Yes, it´s 180 degrees celsius.
Yes, it´s better to let the meat rest a little while
and I´m not quite sure, whether you can say grill or not - my translater translates the german word grill with the english word grill, not broiler. anyway - you need a lot of heat from the top for your crust.
And somebody was so nice to tell me how to say the word rind correctly. I will remember this.

I was stationed in Germany when I was in the military. I had a meal like this. I loved the potato dumpling!! I loved the whole meal!! Fabulous!!

I made this for friends Christmas Day 2023 (using a 7 lb roast), and everyone asked to take some home, esp with the sauce. It was a successful dinner.

I LOVE watching you cook. It is everything I learned as a kid and have been doing for 55 years and never knew the origin! Grandma taught me how to make all these things but never called most of them by the German names. Its all the same ingredients, the lack of exact measurements, the same techniques and all so familiar! So I had to research and it seems her ancestors are mostly from Nittendorf, Kelheim and other Bavarian towns. This is my comfort food!!! Thanks so much.

Been to München many times since I was a baby in ‘66. Love hanging out and shopping in the main pedestrian zone and having a Weißbier and a Gulaschsuppe at the Ratskeller :) Hello from Canada :)

I made this with a 3 pound pork roast. After 1 hour it was to temp. I think pork does better at a lower temp. I'd do more like 200 F. Still turned out good, but I luckily checked it halfway through. As a person of German descent, It's great sharing food from my fatherland with my children.

My grandma is from Germany and she raised me and my brother. She made this for us often. This year my family is honoring her and our roots by doing a German Christmas and my brother and I will be cooking this the Sunday before Christmas for our family (our cousins were stationed in Germany growing up too). Thank you so much for your videos. They definitely bring back wonderful memories!

I was in Munich with my sister in 2013, we had roast pork in old M.unich at Weisses Brauhaus, it was amazing. Germany is an amazing beautiful country with very warm people. Please keep up the great videos. I'm coming back as soon as I can to visit again :) I do miss the weissbier.

This recipe looks so good. My great grandparents came to the US from Germany and my mother-in-law is German so I have been trying to cook traditional recipes.

I grew up enjoying the cooking of my Grandmother who emigrated from Germany in the mid 30's. I'll never forget her Pork Roasts like this one and her creamed spinach and red cabbage. Her Spatchela was to die for when covered with brown gravy..! I subscribed to your channel and look forward to more videos.

@@Humpelstilzchen Sorry... I kinda knew I didn't spell it correctly but you knew what it was. If I close my eyes in a quiet room, I can hear her voice and smell her kitchen. I miss all those Holidays with my Mother, Father, all three Sisters over at her house enjoying all of her cooking. If you have a German Grandmother.... Treasure her as often as you can.

My gramma passed a few years ago but my mom and i learn her recepies. We always cook together. My friend if you ever come to southern bavaria i invite you in my home 🙂

Thanks for sharing!I was stationed in Germany while in the Army back in '78 and I love and miss German food.I will be adding this, dumplings, and kraut salad to our Thanksgiving meal this year; along side the turkey of course.

Hello! Just wanted to let you know I tried to make this meal, but since I'm lazy it ended up as roasted pork tenderloin with boiled yellow potatoes and apple cabbage sauerkraut...but my family and I enjoyed it and we had a great German food night! Thank you for the inspiration and the great recipe! I'll do it right next time I promise!

My grandpa was pure German, a butcher who drank a cup of blood a day. He married a pure Irish lady. My dad's mom was Dutch, and his father's name was Butterfield, an original English American name here in America since the 1620's. Going up in California we ate food recipes from many countries, with so much fresh produce you wouldn't believe.

Great video thank you. I love Germany and food from all the regions and this looks delicious. In English the "crust" on roast pork is called "crackling".

My Oma and mother were German. We lived there over 8 yrs. Always had pork roast and Knodel very often. I watched my Oma make half and half Knodel so many times

When I was a child, my mother would cook a pork roast and let it stand. That is when my father and I would sneak in the kitchen and steal all the crust off the roast, that is the best part!

Had this in Munich this past summer. Yum ! Complete with the weird fluffy potato dumpling. On the fence if i liked the dumplings or not, definitely very different from your standard American mashed potato I was expecting, but the pork with crispy crust was awesome !

Thanks! This helped me answer a few questions I had about roasting the pork. You don't cover it, but most of the recipes I see online suggest that you do. It's in the oven now. Let's see how it goes!

I did! I think covering the pork can make it mushy, so your recipe stands out against the others that recommend covering the pork as it bakes. I made it again tonight, and it was very good. My kids (the ones that eat meat) loved it. I used Guinness for the beer. For side dishes we had spaetzle and braised cabbage. Classic.

Favorite places to eat in Munich? Haxnbauer, just off Marienplatz, and Wirsthaus Zur Brezn, on Leopoldstrasse. Why? For the pork of course! Crispy skin is amazing! Thanks for the video.

Well done ..My grandfather came from Germany my mom is German obviously ( but her mom was English and Altho born in USA she would make sour kraut with caraway seed and pork roast with caraway seed. In baking shed use shed use allspice or caraway and it’s the spices that make this food great. The best bakeries are in my opinion is Germany. Bavarian. Also my dad is from Uppsala so I’m a mix of German English and Swedish. In sweden we use spices like German foods.

A classic. I like a blend of dill, cardamom, mustard, and a hint of paprika along with the salt, and let it hang out overnight in a light vinegar and sour cream slathering; the 2 onions get thin-sliced and act as both bed and blanket for the snoozing piggie.

You made the comment that the dictionary translates the German into English as grill. A grill heats from the bottom while a broiler heats from the top. Great recipe and video. Well done.

You can use all typ of german dark beer especially dark wheat beer, called dunkles Weißbier :-)

Interesting. In Sweden they use carraway seeds for seasoning cheese and certain types of bread. Very tasty! I will try this for sure! As a guy of southern italian origin, we make pork roasts seasoned with the "divine three" for pork - rosemary, sage and garlic. Oh, by the way - I hit that subscrive button. I like your style and the way you cook.

@Edward Snowden So then it's probarbly cumin I'm referring to when mentioning that swedes use carraway seeds in cheese and bread, because the swedish word for it is "kummin". When I translated carraway seeds to my language it actually said cumin, that's why I wrote "carraway" seeds, but I meant cumin. Guess I have to research further about carraway seeds since you say they are different from cumin

In Canada it is very difficult to find pork with the skin on. I have managed to get it to make this, but I had to order it in advance from my local butcher shop.

Always let the meat rest after cooking, otherwise all the juices will come out and you'll have dry meat. Otherwise, it's a great video. Can't wait to try this with dumplings. Never thought to use caraway seed to season pork.

I saw the same mistake and glanced down at the comments to see if anyone posted that. Good catch ! You have to let them meat rest chef - that's why you pull your meat from heat about 10-15 degrees lower than the temp you want. Depending on the meat ( type and amount ) the inside of the meat will continue to cook for 15-25 minutes.

I never understood why other American families made their roast with beef and my family always used pork. Then I studied my history. My family came to the US from Bavaria. Maybe with a bit of luck I will get to visit Germany and all of Europe.

I lived in Bavaria when I was in the US military back in 1979. It was very beautiful then and had a great time there. Very clean place and the people were very nice to us. My family on my fathers side came from Hanover Germany to Boston in the late 1800's.

To get the befits from garlic allow to set for at least five minutes after crushing or chopping before adding to heat. I chop garlic first off. Nice video.

In the USA the skin (rind) of the pork is pronounced (rhine-d). It rhymes with the words grind, and bind for comparison. Great Video!

I used to get the best roasted pork sandwiches at the local Real. It melted in your mouth. It looks as if they cooked it in a rotisserie oven. I mean the fat and everything just melted in your mouth. Do you know what cut they used, spices and how they cooked this? I have never been able to replicate it.

I like this video and recipe.. one tip; an old chef-friend of mine insisted that I always chop off the root end of an onion first, claiming that it reduces the 'tear-effect' and the harshness of a sharp onion. I believe he is correct.

He was a retired Navy Chef and had cooked a million meals for ten thousand men.. he also taught me how to carve or reduce a whole chicken. Thanks for your video.

Great recipie, only change I would make is either used smoked salt, or add some smoked paprika to the salt rub in lieu of an actual cold smoke.

Looks delicious chef. I am always looking for a good pork recipe as I always seem to cook it (pork) wrong. Mine always seems to dry out. This looks juicy and delicious. I will definitely give this a try.

I buy the dumplings in a little pouch and so easy to make. Just boil and take out of the little baggie and perfect dumplings. Cheating but still authentic

Sure. You are right. I sometimes do so, too. But it‘s the same as with pizza. You can habe the industrial stuff deepfrozen from the supermarket, but one in the italian restaurant is worth going there sometime
