@@KimboBaggins22222 hahaha. I got that username from a george carlin show. Well, I am a professional chef of 20 years. I sure hope I know how to say "aioli." But I dont think you need to be a professional chef to say "aioli" correctly.

Eric is doing a good job. However, I like to cut corners when I make Aioli sauce. I zest my garlic and mix it with the egg yolk, salt and Dijon mustard. I then use an electric mixer to whip the olive oil and cut time. Once the sauce is finished, I beat the lemon juice in it. NOTE: I have to take this short cut because I contracted Lyme and both of my thumbs are slightly painful so I don't have the agility to whip the sauce like you Eric!

I have just mase this superb aioli, for the first time in a mortar and pestle - genius idea! I have used sunflower oil instead and 1/2 lemon juice. It turned out perfectly! Thank you chef, you’ve got yourself a new subscriber! Thank you again, this is the only way I will make aioli from now on :)

If he placed a damp cloth under the pestle it would not move so much . Surely you can get the same or better results mincing the garlic on your board with the salt and a large knife . Place the minced garlic into a glass bowl over a pan of hot water , add the yolk and whisk till thick . Then drizzle the oil in whisking until rich and smooth . Correct the seasonig .

My ex mother in law from Espana used half of a small, peeled and boiled potato in her aioli -- same method using mortar and pestle and she used standard vegetable oil versus olive oil. Delicious. I tried to copy it. Not always successful.

yes also if you don't have thee pestle and mortar, you can use you knife and smash the garlic with salt and pepper and scrap it against the cutting board with your knife to extract all those oils then throw it in a blender and continue as is..

the aioli is much simpler than that. the aioli is much simpler than that. 1 egg. 2: a pinch of salt. 3: Juice of half a lemon. 4: 150ml of sunflower oil (sunflower oil because it is softer and thus we leave more prominence to the garlic) 5: 2 cloves of garlic, the largest possible. You don't have to put pepper, you don't have to put olive oil as it will ruin the flavor of the garlic, you don't have to put mustard. Which you've made of everything except alioli. Would someone that has made this please tell me the quantities they used. I've tried this twice. The first time it was way too salty. The second time although less salty the garlic was so overpowering I couldn't eat it.

Aioli is too french :)... With a lot of oil and raw egg... You should try the ukrainian version, with just a pinch of oil, same walnut, sparkling water and fresh tomato...
