Start by picking the hot chocolate mix you want to use. I make my own but any store bough mix will work.
Then decide what you want to use for your shell. I recommend compound chocolate because it doesn't have to be tempered. I don't recommend chocolate chips because they are made to hold their shape at high heat and don't melt well.
Finally pick any mix in's you want. Dehydrated marshmallows, normal marshmallows, candy canes, chopped candy, sprinkles etc...

Homemade Hot Chocolate mix
1/2 C cocoa powder
1 C powdered sugar
1 C dry milk powder
1 tsp salt
1 tsp vanilla powder amzn.to/3m2GelS
1 Tbsp corn starch (optional - prevents caking if you will be keeping the powder for longer)
Mix together
Homemade vanilla powder
vanilla pods
dry out your vanilla pods in the oven - 1 1/2 hours on the lowest heat your oven will do
grind in a coffee grinder or food processor
This is stronger than most vanilla powder so use about 1/2 of what the recipe calls for
Hot Chocolate Bombs - makes 3
10 oz chocolate wafers amzn.to/34deUew
6 Tbsp hot chocolate mix
4.5 Tbsp dehydrated marshmallows or mini marshmallows amzn.to/2T8roOt
2 1/2 inch round silicone molds amzn.to/3o8EKZa
3 C milk
melt the chocolate over a double broiler or in the microwave
spread about 1 Tbsp of chocolate into 6 2 1/2 inch half ball molds - let set, you can refrigerate for 5 mins - but don't freeze or your chocolate will bloom and go white
spread another layer of melted chocolate into the mold - focusing on the sides the second time
let set (or chill another 5 mins)
heat a flat pan or a griddle on low
take one of the half balls and rub against the hot pan/griddle until the edges are smooth, do this with half of your balls
Fill each half with 2 Tbsp hot cocoa mix and 1 1/2 Tbsp marshmallows
Take another half ball, swirl against the hot pan/griddle to smooth/melt the edge and place over the filled half.
carefully press together (without breaking) and use your thumb to rub the chocolate seam smooth
repeat with the rest.
drizzle melted chocolate over the top and decorate with marshmallows, sprinkles or anything you want!
To make Hot chocolate heat up milk until you see some bubble on the side of the pan - but not quite a simmer
Put the bomb in the bottom of a mug and pour the warm milk over it, let the chocolate melt then stir everything together
Variations
Peppermint Hot Chocolate Bombs - add a few drops of peppermint oil to the chocolate, add 1/2 tsp crushed peppermint candy to the filling, decorate with more crushed peppermint
Oreo Hot Chocolate Bombs - use white chocolate for the shells and mix in crushed oreos. Add more crushed oreos to the filling and use for decorations
Pumpkin spice Hot Chocolate Bombs - use pumpkin spice chips for the shell - be careful not to over heat when melting. Add some pumpkin spice to the filling and use a pumpkin spice marshmallow inside
Peanut Butter cup Hot Chocolate Bombs - use peanut butter chips in place of half of the chocolate for the shells, add some peanut butter powder in the filling. Cut up some mini peanut butter cups for the decoration
Almond Hot Chocolate Bombs - For this I'd use a few drops of almond oil flavoring (not water based extract) in with the chocolate coating. I'd also consider using some coconut sugar in place of the normal sugar and a mix of milk and coconut milk for pouring over
Raspberry (or strawberry) Hot Chocolate Bombs - use Raspberry oil flavoring in the shell and ground freeze dried raspberry powder in the filling
Snickerdoodle Hot Chocolate Bomb - use white chocolate for the shell and mix in some cinnamon, use some cinnamon in the filling and sprinkle on some cinnamon sugar mix for decoration
Eggnog Hot chocolate bombs - use some nutmeg in the filling and use half milk, half eggnog for the warm milk
