No. I grew up near Munich and no one ever touched the Weisswurst with their hands for any reason. Ever. We always use a fork and knife. No idea where this is coming from at all.
My grandmother who came from Adelmannsfelden tried to teach my sister how to make this. My sister kept asking for measurements which my grandmother always said "just put it in until it looks like this". Frustrated my sister gave up. To this day 60 years later, my sister cant cook- everything in a microwave. Two years younger than her, I asked my grandmom to teach me and to this day, I can still make schnitzel using veal, pork or chicken, calf brain soup, liver dumplings, spaetzles cut off a board, sauerbraten and rouladen. I dont measure either except when baking.
Most likely if you only had your starter going for 3 days it’s wasn’t close to ready yet to leaven a loaf of bread. You would need to add additional yeast until your starter matures!
There are a lot better Rouladen recipes out there. Do yourself a favor and spend 5 minutes to search for a better recipe. What is the purpose of having a camera taking a picture of a person taking a picture of the cook?

I would be tempted to blend the vegetables used in the cooking into the sauce. It would make a thick sauce and a lot healthier than the heavy cream option.

Your English is very very good, but rind is pronounced with a long i, as in r-eye-nd. Hope this doesn’t hurt your feelings. I can’t speak German mush at all. I find it quite difficult.
