It is exactly the same in Hungary! Every grandmother in the countryside makes elderflower syrup! Of course, this is my favorite! This is also probably due to our many hundred years of shared history. ❤❤❤

I (from Styria) mostly use Holler, but I've also heard Hollunder. I usually say Sirup, but I've also heard Saft. Curiously, I've heard people use Saft to refer to the less sweetened, but fermented version (southern tyrol).

Love is not a valid ingredient according to German food laws 😂I hope our beloved neighbors in Austria have a greater sense of humor than we do. 🙂

In my opinion it's always Holler when it is about the blossom and Holunder when it's about the ripe berries. Like Hollerstaude, Hollersaft. And from the berries you'll make Holunderschnaps and if you make juice out of the berries then it is Holundersaft. But one exception: from the berries you'll make Hollerkoch

My last name is 'Höller' so when my mum made Hollersaft the neighbouring kids always called it 'Höllersaft'. I find that kinda nice :D

The first thing I did after building my house, was to plant an elder flower tree! Just because I love it and I don't want to miss the season to harvest the flowers.

Jetzt setzen wir noch einen drauf: Holunderblütensaft - Das, was Jonny hier gebraut und verkauft hat. Hollersaft - Der wird aus den Hollerbeeren gemacht, ist sehr dunkelblau / dunkelrot bis fast schwarz und schmeckt ganz anders. ABER beides kommt vom Hollerbusch. Lass es Dir gut schmecken - gut gemacht! :) - und ja, der Syrup (denn das Gschlotter musst auf jeden Fall verdünnen!) heißt regional unterschiedlich in Österreich.

Sprichst so a feins deutsch scho, a Träumle dir zuzuhören!😍💪

If you call it Holler or Holunder does not matter both is correct.. Holunder = Hochdeutsch/Standard German Holler = is the casual term and basically just "the abbreviation" for the term "Holunder" But it is essential that you add the term "Blüten//flower" for adressing it because you can make "Hollersaft" out of the berries as well (obviouly those are then not harvested in the late spring/early summer but in the late summer/early autumn when those are ripe) and that "Hollersaft" is in colour something between deep dark red-ish/deep dark blue-ish and also taste totally different.

Just had Hollereis at my favourite spot in Vienna today. It slapped my taste buds right out of orbit.

Sadly, I dont have a grandma anymore. But my mom also makes syrup out of everything in her garden. Elderflower, elderberry, apricots, raspberries, mint, lemon balm. She even tried watermelon last year.

In Switzerland we call it Holder. And you can make a fantastic Spritz drink called Hugo, with elderflower syrup, prosecco, mint and sparkling water.

I use 30 flowers at least, per liter of Water, 2kg of sugar and orange / lemon slices and optionally some orange juice 50 g of citric acid and a spoon or two of ascorbic acid. Stir everything once a day, in about a week the sugar is just disdolved, it's really at the solubility limit. The higher concentration and more citric acid makes it lot stable, still a bit of yeast fermentation may occur and adding to the taste, but use pressure resistant bottles, else it may be a mess. Filtering it through a fresh cloth, into washed, disinfected bottles, best thick polycarbonate ones. No cooking improves the taste, if some yest is acting, further but open a pressurized hollersekt-sirup bottle with care, a sticky faibtain can happen, if not careful enough.

Holunder in Hochdeutsch

Es gibt noch Hollerpunsch. Der gärt und hat dann auch (sehr wenig) Alkoholgehalt. Leider kann es passiere, dass die Flaschen explodieren wenn der Punsch zu sehr gärt. Deshalb mache ich seit Jahren nur mehr Sirup.

Remove the thickest stems of the elderflower before you put them in the pot, you philistine! =D The stems are going to make the saft bitter!

Menno, ich wollt auch nen Hollersirup. Leider war ich zu der Zeit nicht in diesem Stadtteil. ... ( ok, scheiß auf den Sirup, i wollt a Bierle mid Dir sauffn ;-) )

Hollerblütensirup. Ich lasse die Blüten 2 Tage in kaltem Wasser ziehen, dann wird das gelbe Wasser mit Zucker aufgekocht. Zum Schluss Zitronensäure dazu. Echte Zitrone geht auch, wird in der Flasche aber unansehnlich. Wir machen damit im Sommer Eistee. Holundersaft wird aus den Beeren gemacht und hilft bei Erkältungen

Sorry, but Hollersaft shoudl be the juice of the berries. This one is Hollerblüten Sirup as it is made from the blossoms and not from the berries.
