For the second day in a row, I’ve watched one of your videos and made your recipe. I honestly think your videos are the best most thorough cooking videos on RU-vid. You’re so health conscious, you’re impeccably clean, and you’re so nice and your voice will make anyone fall in love with you. I’m a 44 year old woman and I lost my mom 7 years ago and all of her recipes were in her head so unfortunately when she died, so did her recipes. You are definitely the next best thing to my own mom so thank you for being YOU and touching my life with something so simple as delicious traditional food.

Hi Mary! I took your instructions for the roast chicken to my crock pot. It was DELICIOUS and fell right off the bone. I put the chicken in on low in the morning, and we ate it for dinner. Thank you for being awesome! God bless you.

Dear Mary, Well, a short history--I never got married but I did raise a daughter who is now adult and on her own (6 blocks away!). She NEVER liked my cooking, but would devour fish sticks, Lunchables, pizza, etc. So I really never had to learn. Here I am at 63 years old, subscribed to your cooking school, learning to cook for the first time. I just took my first creation out of the oven...the simple roast chicken. I have always wanted to do this and was unsure of so many things about it. It is soooo delicious! I snapped a picture and will look for a way to get it to you. I did it right in my cast iron skillet. I cannot wait to try out the bone broth. You are so needed and much appreciated. ;)

Bravo Mary! It is very encouraging that you are filling a real void, as many people have not had the opportunity to learn basic cooking skills, or to know the ropes when it comes to the choices regarding organics, pesticides, etc. I think at one time there was no choice, but kids usually opt for microwaved quick foods, and working parents often don’t have time or energy for “cooking 101.” (That’s my story, and I’m sticking to it!) But may they discover the joys of traditional cooking, and bless everyone around them with good nutrition. If I were in the position to homeschool, I might play some of these videos for “Home Ec” class. What about sewing? gardening? Oh, the possibilities! Bless your little heart.

Thank you for talking about the chickens. I used to think that vegetarian fed chickens were a good option but now knowing about chickens, I learned that they need lots of protein to be healthy. Paying more for a better chicken life and then provided for our health is the option I want to pay for. Thank you for showing how to roast them.

I bought Mary’s book , it’s awesome & I have her chicken recipe in the oven right now. The pages are heavy can be wiped down & most things I needed instructions for are covered . It was a very good purchase . Thanks Mary😘

for those using Metric, 350 F is 176.67 Celsius, and 1 pound is 0.453 Kg ,, if that helps anyone. :) Thanks Mary. ps I am going to try grating my beets for my Kvas and mixing it with my Carrot Slaw ferment for a salad at the end of the week. ( I find it easier to grate the Beets hard and larger then once they are small pieces as im doing them by hand)

I have made a whole chicken many times, but never in a roasting pan. My go-to has always been in the slow cooker. Once in awhile I simply put it in the oven in a baking dish. This looks super yummy!!! I'm adding it to my Plan to Eat planner.

Really enjoyed your video, Mary! You have a such a nice voice and lovely diction. I use a silicone basting brush instead of a pastry brush only because it can go straight in the dishwasher. I have found over the years, that if I brush oil onto the entire inside surface of any type of baking dish, the clean-up process is about 75% easier. All the baked on stuff washes off so much easier. On to the next vid!

My sister adds a few dollaps of mashed acorn squash to her chicken stock. Imparts a beautiful gold color and ups the nutrition. I also do that now besides adding in my homemade nettle tea. Its great you explain Old School methods too and do Show & Tell as a teaching method. I am lost w/o visuals! You didn't mention using a Dutch Oven, enamel Pot Roast pan or even the simple throw away aluminum Roaster Pan. My friends have such techy modern kitchens now I would be at a total loss on how to prepare anything. My bragging rights are that I still know how to boil water in a pan on a stove...well okay...MY stove- which is 35 yrs old and has a gas pilot light....(great for drying herbs) AND do you make your aprons? I love aprons and yours are so attractive!

I rewatched this video a couple days ago and roasted my first chicken today. I've been married 41 years and cooked chicken many ways, but even though I've roasted turkeys I've never roasted a chicken. I followed your instructions with my husband's interest in what I was doing and that I needed him to please not throw the bones away. It was near agony for him to allow the chicken to sit for the 10 minutes, but it was like you said; SO worth it. It was so moist and was delicious! We're fans! Our son is coming over later to eat, and our daughter will eat later, too. I'm looking forward to their take on it. Thank you SO much for all you do for all of us. Since you ask about our recipes for roast chicken (and turkey), I like to fill the cavity with lots of parsley stalks, rosemary, onion powder, poultry seasoning or sage, herbes de provence, etc. plus chopped celery and onions, which tastes delicious in the chicken, and then after I remove all the meat, I throw the bones and all into a big pot with more veggies, and especially one or two tomatoes, bay leaf. I let it simmer for a couple of hours, and may cool it, strain and tuck into the fridge until the next day, or finish it right away if someone else does the dishes. I am one of those who are “borderline” on especially turkey soup, but I found online a recipe called “The Best Turkey Soup” in which they added tomatoes, which took away that greasy taste of the rich broth. Also a little Italian grandma had made chicken soup with tomato and it was the best I ever tasted! Other people I know who don’t like turkey soup say they like mine!

Fantastic Mary only thing I would do the chicken over the sink in case there is any splash on counter top as well working close to sink there’s ample opportunity to rinse and dry hands.

Mary's Nest I’m slowly seeing your channels and I’ve subscribed all ready. I’m 56 ( I’ll be 57 next sept) and it’s amazing what I have all ready been learning that no one has taught me or even wanted to. My ex husband mom was an excellent cook but, seemed - put out when I’d ask for a little help cooking so I quit asking. Then I got lucky when my ex-husband was in the military and I worked in a military daycare were I was in the kitchen. I learned a few wonderful things from the head cook which I am so grateful I did. But, now I am learning so much more. I took 2 cooking classes one in 7 th and 10th but you don’t learn theses things just basics. Tfs

Not great at roast chicken, but last time my fussy son ate it. I used lime juice and herb salt and pepper and paprika. I added the juice part in last half hour with a chopped line in the body. Because we have a lime glut was pleased despite overcooking it. I was so pleased that my son chose to have extra above the very tiny bit I made him try. And had no idea that you could put lime on roast chicken googled a recipe and forgot the honey 🤣

I forgot to say I have no kitchen twine, so used a heap of aluminium foil rolled into long strips and wrapped around legs to hold them together. I had also put some butter under the skin on top of breast area

So true it’s important to use vegetables and I love the vinegar and baking soda tip for washing vegetables, I use that for cleaning many things but have never thought to use it on my purchased veggies. The chicken looks so delicious 😋 Great video Mary 💕 I bought my thermometer (same as your one) online, at a good price.

I recently received a ninja foodie for my birthday which is very much like the Insta pot and I will never boil macaroni on the stove again! I make my macaroni and cheese much the same way except I replace the water with broth usually a chicken broth for more flavor although mushroom stock is excellent. I absolutely love that you don't need to make a roux and that everything is one pot. I have one daughter who prefers her mac & cheese baked so we simply top it with homemade breadcrumbs and use the air fryer function and it's fabulous. I feel strongly about spaghetti also. One pot and that's it it's never failed me and I don't stir until the end. I've made both dishes several times. I hope everyone tries this!

Hi Mary thank you for such information about cooking a chicken. Yes it's simple but there is a right way. I use my mom's roasting dish with a lid and take it off to brown the meat before I take it out. The dish hasn't got a rack but what a good idea to put vegetables on the bottom. I also wonder why they don't make roasting dishes with a lid. Anyway Mary thanking you for such good advice. Love from Patricia xx

I have tried many different ways of roasting a whole chicken and hands down my favorite way is in the slow cooker. I use a rack to place the chicken on, season it and let it cook on low for 8-9 hours (for a 4.5 pound chicken). It can then be placed under the broiler for a few minutes to crisp up the skin if desired. The chicken comes out moist, succulent and tender. I save the chicken juices for another recipe - as Mary says, gelatinous bone broth is wonderful.

Mary, I have used my cast iron pan for many things, but never a roast chicken. So tonight was the night. Delicious! And the carcass is in the freezer for a future crockpot chicken stock! Have you ever tried a spatchcock chicken? I also make those on occasion and they are wonderful!

A rule of thumb: Every time you touch the chicken and before touching anything else, wash your hands with soap and water. I have a double sink and fill with water and soap. If you don't have a double use a big bowl with water and soap. Either way you will not contaminate the faucet.

I love all your videos...you are excellent teacher...one question why you don't wash the chicken before you cook in the oven you said you don't want to spread salmonella on your sink but it will be on the chicken if we got it I know it goes to the oven but still I would wash everything before I cook...or I miss the part when you did wash this chicken,if yes ignore my question...anyway thanks for sharing all your recipes I'm watching all and try to make everything what you do😘❤

Sometimes when I find a new author I like I go back and like to read his books in chronological order even if his first couple of books weren't his most popular. So for a long time I've been wanting to go back and watch some of your early videos and when I clicked on the sort button and oldest video. This was at the top of the list. But this doesn't seem like it would have been your very first video. Especially since you make a reference to making weekly videos already. Did you delete early videos or are they still available somewhere? I don't know how else to look for them other than sorting by date. I just enjoy listening them so much I wanted to go through from the beginning and make sure I saw them all even if it took a while.

Hey Mary. Fold the chicken wings the other way. And you can truss up the legs with the chicken skin. Just slice up the skin so it will accomodate the leg bones in one hole.

Great show, I learned how to make Turkduckens a few years ago and I de bone all my birds now knowing how to remove the carcass. I just leave the wings and drum legs so it still looks like a bird. You just start from the back and work your way to the breast bone. A breeze to cut these birds once cooked. I'm learning about the bone broth cooking. Old fashion cooking is excellent.

Mary, do you let the chicken rest 20 or so minutes before cutting? And would that mean the temperature could be lower when you take it out of the oven because it will continue to cook?

Mary, I made this recipe yesterday and the chicken turned out exactly as you described: juicy meat, very tasty and with a beautiful golden skin. It turned out better than other very complicated recipes I've followed in the past. Your recommendations for cooking time per pound were very helpful and worked perfectly (once I converted to metric! :) ) Tremendous recipe - simple and delicious! Thank you kindly for sharing!

The only thing I do differently is washing the chicken very well before baking (and drying it as well), I was told that where they package them is not that clean let's just say that 😂😂 thanks for your videos, very informative!

When it’s cooked and served with love, I think it’s always better than processed food. However, that said, when I can get them, I like to buy chickens from a local farm in my area. If I am not able to get those, then I like to find chickens at the grocery store that say they have been raised on pasture or are raised organically. Hope this helps. And you will be horrified by this...my husband just threw out three beautiful cast iron pans. He said since I won’t let him use them on our glass top stove they weren’t usable. I was like what! I could not believe it. I said I use them for skillet cornbread and to roast chickens. Can you believe that? Hmmm...I like the idea of the bowl to put the chicken in. I’ll have to adopt that habit. I know it costs more, but I try to buy free range when possible. Since the chicken died to provide nourishment for my family, the least I can do is make sure she had a nice, free range life. Thankfully my budget allows it, for now.

Mary, I have an AllClad roasting pan with the lid, which I really like. Will roasting the chicken with the lid achieve the same result? I have roasted or baked a Turkey in it with the lid and it turned out great. Just wondering what the difference is between having a lid and not. Thanks

That's a great question! I think they will turn out similarly. And the nice thing about a lid is that it prevents the top of the chicken or turkey from burning if the oven gets too hot. You have no need to a foil "tent" Love, Mary

@@MarysNest Thanks Mary, I just bought the Waring WSB33X today. As for the Crock Pots, I will check into your suggestion. Any specific one you could recommend? I prefer the bigger ones? Also, 2 questions respective Crock Pots: 1. Did I hear you correctly say in one of your videos (one of the bone broth ones) you cook it on the warm setting? And that the Warm setting reaches an optimal temperature of 180 degrees? 2. I noticed you use the manual crock pots (not digital). I work all day, and come home after 12-14 hour days. I assume these do not shut off automatically. Correct? I would think if I am gone 1/2 the day and it cooking on low or warm would not be an issue. Your thoughts amd feedback I greatly value. LordStanley - You raise some really good points. Yes, I use a manual Hamilton Beach Slow Cooker. I like the 8-quart better than the 10-quart. The larger one is almost too large and a bear to lift when full!! That said...I think the electronic ones have improved tremendously. If I was buying one now, I would seriously consider one. And that might be best for you when you are away from home. I think you can set them on warm for the entire time. But yes, if you are away for only a half day, the manual would work too. Look around at some of the Hamilton Beach electronic ones and see what one you like. Let me know and I’ll look at it too and share my thoughts. Love, Mary🤗

Hi Sally, Great question! It is very hard to find big roasting chickens today. Although not labeled a fryer or a roaster, this chicken was described as a young chicken which tends to be mostly what is sold today. That way it can be used as a fryer or a roaster. Love, Mary

Lynn Nelson - Hi Lynn, Thanks so much for visiting. I do not wash the chicken first. I just pat it dry. The US Food and Drug Administration advises not to wash the chicken because it can spread salmonella around the sink, etc., that might be missed when cleaning. Any disease will be destroyed when the chicken is cooked in the oven so no need to wash it before cooking. However, it is certainly personal choice as to what you want to do. @@MarysNest Thanks. I do wash my chicken BUT I use bleach on the sink, cooking utensils and the surrounding countertop and backsplash. This is a hand-me-down from my Mom. I recently found you on RU-vid and instruction for roasting and making bone broth are fantastic. There is no excuse for not cooking, especially traditional. The 'organic' label means little considering chickens fed with corn and soybean (same as cattle and hog) are often labelled as vegetarian fed. It sounds good but the meat is fatty, just like a diabetic cow is or close to it before harvest. None GMO grain fed chicken that are pastured raised, getting their food from worms and bugs are the healthiest.

Great question, Herbs de Provence is a mixture of herbs including thyme and lavender but if you don’t have those, don’t worry. You can use any herb mixture you like such as Italian seasoning, etc. Love, Mary❤️🤗❤️

Mary, nice video, however, I noticed that you did not wash/rinse the cavity of your chicken before preparing. The cavity does have some gunk in there especially within the back. I personally would not prepare my bird without rinsing well. I know some of the dripping come out in bag, but there’s still some in the bird. The rule of thumb is to cook the internal temperature @ 165-185 degrees will kill all bacteria but, lm just safe by washing it first. Love your advice anyway. 👍🏼

Your chicken looks DELISH!!! I have a question: In all the research I have done, the general consensus was an internal temp of 165. Is your white meat still moist at 185? Also, mom taught me to cut the drumstick at the top, and if the juice was red, it needed to cook longer. I stick my thermometer in the deepest part of the breast, being careful not to touch the breast bone. The bones are hotter than the meat. In addition to your spices, my favs are rosemary & cumin. And never EVER forget the garlic. LOL!!! God's blessings

Kathleen Zimmerman - Hi Kathleen, Thanks so much for visiting and commenting!! Yes, many authorities recommend cooking a chicken to an internal temp of 165 F. However, in 2016 there was an outbreak of salmonella poisoning from store roasted chickens which had an internal temp of 165 F, so after that, some started recommending to roast a chicken to a higher temp. For example, Martha Stewart recommends 180 F for the breast meat and 190 F for the dark meat. I settle in at 185 F for the dark meat. I find slow roasting the chicken at 350 F creates moist breast meat with the thigh meat cooked to 185 F. It’s just personal preference. And yes, your mom is right, cutting into the leg joint is a great way to tell if it is done. And I love your recommendation for spices!! 😋 Love, Mary ❤️😘❤️
