My German mom made the best red cabbage on earth……NEVER EVER HAD TO USE JELLY…..but Alpine Village chef in Torrance told me he used cranberry sauce. My mom stuck the cloves in the whole onion……she used a bit of shortening at the very end, never ever used cornstarch never had that in her cupboard., never used broth, but water. Can you use a smaller spoon……lmao ….my mom would say. Hers would put everyones to shame! RohtKohl!

No. I grew up near Munich and no one ever touched the Weisswurst with their hands for any reason. Ever. We always use a fork and knife. No idea where this is coming from at all.

A good alternative to German zenf is Dijon Country Style which has cracked mustard seeds.

My grandmother who came from Adelmannsfelden tried to teach my sister how to make this. My sister kept asking for measurements which my grandmother always said "just put it in until it looks like this". Frustrated my sister gave up. To this day 60 years later, my sister cant cook- everything in a microwave. Two years younger than her, I asked my grandmom to teach me and to this day, I can still make schnitzel using veal, pork or chicken, calf brain soup, liver dumplings, spaetzles cut off a board, sauerbraten and rouladen. I dont measure either except when baking.

Who doesn't get this: it is the skin that must be crackly, not the blasted meat. I do not see a solution to that anywhere on RU-vid.

But the time the skin is crackly, the meat that is not covered by the skin is bone dry and inedible.

Most likely if you only had your starter going for 3 days it’s wasn’t close to ready yet to leaven a loaf of bread. You would need to add additional yeast until your starter matures!

Absolute banger of a recipe. I had to add a little more broth and bumped up the vinegar a notch, and it was simply incredible.

There are a lot better Rouladen recipes out there. Do yourself a favor and spend 5 minutes to search for a better recipe. What is the purpose of having a camera taking a picture of a person taking a picture of the cook?

Königsberg or Kenichsberch is in Russia these days, not Prussia or Poland.... What are sar-dynes ??? They are pronounces sar-deens. It's not "sweated flower" its making a light roux. That would be the same nonsense as translating vacuum cleaner to dust sucker..... Do it in German, you English is so-so....

I would be tempted to blend the vegetables used in the cooking into the sauce. It would make a thick sauce and a lot healthier than the heavy cream option.

Your English is very very good, but rind is pronounced with a long i, as in r-eye-nd. Hope this doesn’t hurt your feelings. I can’t speak German mush at all. I find it quite difficult.
