I love fried rice but its easy to overcook rice. So instead, I use barley to make this easy, delicious and healthy barley made in the style of fried rice. Its my way to use up lots of vegetables every week.

Wow! What a great idea!! Thank you for this really original idea. My intro to barley was the one thing in Campbell’s Vegetable Beef Soup I would pick out and eat as a kid. 🥴 This recipe is SO inspirational! I’m really fired up at the possibilities. Barley done like mushroom risotto! Or just really, really simply as in those unforgiving 2-3 ingredient pasta dishes (cacio e pepe and aglio olio) YOU ROCK!!! Barley is SO inexpensive as well. . . Bruh!! Am I missing something or did you just single handedly redefine how to cook and enjoy ALL grains? Cuz if you can do this with barley, the door is open to amaranth, couscous, bulgur wheat and all of those “other” grains.

As long as you use day old rice(or older) then fried rice is easy af. Just make sure to have sesame oil, I think that it takes it next level. I make giant things of fried rice for the fam and it can last 2 or 3 meals.

@@JohnHausser Use left over rice. A non stick pan that is large. Partially saute your veggies by themselves with a little soy and set aside. Scramble some eggs add some soy and set aside. Take the left over rice and put in pan with a neutral veg oil and cook on med/med hi until hot and some soy and I like hoisin sauce and sriracha or the Asian garlic pepper sauce with a "cock" on it. Push rice to one side add some oil to empty side and cook scrambled eggs for 30 seconds and lightly mix with rice and add veggies and a splash of sesame oil. Check seasoning and done. Just prepare your ingredients ahead before cooking and use day old rice. Oh and I love some sesame seeds and a ton of sliced scallions on top.

With all the comments about the reaction from the "Shrinkage" comment I had to go back and rewatch the video. It was so cute! I also saw much more detail than the first time, the tips on what to fry first and how to cut things up is a great tip.

Fried rice is not hard to screw up, what is wrong with you. If you don't have a rice cooker - 1:2 ratio rice to water, microwave in a covered bowl for ~20mins (if its your first time try 15 mins first). Other popular substitutions for rice are couscous and grated cauliflower &/or broccoli

1:2 ratio actually wouldn’t work...you need a dryer ratio if you’re gonna do fried rice. I also usually do a 1:1.5 ratio for white rice. But that’s just me. It’s not that it’s hard, you just have to cool it and if you do t you could over cook it

jasmine brown rice is very forgiving as well, highly recommend it if barley isn't your thing.

Yup. And if you’re ever scared of making brown rice, I’ve found that Alton Brown’s recipe of baking it works like a charm. Every time. Use it to make fried rice all the time.

If you can make this dish, you can make fried rice. After you have everything prepped, you can cook it in minutes in a wok or sauté pan. It’s not hard to do and is one of the cheapest dishes to make. I make FR as a refrigerator cleaner, using up everything from leftover veggies to hot dogs and bacon and eggs. Day old rice and good soy sauce are a must and don’t skimp on the oil!

Marya Love use whatever ingredients suits your diet and palate! As a half Filipino man, I grew up eating and still eat fried rice all the time, even with breakfast. Everyone is different tho and moderation is key.

@@ivotenotocensorship5247 gotta use cold, dry rice bro. rice from the fridge is best but you can also spread fresh rice out on a plate and let the steam disspate. adding the ingredients in the right order is also key but dry rice will help a lot

I made this and loved it, added a chopped fried egg to it, chopped red peppers and some green onions as I would to my normal fried rice . I enjoy your videos, a different take on many traditional dishes. The length of of the videos at 15 -20 minutes is perfect. Looking forward to new videos in the future.

Thank for this recipe, I was trying to find a meal that is good for my digestion. This was perfect, I added lentals, and substitued with cucumbers, and fresh string beans, fresh parsely and peppers. It was quick and delicous.

This turned out amazing. When I saw this I immediately thought to add balsamic but after tasting it, it pairs great with soy sauce! If I were to add balsamic I would cook the vegetables a little less to keep it more fresh!

I suspect the grains used here are actually quick par-cooked (pre steamed) barley which is why it cooks so fast. Real raw barley takes 45 minutes to an hour to cook. (Pearl barley is in fact quicker than this because it has its outer layers polished away, not slower as stated here.) Nonetheless, it's a tasty looking recipe, just one that may confound people that buy actual raw barley.

Yes, I once cooked with barely and the recipe said 15mins cooking time but was easily 30-40mins before it was close to edible.

​@@NOTANOTHERCOOKINGSHOW It is confusing! It most likely isn't raw pearl barley either as that takes 30-45 minutes or so too as you correctly mentioned in the video. I'm not in the USA but it looks like Quaker do a "quick (pearl) barley" there which has probably been part cooked like Uncle Ben's Rice, so I expect others manufacturers do as well. It's probably best just to advise people to check the cooking instructions. What we get sold in the UK as Italian Farro is also usually pre cooked like this (but usually not explained properly on labels). (Farro can be spelt, emmer or einkorn.) Maybe looking at authentic Italian Farro recipes would be an interesting future video? Keep up the great work!

(: I love the Farmer's Market too especially today when Supermarkets are really disappointing with their products!!!!! Almost every package of strawberries we have bought has about 3 good strawberries ... 4 if it's a lucky day!!!!! The rest are rotten!!!!! ... :( It was never like that before!!!!! steve, i love you, buddy, but fried rice is one of the EASIEST things to get RIGHT, and difficult to screw up. you just need a b a s i c understanding of the proper, cultural technique used, as well as a basic understanding of the flavor profile. i am by no means at all a master of any dish (except some of the pasta recipes you've been teaching), but i have still made some pretty killer fried rice.

This is a really cool and delicious fried rice alternative. But I can’t agree with you that fried rice is easy to mess up. From a personal experience my friend, can’t cook to save his own life, made one of the best fried rice dish. And he was piss drunk.

Adding a dash of toasted sesame oil makes great-tasting fried rice. I have also heard adding butter is a secret ingredient added by Chinese restaurant chefs.

I've always wondered what you do against garlic smell on your hands. I love garlic so much but I absoutely hate cutting it. Even with cheap disposable gloves and very thorough washing your hands will smell for like a week. I've never found a trick that works. Such a bummer. Any tips?

^ adding onto what Kieren said, you can run water your fingers while rubbing them on pretty much any stainless steel surface, if for some reason you don't have a metal spoon to use lol

As has been mentioned..a stainless steel 'soap' is fabulous. I've had mine for years. It's oval shaped and sits on my bench. Rub it between your fingers under COLD running water....clears away all smells.....fish, meat, veg etc

Try to wash dishes afterwards. The stainless steel trick and lemon never worked too hot for me. Also try using a fork to hold the clove that way you don't touch it.

If you are screwing up fried rice then you are probably not chilling it over night first. Rice is about the easiest thing to cook once you know what you are doing and make sure you know which type of rice you are cooking so you don't cook your short grain rice like you cook your long grain rice.

For all the folks saying fried rice is easy to make, that's subjective. Remember, this channel is meant to teach you and make unfamiliar techniques and ingredients more familiar... that way, they become familiar staples in your kitchen as well. Also, rice is a prevalent ingredient around the world due to it's simplistic growth requirements. But, barley is barely "rare" so, give it a shot.

A lot of people in my country don't like barley, because the only way it is usually made is in a bean stew. I always liked the texture of barley in bean soup as a kid. I might have to try it in a stir-fry like this as well.

Thank you I’m definitely going to make this. The only thing I will change is I won’t use oil and very little salt. veggie broth instead of the oil to sauté the veggies I definitely wanna try your method of cooking the hulled barley like spaghetti!😊

Health wise if you want to kick it up a notch, do not use olive oil, olive oil is processed and unhealthy. The only good olive oil is Extra Virgin Cold Extracted, heating destroys it. Use Avocado oil which has one of the highest smoke points and is excellent and super HEART healthy for frying. Also crush the garlic in advance and let it sit for at least 10 minutes, doing so releases alliinase, an enzyme that catalyzes to form allicin, which in turn forms organosulfur compounds. Compounds which cooking destroys. So put it in last, just to heat it up a bit no more than 30 seconds in a small dish, maybe 60 seconds to 2 minutes in a large dish like this, so as to not totally destroy the active compounds......... Just sayin' 😁👍

Wonderful! But please do not discard barley water: it is a very tasty and nutritious beverage --- just add to it some sugar or honey, some ginger, and a lot of lemon juice, zest, and any herbs you like! Superb!

Pearled barley had had the hulls removed and can be cooked in a rice cooker to perfection . Rinse one cup pearled barley under water then add barley to rice cooker with 2 cups water and set to brown rice cook time . 40 minutes later you have perfect chewy barley for any meal.

FYI: Pearl barley has less nutritive content as compared to hulled barley.

Great use of barley! Here in Italy we call it orzo, and if you go in the countryside or in the mountains you will find orzotto, which is risotto but made with pearl barley instead of rice. I suggest everyone to try it!

Orzo translates to barley, but barley and orzo are not the same thing. Orzo is a rice shaped pasta, it's made from semolina flour, which is made from durum wheat. Barley is made from, well, barley, basically a whole grain that has been polished.

Not sure how many times you have tried, but my suggesting is watch as many videos as you can on it, and try all the methods. And try over and over again. And fail many many times. And eventually you finally make a banging batch. And then later on you fail again. But you get better the more you do it. At least that was my path. I made plenty and plenty of mediocre to barely edible fried rice dishes. The day old rice stored in the fridge saying does seem accurate to getting that good rice texture from my experience. That along with technique (meaning temperature, how long to keep things in the pan, pan temperature) and salt/soy sauce ratio were the big things for me. Biggest thing though I would say is just keep trying! I read so many different "the secret to fried rice is...." and none of them instantly transformed my fried rice. Hope this helps.
