Recipe Notes
For 6 pies
1 frozen pie sheet
Water, to taste
(Egg liquid)
3 egg yolks
100 ml fresh cream
100ml milk
40g granulated sugar
A little vanilla oil
(1) Cut a frozen pie sheet in half and lightly brush with water.
(2) Roll up the pie sheet from the edge. Chill in the freezer for about 1 hour.
(3) When the dough is firm enough to cut, cut it into 6 equal rounds.
(4) Roll out with a rolling pin and fit into a mold. Keep in the freezer until just before baking.
(5) Make the egg liquid. In a bowl, mix all the ingredients at room temperature except the egg yolks.
(6) Heat in a microwave oven at 600W for 1 minute and 30 seconds.
(7) Take it out and mix it without bubbling to dissolve the sugar.
(8) Put the egg yolks in a separate bowl and add (7) to it little by little.
(9) Strain the mixture and keep it in the refrigerator for half a day.
(10) Take out the mold and pour in the egg mixture. Leave a space of about 1 cm above the pie crust.
(11) Bake in a preheated oven at 180℃ for 30 minutes.
(12) Remove from the oven and allow to cool.
