How to make Baked Lemon Salmon with cheesy instant pot risotto recipe

It doesn't get much easier than this quick and delicious dinner. Baked salmon is so easy to make and this pressure cooker risotto is quick and easy.

I love seafood, and thankfully so do my kiddos. So Salmon is one of our favorite dinners. I love creamy cheesy rice side dishes for seafood, and risotto is a favorite. BUT classic risotto is time consuming and a lot of over the stove time (totally worth it) but being able to make it super quick and amazingly creamy and delicious is a huge win!
I haven't been a huge instant pot fan, I don't believe it's the end all be all that a lot of people do. It's taken me time to find the dishes I feel an electric pressure cooker is really good at, eggs, beans, yogurt and then the best thing ever - this parmesan risotto!!!

LEMON HERB BAKED SALMON
2 lbs fresh salmon filet
6 lemons sliced
6 tbsp butter softened
2 tsp garlic crushed
2 tsp sea salt
1 tsp black pepper
1 tsp dried dill
1 tsp dried parsley
1/2 tsp ground celery seed
preheat your oven to 350.
mix the garlic, salt, pepper, herbs and butter together.
lay down foil on a cookie sheet, and place half the sliced lemons on top.
Clean the salmon in cold water, pat dry with a paper towel. rub the butter mixture all over both sides.
Place the salmon on the lemons, then cover it with the rest of the lemons.
Seal the foil together, adding more foil if you need to.
bake for 10 mins for each inch (so a 2 inch thick filet will cook for 20 mins) or 15 mins per lbs (so 30 mins for 2 lbs). The goal is to hit 145 degrees for cooked salmon - I pull it out at 140 and it will continue to cook a little once you pull it out.
PRESSURE COOKER PARMESAN RISOTTO
6 Tbsp butter
1 onion chopped
2 cloves garlic minced
2 tsp salt
1/2 tsp pepper
2 C aborio rice or other risotto rice
4 C chicken broth
4 Tbsp butter softened
3/4 C freshly grated parmesan cheese
Press saute on the instant pot
Add the butter, onion and garlic - stir and cook until the onion is transparent
add the salt and pepper and rice and stir - cook until the rice is mostly clear with a small white center in each grain
add 1/2 C broth and deglaze the inner pot
When the bottom of the pot is clean and smooth add the rest of the broth, give it a quick stir and add the lid
clear the saute function and pressure cook on high for 5 mins
Quick release, open the lid and break up the rice
Add the rest of the butter and the parmesan and stir - serve right away while it's still creamy.
