Y’all my fam and I made these and they were a hit! I recommend making a double batch because these will be gone before Christmas. We used Enjoy Life chocolate, powered sugar w a little oat milk, crushed candy canes, and sprinkles to decorate. I have yet to find a good vegan white chocolate. Thanks for this recipe Gretchen!
Hey Gretchen, I am so excited about this recipe! I love these cookies! I know for a fact that my vegan sister Renee also loves these cookies and has not had one in years. I want to thank you for giving specifics like how many minutes it should take for the sugar and the vegan butter to mix together and which piping tip to use. I am just so excited to make these I cannot wait to see Renee's face! Also, I know that this recipe is much healthier for everyone. Fun fact - I did not know that these were called spritz cookies😂. I am going to make a lot of these cookies because when I made your pumpkin crumb cake at a family get-together expressly for my sister, everyone tried it and no one knew that it was vegan. They all loved it and my sister got only a small piece LOL. I love doing that making your recipes and not saying they are vegan until after everyone has finished eating them. Hi Agnes, my non vegan blog is shut down I just couldn't keep up the cost to host it on the internet and maintain it monthly anymore I had always said I would continue to share my recipes for free & give free tutorials on RU-vid for as long as I could afford to do so, and well.. I just can't anymore The cost to host such a huge database was close to $400 a month (with the maintenance cost, I needed to hire a tech guy to help keep it running smoothly) So that cost was severely outweighing any small profits I had been making though running ads on the videos & blogsite. I have not kept any of the non vegan recipes, since for over 4 years now I have been strictly vegan; so for me they are of no use. They were all housed in the database and that has shut down. Sorry Not to mention I am not comfortable sharing non vegan recipes anymore, as it promotes animal abuse and torture not to mention animal agriculture is a disease on the earth as well as human health. Hey Gretchen, I’ve got a question here that’s a bit off topic. I absolutely love your red velvet lava cakes (and am secretly waiting for a vegan version 😉) and so does my sister in law. She’s recently moved out and not so capable in the kitchen. I was wondering if the batter can be frozen in portion sizes then defrosted and baked? I would love to be able to make her some in advance that she can basically just pop in the oven I am also very excited for this series, too!!

Hmm, I'm going to have to look at that- (jogging my memory because that was an older original recipe) but yes almond paste is vegan, I make my own homemade version that is so much better than store bought, but I suspect because I had 2 versions of this recipe (both in my bakery & on my website- that I may have just omitted the almond paste version in this updated recipe since the almond paste version got very little attention)
