How to Make an Authentic Aloo Gobi | Simple and Traditional | Cooking in Pakistan With Chef Hussain
We've recently rediscovered some videos from Chef Hussain's visit to Pakistan in 2020, so we thought we'd share them with you. Better late than never!
If you love original, simple Pakistani cuisine, you're in the right place. As part of our origins series, I visited my ancestor's village Jallo Chak, which is near the city of Dina in the district of Jhelum.
My family have lived in the village for generations, starting with my great grandfather who moved there over 150 years ago. My ancestors were farmers, and local hotel owners that served meals, so food has always been a part of my family life when I was growing up.
It was good to catch up with everyone from the village (I hadn't been back since 2016) and spend some well-needed time with my family. It was nice to see all the community changes, more hospitality, good food, and culture growth, it’s a cool calm place, lots of greenery, fields away from the city's hustle and bustle.
We’ve had lots of requests for vegan and vegetarian dishes from viewers over the year, and whilst you can adapt most of our other recipes, this is a specifically vegan dish. We hope you enjoy it!
🍛 What is Aloo Gobi?
Aloo Gobi is a delicious vegan dish made from potatoes, cauliflower, onions, tomato and lots of spices to give it some flavour! It originates from the Indian subcontinent and is eaten in Pakistan, India and Nepal. There’s no water in the dish, so it’s a dry curry which gets all its flavour from the spices.
🥗Is Aloo Gobi healthy?
Like most veggie dishes, Aloo Gobi is quite healthy, although it is quite high in carbs thanks to the potato, which you may want to bear in mind if you’re trying to lose weight.
🛒 Ingredients
- 3 chopped boiled potatoes
- 1 small chopped boiled cauliflower
- 5-6 tablespoons of oil
- 2 finely sliced medium onion
- 1 finely sliced tomato
- 1 teaspoon of salt
- 1 teaspoon of whole cumin
- ¼ teaspoon of turmeric powder
- 1 ½ teaspoon of coriander powder
- 2 ½ teaspoons of chilli powder
- ½ teaspoon of ginger paste
- 1 tablespoon of garlic paste
- Chopped green chillies (optional)
- 1 teaspoon garam masala powder
- ½ teaspoon chilli powder
- Pinch of coriander
- Pinch of fenugreek leaves
📖 Recipe:
1) Chop the potatoes and cauliflower and boil them, ready to cook in our curry.
2) Add 5-6 tablespoons of oil to a pan.
3) Add 2 finely sliced onions to the pan and add 1 tablespoon of salt to help them cook.
4) Add 1 teaspoon of fresh cumin.
5) Add ¼ teaspoon of turmeric powder.
6) Add 1 ½ teaspoons of coriander powder.
7) Add 2 teaspoons of chilli powder.
8) Add 1/2 teaspoon of ginger paste and 1 tablespoon of garlic paste.
9) Add 3 chopped boiled potatoes and 1 small boiled chopped cauliflower.
10) Cook for a couple of minutes and keep stirring to prevent the vegetables from burning.
11) Add 1 medium finely sliced tomato and some finely sliced green chillies if you choose.
12) Add 1 teaspoon of garam masala powder.
13) Add ½ teaspoon of chilli powder.
14) Add a pinch of coriander and fenugreek leaves. Make sure you crush the fenugreek leaves in your fingers to release their full aroma.
15) Your Aloo Gobi is ready! Serve up to eat with rice, a salad or a naan bread.
