly. I drilled a hole in the lid for an airlock. Thinking about adding some keg posts and trying pressure fermenting.

I'd add a ball lock post to the lid as well as the hole for an airlock. That way you can purge with co2.

Very interesting recipe. I attempted a Peach Cobbler style mead this year but I didn't tackle the crust/cobbler side of it...I did it as a bochet in an attempt to get a carnalized flavor profile similar to baking peaches...

Really Enjoyed Your Video , Thanks ! You sure put together a good one this time . I'm Impressed ! Stainless Steel is some Real Hard Metal . I've worked with it before . People who Know , when they get ready to Cut it , I'm talking about Half Inch Thick or better . THEY'LL take a Welder , Turn it ALL the way Up . And use Welding Rods to Burn through it , and cut it with that . Takes a lot of Welding Rods , and makes a Pile of Smoke . But You'll Dull a whole lot of Blades or Bits , depends on what you're doing . If You do try to Drill it , set Your Drill on Low and Slow . It will cut better than Fast . That will just spin on top and not Cut . Later Garrett ! 🐯🤠

I’ve only been brewing for about a year and a half. Started with beers and I expanded to ciders, then meads about four months ago. I made a delicious apple pie cider where I used some brown sugar and the usual spices to make the pie flavor. It does taste like there’s some crust, but I’m sure not as much is this peach pie recipe.

You really put it all together. This looks like a good recipe to experiment with some high-end fruit concentrate such as for back sweetening with added flavor. I really liked the use of specialty grains for the crust flavor. Cheers.

The AI thumbnails are embarrassing and this one with a "pie" is particularly bad.
